Steps:
- Preheat oven to 375 degrees. Sift flour, baking powder, baking soda, sugar, and salt into a large bowl. Cut in butter using a pastry blender or two knives until mixture resembles coarse meal. Mixing lightly with your fingers, add heavy cream just until dough holds together. Wrap in plastic and chill about 1/2 hour before rolling out.
- Butter a large baking sheet; set aside. Roll dough into a circle, 1/2 inch thick for small scones and 3/4 inch thick for larger ones. Using a biscuit or cookie cutter, cut dough into various shapes. Transfer scones to prepared baking sheet.
- Combine egg and light cream in a small bowl; brush tops of scones with mixture. Bake until golden brown and puffed, 13 to 15 minutes. Serve warm.

HOW TO MAKE PERFECT SCONES
Use this basic scone dough for any sweet scone variety. See blog post for a couple savory scone options. Feel free to increase the vanilla extract and/or add other flavor extracts such as lemon extract or coconut extract. Read through the recipe before beginning. You can skip the chilling for 15 minutes prior to baking, but I highly recommend it to prevent the scones from over-spreading.

Steps:
- Whisk flour, sugar, salt, and baking powder together in a large bowl. Grate the frozen butter using a box grater. Add it to the flour mixture and combine with a pastry cutter, two forks, or your fingers until the mixture comes together in pea-sized crumbs. See video above for a closer look at the texture. Place in the refrigerator or freezer as you mix the wet ingredients together.
- Whisk 1/2 cup heavy cream, the egg, and vanilla extract together in a small bowl. Drizzle over the flour mixture, add the add-ins, then mix together until everything appears moistened.
- Pour onto the counter and, with floured hands, work dough into a ball as best you can. Dough will be sticky. If it's too sticky, add a little more flour. If it seems too dry, add 1-2 more Tablespoons heavy cream. Press into an 8-inch disc and, with a sharp knife or bench scraper, cut into 8 wedges. For smaller scones, press dough into two 5-inch discs and cut each into 8 wedges. To make 10-12 drop scones: Keep mixing dough in the bowl until it comes together. Drop scones, about 1/4 cup of dough each, 3 inches apart on a lined baking sheet. To make mini (petite) scones, see recipe note.
- Brush scones with remaining heavy cream and for extra crunch, sprinkle with coarse sugar. (You can do this before or after refrigerating in the next step.)
- Place scones on a plate or lined baking sheet (if your fridge has space!) and refrigerate for at least 15 minutes.
- Meanwhile, preheat oven to 400°F (204°C).
- Line a large baking sheet with parchment paper or silicone baking mat(s). If making mini or drop scones, use 2 baking sheets. After refrigerating, arrange scones 2-3 inches apart on the prepared baking sheet(s).
- Bake for 18-26 minutes or until golden brown around the edges and lightly browned on top. Larger scones take closer to 25 minutes. Remove from the oven and cool for a few minutes. Feel free to top with any of the toppings listed in the recipe Note below.
- Leftover scones keep well at room temperature for 2 days or in the refrigerator for 5 days.

Steps:
- Heat the oven to 220C/200C fan/gas 7. Tip the self-raising flour into a large bowl with ¼ tsp salt and the baking powder, then mix.
- Add the butter, then rub in with your fingers until the mix looks like fine crumbs. Stir in the caster sugar.
- Put the milk into a jug and heat in the microwave for about 30 secs until warm, but not hot. Add the vanilla extract and a squeeze of lemon juice, then set aside for a moment.
- Put a baking tray in the oven. Make a well in the dry mix, then add the liquid and combine it quickly with a cutlery knife - it will seem pretty wet at first.
- Scatter some flour onto the work surface and tip the dough out. Dredge the dough and your hands with a little more flour, then fold the dough over 2-3 times until it's a little smoother. Pat into a round about 4cm deep. Take a 5cm cutter (smooth-edged cutters tend to cut more cleanly, giving a better rise) and dip it into some flour. Plunge into the dough, then repeat until you have four scones. You may need to press what's left of the dough back into a round to cut out another four.
- Brush the tops with a beaten egg, then carefully arrange on the hot baking tray. Bake for 10 mins until risen and golden on the top. Eat just warm or cold on the day of baking, generously topped with jam and clotted cream. If freezing, freeze once cool. Defrost, then put in a low oven (about 160C/140C fan/gas 3) for a few minutes to refresh.

THE BEST SCONES
The extra-rich taste of our cream scones comes from using milk powder in addition to the standard ingredients butter and cream. A light touch when combining the dough ensures a tender crumb.

Steps:
- Position a rack in the center of the oven and preheat to 400 degrees F. Line a baking sheet with parchment paper.
- Whisk the cream, egg and milk powder in a liquid measuring cup. Pulse the flour, granulated sugar, baking powder and salt in a food processor until combined. Add the butter and pulse only until pea-size pieces remain. Transfer to a large bowl and make a well in the center. Pour the wet ingredients into the well and mix with a fork, incorporating the dry ingredients a little at a time until a shaggy dough forms (it's okay if the dough looks a little dry, just don't overwork it). Lightly knead the dough in the bowl until it just comes together.
- Turn the dough out onto a lightly floured surface and pat into a 1-inch-thick rectangle (about 9 by 7 inches). Cut in half lengthwise, then cut in half again crosswise; you should have 4 equal rectangles. Cut each piece in half from corner to corner making 8 triangular wedges. Transfer to the prepared baking sheet and freeze for 10 minutes.
- Brush the tops with cream and sprinkle with demerara sugar. Bake the scones until golden brown, 20 to 25 minutes. Let them cool on the baking sheet for 10 minutes, and then transfer to a wire rack to cool for 15 more minutes. Serve warm with softened butter and jam.

Steps:
- Adjust oven rack to lower-middle position and preheat oven to 400 degrees.
- In a medium bowl, mix flour, 1/3 cup sugar, baking powder, baking soda and salt. Grate butter into flour mixture on the large holes of a box grater; use your fingers to work in butter (mixture should resemble coarse meal), then stir in raisins.
- In a small bowl, whisk sour cream and egg until smooth.
- Using a fork, stir sour cream mixture into flour mixture until large dough clumps form. Use your hands to press the dough against the bowl into a ball. (The dough will be sticky in places, and there may not seem to be enough liquid at first, but as you press, the dough will come together.)
- Place on a lightly floured surface and pat into a 7- to 8-inch circle about 3/4-inch thick. Sprinkle with remaining 1 tsp. of sugar. Use a sharp knife to cut into 8 triangles; place on a cookie sheet (preferably lined with parchment paper), about 1 inch apart. Bake until golden, about 15 to 17 minutes. Cool for 5 minutes and serve warm or at room temperature.

- Paul Hollywood suggests using strong bread flour as it gives a great structure to the scone with a fluffy, light crumb.
- According to our favourite Gourmet Farmer, Matthew Evans', buttermilk, or (milk with some yoghurt added), is the trick to his favourite scone dough (get his recipe here).
- A good tip for keeping your scones moist during cooking is to place them close together on the baking tray, says Luke Nguyen in Luke Nguyen's United Kingdom.
- The secret ingredient in SBS’s Bakeproof columnist Anneka Manning’s foolproof featherlight scones is cream. When mixed in with a flat-bladed knife, it adds lightness to the dough.
- Anneka also suggests using your fingertips rather than your whole hands to mix the dough, as the palms are the warmest part of our hands. Also, keep the palms of your hands facing upwards and lift the flour high out of the bowl when rubbing in the butter, as this will aerate the mixture and help give the scones a lighter texture.
- If using an egg wash (or milk) to brush your scones, be sure not to let the wash drip over the sides of the scones.
- Finally, when your warm scones are out of the oven, if you want to preserve the light texture, don't cut them with a knife. As Nelleke Gorton tells Paul West, it's best to use your fingers to prise them apart gently.

- Stir in the caster sugar and the sultanas or raisins. Crack the egg into a measuring jug and beat lightly. Pour in the milk or buttermilk up to the 200ml mark and give the mixture a stir.
- Make a well in the dry ingredients and pour in the egg/milk. Using a large fork or butter knife, lightly mix the ingredients together. If the mixture seems to dry, pour in a little more milk, a little at a time. At this stage I ditch the fork/knife and use my hands to lightly mix the dough. It should be soft and slightly sticky, but not too sticky to handle.

- “Don’t twist!” says Better Homes and Gardens food editor Sarah Murphy. “When you’re cutting out your scone dough, don’t be tempted to twist the cutter as you push into the dough, simply push firmly straight down into the dough.”
- Sarah also suggests using “light hands”. “When a scone recipe says to knead the dough, it’s not meaning with nearly as much force as when you’re kneading bread.
- Use enough flour (but not too much, cautions Sarah). “The bench should be well-floured before you turn your dough onto it, but don’t be tempted to start working in extra flour as you shape the dough as this will change the end result.”
- No cutter, no worries, adds Sarah. “If you don’t have a round cutter (or have lost it like I always do…), you can still make delicious scones, simply shape your dough to a 3cm thick square and use a large floured knife to cut into even 4cm squares.
- Crunchy or soft? “Scones are great whichever way you have them,” says Sarah, “but if you prefer a slightly softer outside, as soon as they come out of the oven, turn your scones out of the pan straight onto a clean tea towel, then cover with another clean tea towel to cool.
- “If the mixture is a little dry, add more of the remaining milk gradually," says the Queen’s former chef Darren McGrady. “You don’t want the mix too dry, or too set that it sticks to the rolling pin,” he says.
- Jamie Oliver suggest keeping the butter in the fridge right until you need it. “Because you will be rubbing in the butter with the flour (or blitzing in a food processor), you don’t want it to be too warm and turn to a mush!”
- Great British Bake Off judge Paul Hollywood recommends using strong bread flour, like self-raising flour, for a light and fluffy texture.
- "Always sift the flour," says Country Women’s Association scone judge Margaret Primmer. "Use full cream milk and cream at room temperature," Margaret adds.
HOW TO BAKE PERFECT SCONES | FEATURES | JAMIE OLIVER
From jamieoliver.com
- First and foremost, brilliant scones are about having the confidence to do as little as possible. The less you knead the mix, the less the gluten will tighten up – which means your scones will stay loose and crumbly, rather than tight and springy.
- Make sure you sieve the flour and baking powder into your bowl. This means that the two will be well mixed together, which gives you a better chance of an even rise.
- Keep the butter in the fridge right until you need it. Because you will be rubbing in the butter with the flour (or blitzing in a food processor), you don’t want it to be too warm and turn into a mush!
- Don’t add too much flour to the surface when you roll out your dough. It’s easy to forget that flour on your work surface still adds to the dough, which can make the scones heavier.
- Once you’ve cut out your scone shapes, flip them over and place upside down on the baking tray. This will help them rise evenly, and counteract any ‘squashing’ that happened when you cut out the dough.
