How to Make Caipirinha image

The classic caipirinha is the mother of all Brazilian cocktails. This refreshing 3-ingredient drink, is the perfect treat to spend a great summer afternoon with your amigos and familia. It's a delicious cocktail that pairs wonderfully with a churrasco, and all things grilled. Your summer bbq festas will never be the same! - recipe makes 2 servings.

5 whole limes
3 tbsp sugar
3/4 cup cachaça
ice (to taste)

Steps:

  • juice 3 of the limes and set aside - you'll want about a 1/3 of a cup of juice, give or take
  • cut the other 2 limes in 8 pieces each
  • Add the sugar and the lime pieces to a cup and muddle until you've juiced all the little pieces and they're nicely combined with the sugar
  • add the lime juice and the cachaça to the muddled limes and stir gently to dissolve the sugar - approx. 2 minutes
  • fill 2 cups with ice, and top them with caipirinha

1 lime, cut into small pieces
Superfine sugar
2 ounces cachaca (see Note), or white rum (to taste)
Ice cubes

Steps:

  • Place the lime pieces, pulp side up, in the bottom of an old fashioned glass or heavy tumbler. Add sugar to taste and crush the lime and sugar together with a pestle or the end of a wooden spoon (be sure to crush the pieces pulp side up or too much bitter lime oil will be released from the zest). Add the cachaca, stir to mix and add the ice cubes. Stir again and serve.

2 ½ fluid ounces cachaca
1 cup ice cubes

Steps:

  • In a large rocks glass squeeze and drop in 2 eighths of lime. Add sugar, crush and mix with a spoon. Pour in the cachaca and plenty of ice. Stir well.

2 limes , chopped into wedges, plus extra lime wedges to serve (optional)
5 tbsp golden caster sugar
200ml cachaça
ice

Steps:

  • Put the lime wedges in a large jug with the sugar, then use a muddler or the end of a rolling pin to break them down. Release as much juice from the wedges as possible, and let it mix with the sugar to create a syrup - you can also do this with a large pestle and mortar. Discard the lime peel.
  • Divide the syrup and cachaça between four glasses, then top with the crushed ice. Serve garnished with lime wedges, if you like.

  • Cut the lime into 8 parts: first cut off the bottom and the top of the lime (only the zest and the white pith), cut the lime in half lenghtwise (from pole to pole), then cut each part in half lenghtwise, cut off the white pith from the center of the lime, then cut each lime quarter in half crosswise - you should have 8 parts (see the photos in the body of the post).
  • Place the lime pieces in a small glass, add the sugar and fruits (only if you're making fruit caipirinha). Press the ingredients with a muddler (or alternatively with a wooden spoon) trying to squeze out as much lime juice as possible.
