- Preheat your oven to 200 °C (392 °F). Turn your oven to the bake setting and set it to 200 °C (392 °F). Place the oven rack in the middle shelf of the oven. This will help the butter cookies to cook evenly. Most ovens take at least 10 minutes to heat up.
- Measure 1 cup (225 g) of butter and 1 cup (200 g) of sugar into a mixing bowl. White sugar works best for making butter cookies, however, if you only have raw sugar, use that instead. If the butter has been in the fridge, leave it on a plate at room temperature for 30 minutes to soften. This will make it much easier to mix. Use a large mixing bowl to allow plenty of room to mix the ingredients.
- Cream the butter and sugar until they are light and fluffy. Use an electric beater to combine the ingredients until the butter lightens in colour and mixture looks fluffy. Set the beater to the highest setting to speed up the process and to make the mixture extra fluffy. It generally takes 5 minutes of beating to cream the mixture.Tip: If you don't have an electric beater, use a dessert spoon instead. This will take longer but will eventually achieve the same result. White sugar works best for making butter cookies, however, if you only have raw sugar, use that instead.
- Stir the egg and vanilla into the mixture. Add 2 teaspoon (10mL) of vanilla essence and an egg to the bowl. Use the electric mixer to stir the ingredients until they are thoroughly combined and any lumps have been crushed. If you are using an egg that has been in the pantry or fridge for a while, crack it into a cup first to check that it hasn't gone rotten. This is also a good way to avoid getting shell in the mixture.
- Stir the salt and flour in a separate bowl. Measure ¼ teaspoon (1.42 grams) of salt and 2 ⅔ cups (241 grams) of flour into a medium-sized bowl. Stir the ingredients together with a spoon to disperse the salt amongst the flour. Use the back of the spoon to crush any lumps in the mixture. All-purpose flour works best for this recipe, however, if you only have wholemeal flour, use this instead.
- Mix the dry ingredients into the batter. Pour the flour and salt into the middle of the large bowl. Set the electric beater to the lowest setting and mix the ingredients until they are combined.Note: Stop mixing once the ingredients are combined as over-mixing can cause the mixture to dry out.
- Cover the bowl of dough and place it in the fridge for 1 hour. This cools the dough and helps the cookies to retain their shape when they are cooked. Cover the bowl of dough with cling wrap to stop the dough from absorbing the different smells in the fridge. If you don't have cling wrap, place the dough into an airtight container.

- Beat the butter, sugar, salt and vanilla together until smooth and creamy.
- Mix in the egg yolk until well incorporated, scraping down the sides of the bowl at least once.
- Add the flour and mix just until incorporated.
- Scrape onto a lightly floured board and knead a few times, just until the dough smooths out.
- Turn onto a sheet of plastic wrap and roll into a log, wrap up and refrigerate for several hours or freeze.
- Before baking, preheat the oven to 325°F.
- Line your baking sheets with parchment.
- Slice the dough into slices about 1/8" thick and place them on the sheets about an inch apart (they won't be spreading very much, but they need air room around each cookie).
- Bake until JUST beginning to turn golden around the edges, about 16-18 minutes.
- Note: you can do many things with these cookies.
- You could roll the dough out and cut shapes.
- You could slice them even thinner and sandwich them with chocolate or jam or lemon curd.
- You could make them and then dip them half into chocolate.
- You could just make them and eat them, which is my favorite.

- Pre-heat oven to 350 degrees.
- Cream butter with 1/2 cup sugar and vanilla using mixer.
- Add the flour to make batter stiff.
- Make into 2 rolls using waxed paper.
- Divide remaining sugar into bowls and color with food coloring. I usually do atleast 2 colors. Place sugar on a piece of waxed paper and spread sugar out.
- Roll cookie tube in colored sugar. Wrap rolls up using wax paper. Refrigerate rolls to stiffen. 30-45 minutes.
- Slice in 1/4 inch slices and bake just until bottom starts to become golden. Do not overbake. 7-9 minutes.

- Preheat oven to 325°F.
- In a medium bowl, sift the flour, cornstarch, baking powder, baking soda, powdered sugar and salt.
- In a small heavy bottom cast iron skillet, melt 1/4 C of butter, and 1/2 C sugar over very low heat, until it is bubbling and thick. Let this mixture cool for about a minute, (no more) and then pour it onto a cookie sheet that has been lined with parchment paper to cool a few minutes more.
- When it is cool enough,(and still slightly pliable) break off small pieces using a sharp heavy knife, or maybe a clean screwdriver. It will be a lot of work, but you'll get a little muscle, and the reward of knowing that your cookies are going to be so good, you won't mind all of the work!
- Now, in a large mixing bowl, beat the remaining sugars with the remaining butter until it is light and fluffy. Add the egg, and mix again. Add the vanilla and the corn syrup, mixing until it is combined.
- Then, add the flour mixture, a little at a time, until it is completely incorporated. With a wooden spoon, add the cooled candy pieces, distributing them evenly throughout the dough.
- Refrigerate the dough for about 30 minutes, or freeze it for 15. When it is cold, roll out 1 1/2-inch balls of dough, and be careful, those pieces of toffee will probably be really sharp! Place the balls of dough 2 1/2-inches apart on an ungreased cookie sheet, and bake for 9-11 minutes, making sure that they don't brown too much. They should be very light on top, and golden on the bottom.
- After two minutes, remove the cookies from the cookie sheet, and continue cooling on a wire cooling rack, about 7-8 more minutes, or until the toffee is set.
EASY BUTTER COOKIES
Taken from my cookie favorites folder. If you are using unsalted butter then increased the salt to 1/2 teaspoon. The dough can be prepared up to 4 days in advance and refrigerated or freeze up to 1 month. Yield is only estimated depending on how large you slice the dough.
