turbinado sugar (coarse sugar, optional)

Steps:

  • Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
  • Using an electric mixer, beat the butter and sugar together until creamy.
  • Add the eggs and vanilla extract. If you would like to add almond extract or anise extract, add it now. Mix until well combined.
  • In a medium bowl, whisk together the all purpose flour, white whole wheat flour, baking powder and salt.
  • Add the flour mixture to the mixing bowl and mix on low speed until combined, scraping down the sides of the bowl as needed.
  • Divide the dough in half. Shape each half into a ball and then use your hands to shape each ball into a log that is about 8 inches long.
  • Place the logs on the prepared baking sheet. Use your hands to flatten the dough logs until they are about 3/4-inch thick. Gently press the sides and ends of the logs to even them out and flatten them.
  • If desired, sprinkle the logs with turbinado sugar.
  • Bake for 20-25 minutes, until lightly golden and the center of the logs is almost firm and bounces back when touched.
  • Let the logs cool on the baking sheet for 30 minutes.
  • Use a sharp knife to cut the logs into biscotti shape, on the diagonal. Press straight down with the knife, rather than sawing.
  • Place the biscotti, cut side up, on the baking sheet. Bake for 12-16 more minutes, until dry. The centers of the cookies will be slightly soft and will crisp as they cool.
  • Store biscotti in an airtight container at room temperature for 1-2 weeks or in the freezer for 3 months.

I found this recipe on the web about 5 years ago and can't remember where I found it. I wish I could so that they received the credit. I am a biscotti nut and this was the first recipe (and only) that I used. The results are fabulous and they are so easy to make even though they are triple-baked. I did change the ingredients just a little. Once you eat these you will never go back to store-bought again. I like them best dipped in a cup of hot tea.

3/4 cup toasted almond (slivered works best)
1/4 lb butter
3/4 cup sugar
2 eggs
2 1/4 cups flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon almond extract
1 orange, zest of (make sure it is fresh)

Steps:

  • Preheat oven to 350.
  • Cream butter and sugar.
  • Add Eggs.
  • Mix until smooth.
  • Add orange zest and almond extract.
  • Continue mixing until well blended.
  • Sift in flour, baking powder and salt.
  • Stir in almonds.
  • On floured board, divide dough in half and using your hands roll and form each half into a long roll (approx 1 1/2 diameter by 10 inches long).
  • Place rolls lengthwise on a cookie sheet approx 2 inches apart.
  • Bake rolls at 350 for about 20- 25 minutes.
  • Take rolls out of oven and cool for 5 minutes (leaving them on the cookie sheet).
  • Using a sharp knife slice across each roll diagonally into 1/2 inch thick slices (I usually make the slices about 3 inches long).
  • Lay the slices flat on the cookie sheet, then bake for 8 minutes.
  • Turn slices over and bake for an additional 8-10 minutes until slightly golden.
  • Remove and cool biscottis on a rack.
  • Store in an airtight container once they are cooled.

Make these easy biscotti to serve with coffee, or dip into chocolate and present in a tin to give to family and friends at Christmas

300g plain flour
100g caster sugar
50g light brown soft sugar
1½ tsp baking powder
80g vegetable oil
1 large egg
2 tsp vanilla extract
milk or dark chocolate , melted, to decorate (optional)

Steps:

  • Heat the oven to 180C/160C fan/gas 4, and line a baking tray with baking parchment. Put the flour, sugars, baking powder and a large pinch of salt in a large bowl and stir together.
  • In a separate bowl, whisk together the oil, egg, vanilla and 3 tbsp hot water. Gradually mix the wet ingredients into the dry until the mixture comes together into a dough. Gently knead the dough until smooth - it will be quite dry, so add another 1 tbsp water if it's too difficult to knead after a few minutes. Divide the dough into two equal pieces, shaping each into a 25 x 8cm log. Put the logs on the prepared baking tray and bake for 25-30 mins. Remove from the oven and leave to cool on the tray for around 15 mins.
  • Using a sharp knife, cut the slightly cooled logs into 1-2cm-thick slices crosswise. Return the biscotti to the lined baking tray and bake for 15-20 mins more (the oven should still be at 180C/160C fan/gas 4), turning the tray around halfway through. Leave to cool slightly on the tray, then transfer the biscotti to a wire rack and leave to cool completely. If you like, dip one end of each biscotti into some melted chocolate, then leave to set on a baking tray lined with baking parchment. Will keep in an airtight container for up to five days.

2 cups all-purpose flour
1 tsp baking powder
4 tbsp unsalted butter (softened)
3/4 cup sugar
2 eggs
3/4 cup salted (shelled, chopped pistachios)
3/4 tsp ground green cardamom
1 tsp vanilla extract

Steps:

  • Prepare a baking sheet lined with parchment paper
  • In a small bowl whisk flour and baking powder.
  • Place the butter and sugar in a large mixing bowl. Using a hand mixer like this one, beat the butter and sugar at medium-high speed until light and fluffy. Reduce the speed to low and add one egg at a time, beating gently until combined.
  • Add the pistachios, cardamom, and vanilla extract. Mix with a spoon until combined.
  • Stir in the flour mixture until just combined.
  • Dust the lined baking sheet with flour. Spoon the dough on top. Refrigerate for 30 minutes.
  • Heat your oven to 350 degrees F, adjusting a rack in the middle.
  • Take the dough out of the fridge. Using floured hands, form a log that's about 12 inches long (it doesn't need to be perfect. The dough will spread during baking).
  • Bake for 25 minutes, or until the dough is slightly golden, rotating the baking sheet halfway through.
  • At this point, the dough should still be quite soft. Remove from the oven and let cool for 10 to 20 minutes. Take a serrated knife and cut the log into 1/2-inch slices. Arrange the biscotti slices flat in one layer on the baking sheet, keep them about 1/2 inch apart.
  • Reduce the oven heat to 275 degrees F. Bake for another 30-35 minutes, turning the biscotti cookies over halfway through until crisp. Remove from the heat and transfer to a wire rack to cool.
  • Once cooled completely, you can store the biscotti in a loosley covered glass jar or container.

½ cup vegetable oil
1 cup white sugar
3 ¼ cups all-purpose flour
3 eggs
1 tablespoon baking powder
1 tablespoon anise extract, or 3 drops anise oil

  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets or line with parchment paper.
  • In a medium bowl, beat together the oil, eggs, sugar and anise flavoring until well blended. Combine the flour and baking powder, stir into the egg mixture to form a heavy dough. The Best Almond Biscotti image

I don't know where my mother got this recipe but it produces the best biscotti I have ever had- and I am Italian so I have eaten A LOT of biscotti. Also, I will be publishing the chocolate version of this recipe which is also to die for. I've also made these with 1/4 cup dark chocolate chips and 2/4 cups hazelnuts in place of the almonds. For a sweeter variety, I have also mixed 1/2 cup almonds with 1/4 cup butterscotch chips. I have also made them plain without nuts when I've been low on ingredients. You can't mess up this recipe- it's fool-proof!.

  • Bake for 25 minutes reversing the pan halfway through. The bars will be firm to the touch and just slightly browned. Remove from the oven and lower the temperature to 300 degrees. Let the cookies cool on the cookie sheet for 15 minutes.
  • Remove cookies to a cutting board using two spatulas. Using a serrated knife, slice the bars on an angle about 1/2 inch tick to form the biscotti. Lay them back on the cookie sheet with either cut side down and place back in oven for 15 minutes. Turn each cookie to expose the other cut side and place in oven for another 15 minutes. Let cool on a rack to room temperature. Place cookies in an airtight container.

1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1 c. sugar
8 tbsp. (1 stick) unsalted butter, melted and cooled
2 eggs
1 tbsp. lemon juice
1 tsp. lemon extract
1 tbsp. orange zest
1 tbsp. lime and/or grapefruit zest
white and dark chocolate for drizzling, optional

Steps:

  • Preheat oven to 350°F / 177°C / Gas Mark 4.
  • Whisk together flour, baking powder, baking soda and salt in a medium bowl. Set aside.
  • In the bowl of a stand mixer, fitted with the paddle attachment, combine butter, sugar and eggs. Beat for 3 - 4 minutes, until light and fluffy.
  • Add lemon juice, lemon extract and citrus zests. Mix to combine.
  • Add dry ingredients and mix until combined.
  • Divide the dough in half. On a parchment-lined baking sheet, form each half into a rectangle of dough approximately an inch thick.
  • Bake for 30 minutes, rotating pan halfway through. Remove from oven and cool for 10 minutes.
  • Gently slice biscotti into 1/4" pieces and lay them back on the sheet pan on their sides. Bake for an additional 10 minutes for crispy biscotti - see notes for extra crunchy cookies.
  • Cool on wire cooling rack completely before drizzling with chocolate if desired.
  • To drizzle with chocolate: Melt 1/3 cup chocolate in a microwave safe bowl in 30 second increments, stirring between each. When there are pea-sized pieces of chocolate left, you're done. Let the chocolate sit, the heat will continue melting it. Stir until smooth.

1 tbsp. Espresso Powder
1 tsp. Vanilla Extract

1 c. Semisweet Chocolate Chips

Steps:

  • Move oven racks to top and bottom 1/3 of the oven. Line 2 cookie sheets with parchment. Preheat oven to 325ºF. Stir flour, baking powder, and salt together. Set aside. Stir espresso powder and vanilla together. With an electric mixer, beat eggs, sugar, and espresso mixture for several minutes until thickened. On low speed, mix in flour. Once combined, stir in chocolate chips. With wet hands, form dough into 2 logs, one on each sheet, about 4 inches wide and 3/4 inch tall. Bake for 25 minutes, rotating the pans halfway through. Remove the sheets from the oven and let rest for 10 minutes. Meanwhile, move one of the oven racks to the center. After 10 minutes, spray the logs with water. Use a serrated knife to slice the cookies straight up and down, about 3/4 inch wide. Place all of the cut cookies, standing up, on one cookie sheet. Bake for 25 minutes more. Remove from the oven and cool on a wire rack. Store cookies in a container at room temperature.
