Steps:
- Soak rice overnight in the water.
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
- Cook the soaked rice over medium heat in a saucepan with the soaking water, 1/2 can of coconut milk, and white sugar, stirring constantly, until tender and thickened, about 20 minutes. Pour into the prepared baking pan.
- Stir together the brown sugar, remaining 1/2 can of coconut milk, and coconut preserves in a small saucepan, and bring to a boil. Pour the mixture carefully over the rice.
- Bake in the preheated oven until the topping thickens, about 25 minutes. Cool completely; cut into squares to serve.

- In a saucepan over medium-low heat, add the coconut cream and stir occasionally for 15 minutes. The oil and the curds should begin to separate at about five minutes. When the curds have browned and smell like toasted coconut, strain the curds from the oil, dry on paper towels to remove excess oil, and put it aside for later.
- In a saucepan over medium heat, combine coconut milk, palm sugar, and dark brown sugar. Stir occasionally for ten minutes until the sauce thickens to the consistency of honey and have a dark brown coloring. Remove the sauce from the heat and set aside. The sauce will also thicken as it cools.
- In a large pot over medium-high heat, combine coconut milk, water, palm sugar, dark brown sugar, and salt together and mix thoroughly.

- Combine glutinous rice and water in a medium pot (with lid). Bring to a boil. Reduce heat to low and cook (covered) for 10-12 minutes. Liquid will mostly be absorbed at this point and the rice will be somewhat soft but still not totally done.
- While the rice is cooking, prepare a large pan (preferably nonstick) and add in one can coconut milk, brown sugar and a pinch of salt. Bring to a boil on medium heat and add the half-cooked glutinous rice. Using 2 wooden spoons, mix very well and cook until all the coconut mixture is fully absorbed by the rice and pulls away from the sides of the pan. Transfer to a baking pan ( I used a 9x2 inch cake pan lined with banana leaves)
- To make Latik Topping: In (another) medium saucepan, combine palm sugar and coconut milk. Bring to a boil and cook until very thick (uncovered) and sauce is reduced to about a cup (or a little less). Pour over the prepared biko.
