- Move an oven rack to about 4" away from the broiler. Preheat broiler to high.Brush halibut fillets with half the oil, and then sprinkle with salt and pepper. Add remaining oil to an oven-safe pan or casserole dish. Slide the pan into the oven.
- Cook halibut for 8 minutes per 1" thickness, or until the fish is opaque and the edges are beginning to brown.Do not flip the fish halfway through cooking.When the halibut is done cooking, remove it from the oven. Serve with lemon wedges.

HALIBUT WITH LEMON-BUTTER AND CRISPY SHALLOTS

- For the lemon butter: Whisk together the lemon juice, salt, pepper, lemon zest and butter in a deep medium bowl until well blended (mixture will be like a thick sauce). Set aside until ready to use.
- For the halibut and crispy shallots: Combine the olive oil, lemon juice, garlic, salt, pepper and garlic in an 8-by-8-by-2-inch glass dish. Whisk the marinade to blend. Add the halibut and turn several times to coat evenly. Let stand 15 to 20 minutes.
- Combine the grapeseed oil and shallots in a medium heavy saucepan over medium-high heat. Cook, stirring often, until the oil heats up and the shallots turn golden brown, 5 to 7 minutes. Transfer the shallots with a slotted spoon to several layers of paper towels to drain and crisp. Sprinkle with salt and pepper just before using.
- Heat a large dry nonstick skillet over medium-high heat. Lift the halibut from the marinade, letting the excess drain off. Add the halibut to the hot skillet and sear 3 minutes. Turn the fish over using a flexible metal spatula. Sear until still slightly pink in the center, about 3 minutes longer, depending on thickness. Transfer the halibut to plates. Top with a generous dollop of lemon-butter and pile the shallots alongside or scatter around the fish. Garnish with the lemon wedges and serve.

- In a small mixing bowl, combine 1/4 cup butter, shallots, dill weed, parsley, mustard, lemon juice, garlic and salt; mix well.
- Rinse halibut steaks in cold water and pat dry on paper towels.
- In a 8 inch x 8 inch oven proof casserole dish, add 1 tablespoon of butter and 1 tablespoon of olive oil. Place under the broiler on HIGH heat for about 2 minutes or until the butter has melted.
- Place the halibut steaks in the casserole dish.
- Spread one half the lemon/herb mixture equally over each steak.
- Place under the broiler on HIGH heat and broil for 6 minutes.
- Turn halibut steaks over and spread the remaining lemon/herb mixture evenly over the steaks.
- Continue to broil on HIGH heat for another 5 to 6 minutes or until fish flakes easily with a fork. Do not overcook the fish.
- Serve with cooked basmati brown rice.
- You may also use finely chopped chives or green onions instead of the shallots.
BROILED HALIBUT WITH LEMON AND HERBS
Here's a simple, flavorful preparation that works well with almost any fish. If you can't find halibut at the market, seek out another flaky white fish like sea bass, flounder, or cod. Try this recipe with lime, orange, or even grapefruit in place of the lemon for a flavorful change of pace. You can use 1 1/2 teaspoons fresh, minced thyme instead of the parsley or basil. Seek out rarer herb varieties too. You can also find them at ethnic markets if not at traditional grocery stores, or you can grow potted heirloom herbs on your patio or deck. Some lovely options that work well with fish: sorrel, chervil, shiso leaf (perilla), Thai basil, burnet, or borage.

- Preheat broiler to high.
- Place halibut on a rimmed baking pan; rub all over with salt and pepper. Place little pieces of butter all over fish; broil until fish turns opaque in center, about 10 to 12 minutes.

HOW TO COOK HALIBUT
Halibut is a wonderful fish to cook. It has little oil and no overpowering flavor of its own. It takes sauces wonderfully, and the only thing you have to watch out for is to not dry it out during the cooking. The following can apply to either steaks (bone-in) or fillets (boneless hunks of fish). Halibut get quite large, and you can have a boneless roast 8 to 10 pounds if you like! In all cases, the fish is done when you can flake it with a fork.

- For any kind of cooking of non-oily fish, a rule of thumb is ten minutes per inch of thickness in a hot oven (this means 400 degrees or more). When you lower the temperature, things get interesting and sauces have more time to interact with the flesh. By lowering the temperature to 325 or so, this increases the cooking time to 1 1/2 hours.
- Baking: Put the fish in a baking dish, cover about 2/3 with milk, a small pat of butter on each piece, and bake for 1 1/2 hour at 350 degrees. Rinse fillets, dip them in flour, coat them in an egg mixture (I use the yolks and whites), roll in bread crumbs, and bake. You can also do this but instead of baking, put in a medium hot frying pan with a tablespoon of oil.
- Broiling: Small dab of butter and squeeze some lemon on each piece. Broil about 7 to 10 minutes, turning once.
- Barbeque: Coat fish with olive oil; put on a medium hot grill, turn once; done in about 8 minutes. Dab of butter and squeeze of lemon, turn after 4 minutes and dab and squeeze side two.
- Frying: Cut fillet into small portions rinse and drain; dredge in flour dip into egg mixture (beaten whites and yolks). Shake in a paper bag with cracker crumbs; fry in hot pan with 1/8 inch of vegetable oil. Fish cooks quickly, about 3-4 minutes per side, done when brown and flakes.
- Appetizer: Wrap 3/4 inch pieces of halibut with bacon, hold tight with a toothpick, cook them in the broiler, turning once.
