My sweet neighbor brought me a bag of apples one year and I went in search of recipes to use them up. I found this one and just knew it would be awesome. Everyone just loves it. It's so good!

3 eggs
1 c vegetable oil
1 tsp vanilla
1 tsp baking soda
1 tsp salt
3 c all purpose flour
4 c grated, peeled, apples
TOPPING MIX
1/2 c sugar
1 Tbsp cinnamon
2 tsp flour
1/4 c cold butter

Steps:

  • 1. Heat oven to 350. Grease and flour 2 loaf pans.(Use Large loaf pans) Mix the topping ingredients together and put half of mixture into bottom of prepared pans.
  • 2. Mix eggs, sugar, oil, vanilla, baking soda and salt together in large mixing bowl.Pour in 3 cups flour, stir a few times, then add apples and stir well. Don't over mix.Pour into prepared pans.
  • 3. Sprinkle remaining topping mixture on top of apple mixture. and place in a preheated 350 degree oven for 1 hour.

1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon baking powder
3 eggs, beaten
3 cups shredded peeled cooking apples (4 medium)
2 cups sugar
2/3 cup canola oil
1 teaspoon vanilla

Steps:

  • Grease and flour three 7-1/2x3-1/2x2-inch or two 8x4x2-inch baking pans. Set aside. In a medium bowl combine flour, soda, salt, cinnamon, and baking powder; set aside.
  • In a large bowl combine eggs, apples, sugar, oil, and vanilla. Stir in flour mixture just until moistened. Pour batter into prepared pans. Bake in a 325 degree F oven for 45 to 55 minutes or until toothpick inserted in center comes out clean. Cool in pans on wire racks for 10 minutes. Remove from pans. Cool on wire racks. Wrap and store overnight before slicing. Makes 30 servings.
  • Note: Golden Delicious, Rome, Granny Smith, Jonathan, or Newtown Pippin apples are a good choice for this bread.

5 small McIntosh apples, peeled and cut into rough 1/4-inch chunks (about 4 cups)
1 1/2 cups sugar
1/2 teaspoon finely grated lemon zest
Cooking spray
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon fine salt
2/3 cup vegetable oil
2 large eggs
1/2 teaspoon pure vanilla extract

Steps:

  • Work the apples, sugar and lemon zest together in a large bowl with your hands until the sugar feels like wet sand. Let the mixture sit, tossing occasionally, for 30 minutes (the sugar will have started to melt but will still be gritty).
  • Meanwhile, preheat the oven to 350 degrees F. Generously coat a 10-by-5-by-3-inch loaf pan with cooking spray. Sift the flour, baking soda, cinnamon, nutmeg and salt together onto a large piece of parchment. Whisk together the oil, eggs and vanilla in a medium bowl.
  • Once the apples are ready, add the flour mixture to them, and fold until combined. Pour in the oil mixture, and fold until just combined (it's OK if there are a few lumps). Pour the batter into the prepared loaf pan. Tap the pan on the counter a few times to settle and even out the batter.
  • Bake the bread until the top is golden brown and bounces back when pressed (if you insert a toothpick into the center, it's OK if there are a few crumbs), 55 to 60 minutes. Let cool in the pan on a cooling rack until cool enough to handle. Invert the bread out of the pan, and serve warm or at room temperature.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C) and lightly grease a 9x5 inch loaf pan.
  • In a large bowl, combine flour, sugar, baking powder, salt, cinnamon and cloves. In a separate bowl, mix together milk, egg and oil until well blended. Stir milk mixture into flour mixture. Fold in apple. Pour into prepared pan.

Number Of Ingredients 16

2 packages (1/4 ounce each) active dry yeast
1-1/2 cups warm water (110° to 115°), divided
1 teaspoon sugar
3 large eggs, room temperature, beaten
1 cup applesauce
1/2 cup honey
1/2 cup canola oil
2 teaspoons salt
8 to 9 cups all-purpose flour
1-1/2 cups diced peeled apples
1-1/2 cups raisins
2 tablespoons lemon juice
2 tablespoons cornmeal
GLAZE:
1 large egg, beaten
Sugar

Steps:

  • In a small bowl, combine yeast, 1/2 cup water and sugar; set aside. In a large bowl, combine eggs, applesauce, honey, oil, salt and remaining water; mix well. Stir in yeast mixture. Gradually add enough flour to form a soft dough. Knead on a floured surface until smooth and elastic, about 10 minutes. Place dough in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch down and turn over in bowl. Cover and let rise 30 minutes. In a small bowl, combine the apples, raisins and lemon juice. Divide dough into 3 parts; knead a third of the apple mixture into each part. Shape each into a round flat ball. Place each in a greased 8-in. round baking pan that has been sprinkled with cornmeal.
