Steps:
- Blend first 3 ingredients in blender until smooth.
- Heat 1 Tbsp. oil in large skillet on medium heat. Add garlic and onions; cook 5 min. or until tender. Remove from skillet. Heat remaining oil in skillet on medium-high heat. Add shrimp, in 2 batches; cook and stir 3 min. or until pink. Remove from skillet; cover to keep warm. Return garlic, onions and shrimp to skillet; stir in sauce mixture. Bring to boil; simmer on low heat 3 min. or until heated through.
- Spoon over rice; serve topped with onions and sour cream.

Steps:
- 1. Preheat oven to 400F.
- 2. Poach the shrimp in simmering water for 5 minutes. Drain and remove shells and devein. Set aside.
- 3. Heat meat sauce and wine in saucepan. Add the 1 clove of garlic.
- 4. Trim the crusts from the bread. Melt butter in skillet and add 1/2 teaspoon of garlic. Saute bread until golden.
- 5. Place 6 shrimp in each of 2 au gratin dishes. Cover with hot meat sauce. Arrange 2 garlic bread slices like wings in center of each dish. Heat in oven for 10 minutes, until sauce is bubbly.

- Slice garlic thinly. Season shrimp with kosher salt and paprika. Mix to coat.
- Heat garlic and oil in a skillet over medium heat. Cook until garlic starts to turn golden, about 2 minutes. Add shrimp and increase heat to high. Toss and turn shrimp with tongs until starting to curl but still undercooked, about 2 minutes. Pour in sherry. Cook, stirring continuously, until sauce comes up to a boil and shrimp is cooked through, about 1 minute more. Remove from heat. Stir in parsley with a spoon.

- In a 12-inch fry pan, melt butter over medium-high heat.
- Add onion and garlic and stir often until onion is limp but not browned, 3 to 5 minutes.
- Stir in tomatoes, chili paste, mushrooms, and wine.
- Bring to a boil over high heat; boil, uncovered, stirring often, until most of the liquid has evaporated, 5 to 8 minutes.
- Reduce heat to medium-high.
- Add shrimp and stir often just until shrimp begin to turn pink, 1 to 2 minutes.
- Stir in broth, parsley, and green onion.
- Stir just until hot and shrimp are no longer translucent in center (cut one to test), about 1 more minute.

- 1. In a medium-size saucepan, heat 6 tablespoons of olive oil over medium-low heat. Add the onion, carrot, celery, and 1 garlic cover, and cook, stirring occasionally, until softened, about 10 minutes.
- 2. Add the shrimp shells and wine, bring to a boil, and simmer until reduced by half, about 4 to 6 minutes. Add the chicken broth, tomato, thyme, bay leaf, parsley, tarragon, tomato paste, salt, and pepper (to taste). Bring to a boil, reduce the heat to a simmer, cover, and cook for 20 minutes.
- 3. Strain the shrimp sauce through a sieve, pressing as much of the liquid from the solids as possible with the back of a wooden spoon. Add the crushed red pepper to the sauce. Then add the butter, incorporating it into the sauce 1 tablespoon at a time. Set aside.
- 4. Heat a large sauté pan over high heat, and add the remaining 2 tablespoons olive oil. Season shrimp with salt and pepper to taste, and sauté them quickly until just done, 2 to 3 minutes. Quickly add the remaining 4 garlic cloves and cook, stirring over medium heat for 1 minute. Stir the shrimp into the sauce. Sprinkle with chives, and serve with the toast alongside.
- 5. At Sardi's, this dish is usually served over cooked white rice.
SALT-COOKED SHRIMP (GAMBAS A LA SAL)
This ingenious shrimp-cooking method comes from a restaurant near Valencia in Spain. It involves cooking whole shrimp in their shells in a cast-iron skillet on a bed of salt, which heats the crustaceans gently and evenly, leaving them with plenty of flavor. Leaving the shells on preserves the flavor and juices. When the shrimp are of impeccable quality as they are on coastal Spain, no sauce is necessary. But if you like, make a simple vinaigrette with a third of a cup of fruity olive oil, juice of one lemon, two crushed garlic cloves, and a few tablespoons of minced parsley. - Spread the salt evenly on the bottom of a heavy 12-inch skillet, preferably cast iron. Heat the skillet over medium-high heat until the salt is very hot and almost beginning to smoke. Place half of the shrimp on the salt and cook for 3 to 4 minutes. Using tongs, turn the shrimp over and continue cooking until the shrimp are just cooked through, about 3 minutes longer. Transfer the shrimp to a plate and cook the remaining shrimp in the same way. The second batch may take less time to cook, since the salt will be very hot.
