- Place the Italian sausage links, spaghetti sauce, green pepper and onion into a slow cooker. Stir to coat everything in sauce.

SAUSAGE, PEPPER AND ONION HOAGIES

- Place the sausages in a large nonstick skillet. Pierce the casings with a fork. Add 1-inch water to the pan. Bring liquid to a boil. Cover sausages, reduce heat and simmer 10 minutes.
- Heat a second skillet over medium high heat. Add oil, 2 turns of the pan. Add garlic, onion, cubanelle and red peppers. Season vegetables with salt and pepper.
- Drain sausages and return pan to stove, raising heat back to medium high. Add a drizzle of oil to the skillet, brown and crisp the casings. Remove sausages, slice into 2 inch pieces on an angle and set pieces back into the pan to sear.
- Split and toast the bread under broiler. Melt oil, butter together in small pan over medium heat. Add garlic and let it sizzle 1 or 2 minutes. Brush rolls with garlic butter and sprinkle with a little dried Italian seasoning blend.
- Combine the cooked peppers and onions to the sausages. Add hot peppers and hot pepper juice to the skillet. Toss and turn the sausage, peppers and onions, picking up all the drippings from the pan. Pile the meat and peppers into the garlic sub rolls and serve.

- Preheat the oven to 375°F.
- In a skillet brown sausage.
- Drain off the fat, stir in the sauce and olives, heat through.
- Split rolls lengthwise without cutting through opposite side.
- Hollow out buns slightly, halve cheese slices lengthwise.
- Place a piece of cheese on bottom half of each roll.
- Divide meat mixture evenly among the 4 rolls, top with onion and sweet peppers.
- Place another cheese slice on top and close the rolls.
- Wrap each sandwich in foil and seal, place on a baking sheet and bake the wrapped sandwiches in the oven for approx 15 minutes.
- Unwrap serve and enjoy!
FAMILIES FAVORITE HOT SAUSAGE SANDWICHES
I'm always volunteered to make the hot sausage in my family, for gatherings...I usually make 4 - 5 pounds worth...my whole family went on vacation, so was just my family today, had to keep up with tradition, so made just a pounds worth...needless to say, its gone...lol! Peppers, onion, mushrooms and my own sauce adorns this...

- 1. For the sauce: In a large skillet, over medium heat, add a few tablespoons olive oil. Once oil is hot, add the onions and garlic. Cook until onions are tender, stirring occasionally. ( about 10 minutes.)
- 2. Add the wine, tomatoes, paste, basil, sugar, oregano, salt and pepper. Bring to a boil, then simmer for 2 hours. Stir occasionally checking every so often to add some water when becomes too thick - about 1/4 cup at a time.
- 3. Once the sauce has simmered for a few hours. Add the fresh parsley and parmesan. Stir and set aside. ( if you don't use a fresh sauce, and are using store bought, make sure you doctor it up with seasonings and especially garlic.
- 4. Sausage: In a large skillet. Cook your pieces of sausage over medium heat, stirring frequently so as not to burn. I just shake the skillet occasionally. Once sausage is cooked through and browning. Drain on paper towel and set aside.
- 5. Over medium heat,in the same skillet as you fried sausage, add about 2 tablespoons olive oil. Add the onion, peppers, mushrooms.( salt and pepper.) and minced garlic if not using a sauce. Saute until vegetables are tender, don't overcook as they will simmer for a bit in the sauce. ( if not using a sauce, cook veggies until completely tender.)
- 6. Once veggies are cooked; add the sausage back to the pan. ( This can actually be served as shown, if you don't like sauce.)
- 7. Measure about 2 cups prepared sauce, ( more depending how saucy you want them.) Cover and simmer for about 30 minutes.
- 8. Turn on broiler or grill. Toast desired amount of garlic bread you will need, until golden.
- 9. Top one half with sausage mixture...sprinkle with Parmesan and is feasting time. I've also used this sausage mixture to serve over pasta. Also, if you like it hotter, sprinkle with some red pepper flakes. This is great in hoagie rolls as well. Can also be kept warm in a crock pot or if making triple batches, have kept hot in a roaster. Serve this at your next picnic, it will be gone in no time. :)

- Preheat oven to 350 degrees
- Prepare the Homemade Red Sauce in Less Then 40 Minutes! as directed.
- Place 10 Italian sausage links on a cookie sheet.
- Bake for 30 minutes turning once until cooked though and brown on both sides.
- Slice sausages lengthwise and across for 4 pieces per link.
- Slice pepper jack into thick slices.
- Slice Italian bread loaves lengthwise.
- Sauce the insides of both halves of the bread and lay them side by side on a large cookie sheet.
- Lay the cheese slices on the sauce on the bread half that will be the sandwich top.
- Place the sausage link pieces on top of the sauce on the bread half that will be the bottom of the sandwich.
- Carefully place the top of the sandwich on top of the bottom.
- Cover the sandwiches on the cookie sheet tightly with foil.
- Bake for 15-20 minutes until the cheese melts.
- Using a bread knife, slice into sandwich size pieces and serve.
- Enjoy!

- Preheat an outdoor grill for medium heat. Lightly oil grate, and set 4 inches from the heat.
- Pierce the sausages in a few places with a fork, and set aside. Slice off the bottoms of the onion halves so they will sit flat on the grill. Brush the bell pepper and onion halves with 2 teaspoons of olive oil.
- Place the sausages, onions, and peppers on the preheated grill. Cook and turn the sausages until well browned and juices run clear. Cook vegetables until tender and peppers are slightly charred. Remove vegetables and sausages from the grill.
- Place the peppers in a paper bag, close, and cool slightly. Remove and discard the charred skin from the peppers; slice peppers into strips. Slice the onion halves. Place salt and pepper to taste, and 1 tablespoon olive oil in a bowl. Add the peppers and onions, and toss until evenly coated. HOT SAUSAGE SANDWICHES

- Slowly brown sausage until dark brown and crumbly, drain. While sausage is cooking cube the Velveeta and slowly melt in 3 Qt pot. Combine the sausage with the melted Velveeta and spread mixture by the soup spoons full onto the Party Rye slices.
- Place spread slices on cookie sheet then cool in the freezer 10 - 15 minutes until cheese hardens. Store in Tupperware and/or plastic Ziploc bag in your freezer until you're ready to cook and eat.
- When you're ready to cook preheat your oven to 375 degrees F and place as many open faced sandwiches that you want to cook on a cookie sheet and bake for approximately 10 - 15 minutes until top turns brown and bubbly.

- In a medium bowl, use your hands to mash the hot Italian sausage and ground beef together until evenly combined. Try not to over mix. Form into to equal patties, each 1/4 lb. and about 1/2" thick, and set aside.
- Place a cast iron skillet over medium heat. Slice English muffins in half, and butter the inside halves of both muffins.
- Place the English muffins, butter side down, into the cast iron skillet. Allow to cook 2-3 minutes, until browned. Flip. Cook another 1-2 minutes on the exterior of the muffins. Set aside and cover with foil to keep warm.
- In the same skillet, add the sausage patties. Cook until browned with a crispy exterior, and cooked through; about 4-5 minutes per side, 8-10 total minutes. Add 1/4 cup of shredded cheese directly onto each sausage patty, and cover the skillet with a lid. Allow the cheese to melt; roughly 30 seconds. Remove sausage patties from skillet and set aside, also covering to keep warm.
