I found this in a box of recipe cards I bought at a garage sale.It works well for us as it's simple to make.

Steps:
- In a large frying pan, heat oil over medium heat until hot but not smoking.
- Add onion, garlic and mushrooms and fry, stirring constantly for 5 minutes.
- Add the stock and cook, stirring occasionally for 6-8 minutes, until vegetables are tender and liquid has evaporated.
- Add the remaining ingredients and cook stirring frequently for 2-3 minutes or until well heated through.
- Serve over egg noodles or rice.

- Bring a large pot of salted water to a boil. Add the noodles and cook as the label directs, then drain. Meanwhile, melt 2 tablespoons butter in a large skillet over medium-high heat. Add the onion and cook until slightly soft, about 2 minutes. Add the mushrooms and cook, stirring, until they begin to brown, about 2 minutes. Add the remaining 1 tablespoon butter, the chicken, flour, paprika, 1 teaspoon salt and 1/4 teaspoon pepper. Cook, stirring, until the chicken browns, about 3 minutes. Add the chicken broth and Worcestershire sauce and bring to a gentle simmer; cook until thickened, about 5 minutes. Stir in the sour cream and season with salt and pepper. Continue simmering gently until the chicken is cooked through, about 2 more minutes. Divide the noodles among plates. Top with the chicken mixture, parsley, some sour cream and paprika.
HOT SALAMI CHICKEN STROGANOFF
This is a stroganoff with a slight twist. Don't be too afraid of using hot salami as the sour cream does take a lot of the bite out of it

- Saute onions and garlic in a large frypan until brown. Add mushrooms and salami to the pan with the chicken strips.
- Cook for 6-8 mins and add tomato paste, simmer for 2 minutes.
- Turn heat to low and stir in sour cream, simmer for another 2 minutes.
- Season with ground pepper and serve over rice or noodles.

Well, I was panicking over losing a well-liked chicken stroganoff and decided to "ad-lib" as I call it. The results were even better than the recipe that I had lost, so it's my new and improved replacement. Hope you enjoy as well as I do!

- In 2 quart microwave-safe dish, melt butter. (About 30 seconds on HIGH.).
- Dissolve bouillon cube in boiling water.
- Add dry onion soup mix, bouillon and cream of mushroom soup to melted butter and mix well. Microwave on HIGH for 1-2 minutes, stir and microwave another 1-2 minutes until bubbly.
- Stir in chicken and sour cream and microwave 5 minutes or until bubbly, stirring halfway through. Serve with rice or desired type of pasta.

- Cook noodles according to package directions. Meanwhile, in a large skillet, cook sausage until heated through; drain. Remove with a slotted spoon and keep warm. Just like the popular beef version, but with chicken! Came up with this one night when my boyfriend was tired of our usual meals...he asked for beef stroganoff, chicken was what was defrosted so I made it with that. Has become a favorite! I like to make it with shells cause they really hold the sauce.

- Put a large pot of water on high heat to boil. Add pasta and cook to box's directions once boiling.
- While water is boiling/pasta is cooking: heat oil in a large skillet and add onion.
- Saute for 2-3 minutes until the onion begins to become translucent.
- Add chicken and garlic, raise heat to medium high and cook until chicken starts to brown.
- Push mixture to one side of the pan. In the empty side, add butter and melt. Add flour and cook for 1 minute to make a roux.
- Carefully whisk in chicken broth. Bring to a simmer. Sauce should begin to thicken due to the roux.
- Add the sour cream and mix thorougly.
- Add salt and pepper to taste.
- Mix with, or serve over pasta. Serve with French bread and salad for a deliciously easy meal.

SIMPLE CHICKEN STROGANOFF
When my son went to college, I scoured cookbooks for the type of recipes that would fit his fast, simple approach to cooking. I loved the cookbook series called "A Man and A Can", and developed this recipe based on one of the "Man-Can" recipes that used a pint of French Onion Dip as a main ingredient in the sauce. Brilliant!

Steps:
- Rinse off chicken tenders; pat dry with paper towels. Sprinkle raw chicken with garlic salt and pepper. **Thyme is another great herb in this recipe, if you have it in your pantry**.
- Heat olive oil in a large, wide saute pan. Add chicken breast tenders to hot oil and saute 2 minutes on one side; flip and saute 1 minute on other side (may need to do this in two batches - add a little more oil if needed).
- Remove chicken to a plate. Put chopped onions and sliced mushrooms back into pan; stir and saute 5-6 minutes until onion is soft.
- Add French Onion Dip directly into sauteed vegetables; gently blend together. Return chicken to pan and allow everything to simmer about 10 minutes until chicken is cooked through.
- While chicken is finishing, cook egg noodles in boiling water according to package directions. Drain noodles.
- Pour stroganoff mixture over cooked noodles; serve.
