1/4 cup finely chopped onion
1 tablespoon minced garlic
1/4 teaspoon red chile flakes
1 (28-ounce) can crushed tomatoes (recommended: fire roasted Muir Glen)
1 tablespoon julienned fresh basil leaves, plus sprig for garnish
1 teaspoon dried marjoram
1 teaspoon dried oregano
1/2 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
8 ounces cream cheese, softened
2/3 cup ricotta cheese
1/3 cup grated Parmesan
1 egg, slightly beaten
1/2 teaspoon minced garlic
1 teaspoon dried oregano
1/2 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon red chile flakes
1 tablespoon olive oil, plus more for drizzling
1 cup thinly sliced pepperoni
1/2 cup diced (1/4-inch) red bell pepper
1 tablespoon minced shallot
1/2 cup quartered and thinly sliced crimini mushrooms
1 cup small-dice buffalo mozzarella cheese
1/4 cup grated Parmesan
Serving suggestions: Toasted pizza dough strips, toasted pita strips, or crackers.

Steps:

  • Preheat the oven to 350 degrees F.
  • For the pizza sauce: Add the olive oil to a 12-inch saute pan over medium heat and, when hot, add the onion. Saute until translucent. Add the garlic and red chile flakes, cook for 1 minute, and then add the canned tomatoes. Reduce the heat to a simmer and cook for 25 minutes, stirring occasionally. When the mixture has thickened, stir in the fresh and dried spices. Simmer for an additional 15 minutes and adjust seasoning, if necessary. Remove from the heat.
  • For the bottom layer: In a medium bowl, combine the cream cheese, ricotta, Parmesan, egg, garlic and spices. Spread the mixture evenly into an oven-safe casserole (2-quart capacity or a 9-inch pie pan). Set aside.
  • For the toppings: In a small saute pan over medium heat, add a drizzle of olive oil and the pepperoni. Saute until the pepperoni is just crisp, 4 to 5 minutes, and then drain on a paper towel-lined plate. Add the remaining olive oil and the red bell peppers and saute over medium-high heat until just starting to soften. Add the shallot, cook for 2 minutes, and then add the mushrooms. Cook for 7 to 10 minutes and remove from the heat.
  • To assemble: Spread the pizza sauce over the top of the bottom layer of cheese, sprinkle with the pepper and mushroom mixture, and then the pepperoni. Evenly distribute the mozzarella over the top and bake for 20 minutes. Remove from the oven and sprinkle with the Parmesan. Garnish with the basil sprig and serve hot with pizza dough strips, toasted pita strips, or crackers.

1/2 cup sour cream
4 ounces cream cheese
One 14-ounce can fire-roasted tomatoes
One 6-ounce can tomato paste
2 teaspoon garlic powder
2 teaspoons Italian seasoning
1/4 teaspoon red pepper flakes
Kosher salt and freshly ground black pepper
1/2 cup chopped red onion
1 red bell pepper, chopped
3/4 cup sliced black olives
1 loaf crusty bread or baguette, thinly sliced, for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • In a food processor, combine 1/2 cup of the mozzarella, 1/2 cup of the Parmesan, and the ricotta, sour cream and cream cheese. Blend until smooth, with no lumps of cream cheese. Spread the mixture into an even layer in the bottom of a 9-by-9-inch baking dish.
  • Mix together the fire-roasted tomatoes, tomato paste, garlic powder, Italian seasoning and red pepper flakes in a small bowl. Season with salt and pepper. Carefully spread the mixture over the cheese layer so that it evenly coats the cheese and you don't see any white. Top with the onions, bell peppers and sliced olives. Sprinkle the veggies with the remaining mozzarella and Parmesan.
  • Bake for 25 minutes; then turn the oven to 450 degrees F and bake until brown and crusty around the edges, another 5 minutes. Cool slightly. Serve with crusty bread.

I found this in one of my cookbooks, made it and it was a hit. We ran out and people were still wanting more, so I plan to start making this for all get-togethers.

1 (8 ounce) package cream cheese
1 teaspoon italian seasoning (I use Pampered Chef's Pantry Italian Seasoning Mix)
4 ounces mozzarella cheese (shredded)
3/4 cup fresh parmesan cheese (grated)
1 (8 ounce) can pizza sauce (I use Ragu Pizza Quick)
1/4 cup green bell peppers or 1/4 cup ripe olives, pitted and chopped

Steps:

  • Preheat oven to 350 degrees.
  • You will only need a small baking dish (less than 8x8 square) if you do not double this recipe.
  • If the recipe is doubled, an 8x8 dish or 9x9 will work just fine.
  • I use the Small Oval Baker from Pampered Chef, as this recipe was made for that particular pan, but any pan can be used.
  • To soften cream cheese, place in microwave safe dish and heat for 45 seconds.
  • Check and heat again if it is not soft enough to mix.
  • In a small bowl combine the italian seasoning and cream cheese and spead onto the bottom of baking dish.
  • In a small bowl, combine the parmesan cheese and the mozarella.
  • Sprinkle half of the parmesan cheese mixture over the cream cheese.
  • Top with the pizza sauce making sure that you spread it evenly over the cheese layers.
  • Sprinkle the rest of the parmesan cheese mixture over the pizza sauce.
  • Bake for 15-20 minutes or until top is bubbly-top with green onions.

8 ounces brick-style cream cheese, very well-softened (lite is okay)
1 1/2 cups grated mozzarella cheese, divided (3/4 cup + 3/4 cup)

1 heaping cup pizza sauce (or your favorite marinara or red sauce)
about 15 pepperoni slices, or as needed to cover surface of pie dish

  • Preheat oven to 375F. Spray a 9-inch pie dish (I used a glass Pyrex) with cooking spray.
  • Using a spatula or butter knife, evenly spread the cream cheese over the base of pie dish. It'll slide around a bit and it doesn't have to be perfect, but it's so much easier if your cream cheese is very well-softened.
  • Evenly sprinkle 3/4 cup mozzarella over cream cheese.
  • Evenly sprinkle 1/2 cup parmesan.
  • Evenly add the pizza sauce to cover cheese and if necessary, gently spread it with a spatula or knife to evenly disperse.
  • Evenly sprinkle 3/4 cup mozzarella over sauce.
  • Evenly sprinkle 1/2 cup parmesan.
  • Evenly top with pepperoni slices.
