Steps:
- Heat grill to medium heat.
- Mix first 3 ingredients until blended.
- Shape meat into 4 (1/2-inch-thick) patties. Grill 5 to 6 min. on each side or until done (160ºF). Top with cheese; grill 1 min. or until melted.
- Place burgers on bottom halves of buns; top with ketchup mixture and remaining ingredients.

- In a large bowl, combine the first 10 ingredients. Crumble beef over mixture and mix well. Shape into nine patties. , Grill, uncovered, over medium heat for 7-8 minutes on each side or until no longer pink. Top with cheese. Grill 3-5 minutes longer or until cheese is melted. Serve on buns with lettuce and tomato if desired.

- Sauce: In a small bowl, combine sauce ingredients.
- Set aside.
- Burgers: In a large bowl, mix chicken and oats.
- Add half the sauce and mix thoroughly (using your hands, if necessary).
- Form into 4 large patties.
- Barbecue on greased grill or broil in oven for 5-7 minutes per side.
- Use remaining sauce to baste burgers while cooking.

These are great when you're tired of the same old hamburger. We use our outside gas grill all winter long in Maine!

Steps:
- In a large bowl, combine the beef, peppers& cumin.
- Shape the beef into 1-inch thick patties.
- On the grill rack, place the patties over medium hot coals.
- Grill, uncovered until done (approx. 10 min on first side for a medium and 12 minutes for a well-done).
- Flip burgers and brush often with the BBQ sauce.
- The last minute of grilling place a cheese slice on each burger; heat until melted.
- Serve on the toasted buns.
- These can also be broiled in the oven.

- Combine ground beef, jalapeno peppers, cumin, salt and pepper; mix lightly but thoroughly. Divide beef mixture into 4 equal portions; shape into ½ inch thick patties, 4 inches in diameter.
- Place patties on grid over medium coals. grill 7 to 9 minutes, turning once. Sprinkle 1 tablespoon cheese on each burger 1 minute before end of cooking time.
- Place tomato slice on bun bottom; top each with grilled burger and cover with roll top. To check temperature, cautiously hold hand about 4 inches above coals, Medium coals will force removal of hand in 4 seconds.

- In a bowl, combine the ground meats, mixing gently with your hands. Divide the meat into 4 pieces and gently shape each into a 3/4-inch-thick patty. Set the burgers on a baking sheet, cover with plastic wrap and refrigerate until firm, at least 2 hours.
- Light a grill or preheat a grill pan. Generously season the burgers on both sides with salt. Grill over high heat until browned on the bottom, 3 minutes. Flip and top the burgers with the grated Taleggio. Continue grilling until browned outside and medium-rare within, 3 minutes more. Transfer the burgers to a rack and let rest for 3 minutes. Set the burgers on the toasted buns, top with the minced peppers and serve.
