CRISPY WINGS WITH HOT HONEY SAUCE

- For the wings: Preheat the oven to 400 degrees F. Line a sheet pan with foil, then place a metal rack on the pan.
- Pat the wings dry with kitchen paper, then sprinkle with the salt, pepper and smoked paprika on both sides. Place them on the rack, making sure they are not touching. Bake for 25 minutes, then pull them out. Use tongs to turn them over, then put them back in the oven and bake until golden brown and cooked through, an additional 20 minutes .
- For the hot honey sauce: Meanwhile, add the honey, barbecue sauce, Louisiana hot sauce, vinegar, jalapenos and serranos to a small pot over low heat. Stir to combine. Bring to a simmer and continue to cook on low until reduced and slightly thickened, about 20 minutes.
- Remove the wings from the oven and turn the oven to broil. One by one, dunk the wings in the sauce. Place them back on the rack and broil for 3 minutes to caramelize.
- For the garnish: Place the wings on a platter and sprinkle over the chopped parsley. Serve with a bowl of ranch dressing for dipping.
HARISSA AND HOT HONEY CHICKEN WINGS
This recipe showcases just how easy it is to make hot honey at home instead of buying it. Creating a drizzle of hot honey around the edge of the plate with a squeeze bottle allows everyone in the family to adjust the heat level to their liking -- plus it makes the plate look extra beautiful. Harissa is a smoky pepper condiment gaining popularity. It's a great way to add a ton of flavor to any dish, and all you gotta do is open the jar.

- Preheat the oven to 245 degrees F.
- Heat the oil in a large, heavy-bottomed pot fitted with a deep-fry thermometer over medium heat until the thermometer registers 375 degrees F.
- Pat dry the chicken wings. Sprinkle the wings with the coriander, salt and pepper.
- Put the cornstarch in a medium bowl and dredge the wings.
- Shake off any excess cornstarch and working in 2 batches, fry the wings, turning with tongs every 2 to 3 minutes, until the exterior is crispy, golden and cooked through, 12 to 14 minutes total.
- Transfer the first batch of wings with a spider or slotted spoon to a rimmed baking sheet fitted with a wire rack and put them in the oven to keep warm. (Make sure the oil returns to the proper temperature before frying each batch.)
- Meanwhile, pour the harissa into a large bowl, add 2 tablespoons of water to the empty jar of harissa, place the lid back on and shake the jar to release the excess harissa from the sides of the jar. Pour what's left into the large bowl with the harissa. Stir to combine and set aside.
- Finely chop the Calabrian chiles and put them in a medium bowl. Add the honey and stir to combine, then pour the mixture into a small squeeze bottle.
- Snip off the top of the squeeze bottle to make a hole that's big enough for the chopped chiles to easily come through when the bottle is squeezed.
- Finely chop the chives and set aside.
- Remove the second batch of the wings from the oil, shaking off any excess grease, and place the wings directly into the harissa, using tongs to coat the wings on all sides. Add the first batch of the wings to the harissa and coat the wings on all sides.
- Congrats, it's time to plate! Drizzle a large circle of the hot honey around the edge of a plate. Place the wings in the center of the hot honey circle and top them with the finely chopped chives. Serve immediately. Enjoy!
DETROIT HOT HONEY WINGS

- Preheat an outdoor grill for medium heat and lightly oil grate.
- Wash the wings well and pat dry with paper towel. Season the meat with cayenne, salt, and pepper.
- Cook the chicken wings on preheated grill until cooked through and juices run clear, 20 to 30 minutes depending on the size of the wings. Brush the wings liberally using 1/2 cup of honey while they are cooking.
- Melt the butter, pour into a large bowl and mix in the remaining 1/2 cup of honey and hot sauce. Remove the wings from the grill and immediately toss them in the hot honey butter sauce to coat. Serve the wings 'wet' or return them to the grill for 1 minute per side to set the sauce.

- Combine honey, vinegar, paprika, salt and pepper in a small bowl., Cut through the 2 wing joints with a sharp knife, discarding wing tips. Add remaining wing pieces and honey mixture to a large bowl; stir to coat. Cover and refrigerate 4 hours or overnight., Preheat oven to 375°. Remove wings; reserve honey mixture. Place wings on greased 15x10x1-in. baking pans. Bake until juices run clear, about 30 minutes, turning halfway through., Meanwhile, place reserved honey mixture in a small saucepan. Bring to a boil; cook 1 minute., Remove wings from oven; preheat broiler. Place wings on a greased rack in a broiler pan; brush with honey mixture. - In a bowl, combine the flour, 2 teaspoons salt, the onion powder, garlic powder and cayenne pepper. Add the chicken wings and toss to coat.

HOT 'N HONEYED CHICKEN WINGS
This requires at least six hours to marinate (overnight is best). The first time I tried this recipe, I didn't have picante sauce. I used red tomato chow-chow, added some garlic and hot sauce, and put it in the blender for a second or two. Worked really well.

- Heat oven to 220C/200C fan/gas 6. Put the chicken wings in a large roasting tin. Mix the honey, soy and 1/2 tbsp sesame seeds in a bowl, then pour over the wings. Use your hands to mix and ensure all the wings are coated, then roast for 20 mins until cooked through, sticky and golden.
- Meanwhile, combine the soured cream, buttermilk, mayonnaise, lemon juice and paprika. Season well, then chill until ready to serve.
- When the wings are cooked, scatter over the remaining sesame seeds and the chilli. Serve with the dip, and some carrot and celery sticks for dunking.

- 1. Cut off and discard wing tips, cut each wing in half at joint. (If using frozen wings in a bag..this step should already be done for you). If using frozen..be sure to thaw first.
- 2. Place all the wings in a 13x9 inch baking dish. Combine 3/4 cup picante sauce, honey, soy sauce, mustard, oil, ginger and orange peel in small bowl; mix well. Pour over chicken wings. Cover and refrigerate at least 6 hours or overnight.

- Soak the wings in buttermilk, 4 hours or up to overnight.
- Pre-heat oven to 385 degrees.
- Drain wings in colander.
- Mix all dry ingredients (except chili flakes).
- dredge wings in coating mixture and place on greased tray or baking sheet.
- spray wings lightly with non stick spray to help them crisp and "fry" in the oven.
- Bake wings about 35-40 minutes until crisp and lightly browned.
- While wings bake, put honey and chilis in a saucepan over low heat. The honey will get thin very quickly and once it does you can turn off the heat.
- When wings come out of the oven, place wings in large bowl or plate and drizzle spicy honey mixture all over the wings!
