- Place the butter, sugar, corn syrup, heavy cream, salt and milk in a large, heavy-bottomed saucepan. Heat over medium heat until it comes to a boil.
- Meanwhile, whisk together the cocoa powder, water, rum and vanilla into a thin paste.
- Place the cocoa paste in a large bowl.
- Chop the chocolate into small pieces (or use excellent quality chocolate chips or paillettes) and add to the bowl.
- When the dairy comes to a boil, regulate the heat so it maintains a slow boil but doesn't boil up in the pan.
- Stir the dairy frequently and boil until it reaches a light caramel color, about 20-30 minutes (less time if you half the recipe). You don't want the color to be as dark as a Sugar Daddy, but it should be significantly darker than sweetened condensed milk. You can see what color it should be above in the post.
- Once the dairy is a lovely shade of deep tan, pour it into the bowl with the chopped chocolate and cocoa paste. Allow it to sit for a minute or two and then whisk until smooth.
- Strain it just to make sure it is completely smooth.
- Store in jars in the fridge.
- If you used fresh dairy, the hot fudge sauce will keep for a good 2-3 weeks in the refrigerator. If your dairy was close to the expiration date, use the sauce up within 5-7 days.

- In a small bowl, stir together espresso, hot water, and sugar. Stir to combine; set aside.
- In the bottom of a 3 1/2-quart trifle dish, place an even layer of cake cubes, cutting pieces to fit as necessary. - Add the vanilla and cookie dough ice cream to a glass ice cream dish or bowl. Top with a generous drizzle of Hot Fudge Sauce and some chopped pecans. Wedge a whole Chocolate Chip Cookie into the dish. Top with whipped cream and a cherry. Enjoy!
- Combine the cream, corn syrup, sugar, butter, cocoa and salt in a pot and bring to a boil over medium heat. Cook, stirring, until smooth.

- Line 3 baking sheets with parchment.
- In the bowl of an electric mixer, cream together the butter, granulated sugar and brown sugar until light and fluffy, 2 to 3 minutes, scraping the sides of the bowl as needed. - In a large, heavy-bottomed pot, heat 2 inches of vegetable oil to 350 degrees F.
- Whisk together the flour, granulated sugar, baking powder and kosher salt in a large bowl. Add the milk, butter, vanilla and egg and whisk until well combined.

- Take Sara Lee pound cake out of package. Cut horizontally in two spots to get three even pieces. Place the bottom piece back into the metal container the cake came in that has been lined with plastic wrap.
- Place three scoops ice cream (about 1 Cup, just eye ball it) on top of the cake layer and smooth it out evenly. Place the middle layer of cake on top, repeat with ice cream, and lastly place the top layer of cake on. Wrap the whole thing well in plastic wrap and place in freezer over night or until frozen solid.
- When you are ready to serve, unwrap the cake on a cutting board, heat up the hot fudge to the directions on the back of the packaging. - For the Cake Heat the oven to 350F. Grease a 9”x13” metal cake pan (Don’t use glass, because you want the cake to have straight sides) Line the bottom of the pan with parchment, and spray lightly. - To Assemble Level the top of the cake if necessary with a knife. You want the cake pieces to have the same thickness so it looks uniform when served. Carefully slice the cake in half horizontally. Leave the halves in place. Each half should be about 3/4 inch thick. Cut the cake in half, short-wise. You will end up with 4 rectangles of cake, each about 9” x 6”. Set half the cake aside (for another use or to repeat the assembly process depending on how much hot fudge cake you want) Spread 2 long, overlapping sheets of plastic wrap on the counter. Place the bottom rectangle of cake on the wrap. Peel off the cardboard from around the ice cream.

- Remove both brownies rounds from the pan and remove the parchment liner from the bottom of one brownie cake. Line the sides of one of the 6” pans (or the 9” springform pan) with and acetate sheet (see notes) or a sheet of parchment paper barely longer than length of the diameter of the 6” pan, folded in half lengthwise to serve as long, reinforced sheet of parchment. Tape the acetate sheet or parchment to secure along the sides of the pan as needed.
