CREAMY HOT BACON CORN DIP



Creamy Hot Bacon Corn Dip image

Great crock pot appetizer from the Gooseberry Patch Super-Fast Slow Cooking Cookbook.

Number Of Ingredients 6

8 oz. package cream cheese (softened)
15.25 oz. can of corn (drained)
1/4 c. butter (melted)
1/2 - 1 4.5 oz can of chopped green chilies (depending on taste)
3 pieces of crumbled bacon for garnish
tortilla chips

Steps:

  • Combine all ingredients except chips in a dip size slow cooker.
  • Cover and cook on high setting for 30 minutes; stir until smooth.
  • Reduce setting to low to keep warm.
  • Before serving garnish with crumbled bacon
  • The longer it cooks, the spicier it will get.
  • Serve hot with tortilla chips.

Number Of Ingredients 8

1 package (8 ounces) cream cheese, softened
1 cup sour cream
1/4 cup mayonnaise
2 garlic cloves, minced
1/4 teaspoon hot pepper sauce
1 can (15-1/4 ounces) whole kernel corn, drained
8 bacon strips, cooked and crumbled
Assorted raw vegetables and/or crackers

Steps:

  • In a bowl, combine the first five ingredients. Stir in corn and bacon. Cover and refrigerate for several hours. Serve with vegetables and/or crackers.

HOT CRAB AND CORN DIP

Number Of Ingredients 13

2 tablespoons unsalted butter, at room temperature
1 small shallot, chopped
2 cups frozen fire-roasted corn, thawed
1 red jalapeno pepper, seeded and chopped
2 tablespoons sherry or dry white wine
Kosher salt and freshly ground pepper
8 ounces lump crabmeat, picked through
1 1/2 cups grated monterey jack cheese (about 6 ounces)
3/4 cup sour cream
1 cup crushed butter crackers (such as Ritz; about 20 crackers)
1/4 cup grated sharp white cheddar cheese
2 tablespoons finely chopped fresh chives
1 teaspoon Old Bay Seasoning

Steps:

  • Preheat the oven to 375 degrees F. Melt 1 tablespoon butter in a skillet over medium-high heat. Add the shallot and cook until softened, about 1 minute. Add the corn and jalapeno; cook, stirring, until softened, about 3 minutes. Add the sherry and cook, stirring, until evaporated, about 2 minutes. Season with salt and pepper.
  • Transfer the corn mixture to a large bowl and add the crabmeat. Stir in the monterey jack, sour cream and 1/2 cup crushed crackers. Transfer to a 1-quart baking dish.
  • Combine the remaining 1/2 cup crushed crackers with the cheddar, chives and Old Bay in a medium bowl. Work the remaining 1 tablespoon butter into the crumb mixture with your fingers until combined. Sprinkle the crumb topping over the crab mixture. Bake until golden brown and heated through, about 20 minutes.
  • Serve with butter crackers or sliced baguette.

12 oz cream cheese, room temperature
2 cups shredded colby jack cheese, divided (or cheddar cheese)
1 cup shredded mozzarella cheese
1/2 cup shredded parmesan cheese
1/2 tsp salt
1/4 tsp pepper
1/2 tsp paprika
1/4 tsp garlic powder
30 oz whole kernel corn (two 15 oz cans), drained
2 tbsp pickled jalapeños
1 cup crumbled, cooked bacon
2 green onions, sliced
Cilantro, for garnish
Crumbled bacon, for garnish
Green onions, for garnish

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, combine the cream cheese, 1 1/2 cups of colby jack cheese, mozzarella cheese, parmesan cheese, salt, pepper, paprika and garlic powder.
  • Add the corn, jalapeños, bacon and green onions and stir to combine.
  • Spread the mixture into a 1.5-quart dish, sprinkle with the remaining 1/2 cup of colby jack cheese and bake for 20-30 minutes or until hot and bubbly.
  • Serve warm with crackers, chips or bread.

Yum! Always a favorite at get togethers, office parties, etc. I got this recipe from a cookbook of my Grandma's a while back. We love it, I hope you do too. I use fresh or frozen corn, but canned corn can be used also. You would just add 1 (15) oz. can of whole kernal corn. You can use Tabasco Sauce for the hot sauce, I usually use Sriacha Asian Chili Sauce, any kind will do..Enjoy!

I picked this recipe up at a "Tupperware" party many many years ago. This is my "guilt-free" dip because I figured that having crispy crunchy raw vegetables with it cancels out the high caloried bacon, cream cheese and sour cream. ;-)

4 slices bacon
15 g butter
1 small onion, finely chopped
1 clove garlic, crushed
250 g mushrooms, sliced
2 tablespoons plain flour
250 g cream cheese, chopped
1 teaspoon Worcestershire sauce
1 tablespoon dry sherry (optional)
1/2 cup sour cream

Steps:

  • Place bacon in shallow dish, cover with paper towel, cook on high in a microwave for 3 minutes or until bacon is crisp.
  • Remove bacon from the dish, then add the butter, onion and garlic to the dish, cook on high for 2 minutes.
  • Stir in the mushrooms, cook on high for another 2 minutes, then sprinkle the mushroom mixture with the flour.
  • Next, top the mushroom mixture and flour with the cream cheese, worcestershire sauce and dry sherry.
  • Cook on high for 5 minutes, stir halfway through this cooking time.
  • Stir in the sour cream and the chopped bacon.
  • Spoon into a serving dish.
  • Serve as a hot dip with raw vegetables such as sliced carrots, capsicum, beans and celery.
