I came across this recipe years ago and always seem to use it when I am in a pinch. It is fast, easy and can't get any more simpler than this!!! Hot or mild salsa can be used. This weighs in at 2 points on Weight Watcher

Number Of Ingredients 3

1 -1 1/2 cup chunky salsa
1/2 cup low-fat sour cream
1 cup low-fat cheddar cheese

Steps:

  • Drain the salsa of excess water, if necessary.
  • In a onion soup bowl or a small oven proof dish, add salsa, using 1 cup or fill until half filled (depending on the size of dish used). Add sour cream on top and spread around. Sprinkle with cheddar cheese. (can be made up ahead of time).
  • Bake in 350 oven for 20 minutes. Remove from oven and stir the cheese and sour cream into the salsa. Let cool slightly, as it does retain the heat. Serve with red, green or purple corn chips.
  • Note: I use my toaster oven for convience. If a large dish is used, just adjust the sour cream and cheese.

In Madera, California, Jeanie Carrigan simplifies party preparation by using her slow cooker to create this thick cheesy dip. "Your guests won't believe how good it is," she says.

Number Of Ingredients 8

1 medium onion, finely chopped
2 teaspoons canola oil
2 garlic cloves, minced
2 cans (15 ounces each) chili without beans
2 cups salsa
2 packages (3 ounces each) cream cheese, cubed
2 cans (2-1/4 ounces each) sliced ripe olives, drained
Tortilla chips

Steps:

  • In a small skillet, saute onion in oil until tender. Add garlic; cook 1 minute longer., Transfer to a 3-qt. slow cooker. Stir in the chili, salsa, cream cheese and olives. Cover and cook on low for 4 hours or until heated through, stirring occasionally. Stir before serving with tortilla chips.
