3 cups cubed cooked chicken breast
2 cups mayonnaise
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
2 celery ribs, finely chopped
2 cups cooked rice
1 can (8 ounces) sliced water chestnuts, drained
1 teaspoon grated onion
1 teaspoon lemon juice
TOPPING:
2 cups crushed cornflakes
1/2 cup slivered almonds
1/2 cup butter, melted

Steps:

  • Preheat oven to 350°. In a large bowl, combine first eight ingredients. Transfer to a greased 13x9-in. baking dish., Combine topping ingredients; sprinkle over top. Bake, uncovered, until bubbly, 40-45 minutes. Freeze option: Cover and freeze unbaked casseroles up to 3 months. To use, remove from the freezer 30 minutes before baking (do not thaw). Preheat oven to 350°. Cover with foil and bake 1-1/2 hours. Uncover; bake until bubbly and heated through, 10-15 minutes longer.

8 bone-in chicken thighs, skin pulled off and discarded
1 tbsp oil
5 spring onions, sliced
2 tbsp plain flour
2 chicken stock cubes
2 large carrots, cut into batons (no need to peel)
400g new potato, halved if large
200g frozen peas
1 tbsp grainy mustard
small handful fresh soft herbs, like parsley, chives, dill or tarragon, chopped

Steps:

  • Put the kettle on. Fry 8 bone-in chicken thighs in 1 tbsp oil in a casserole dish or wide pan with a lid to quickly brown.
  • Stir in the whites of 5 spring onions with 2 tbsp plain flour and 2 chicken stock cubes until the flour disappears, then gradually stir in 750ml hot water from the kettle.
  • Throw in 2 large carrots, in batons and 400g new potatoes, bring to a simmer. Cover and cook for 20 mins.
  • Take off the lid and simmer for 15 mins more, then throw in 200g peas for another 5 mins.
  • Season, stir in 1 tbsp grainy mustard, the green spring onion bits, a small handful of fresh soft herbs and some seasoning.

1 tbsp olive oil
1/2 tbsp butter
6 skin-on chicken legs
1 tsp Kosher salt
1/2 tsp ground black pepper
6 shallots (quartered)
2 large garlic cloves (sliced)
800 g | 1.7 pounds baby potatoes (halved)
2 tbsp Dijon mustard
1 tsp English mustard
1 tbsp runny honey
280 ml | 1 1/8 cups medium-dry apple cider
250 ml | 1 cup single (pouring) cream
1/2 tsp dried tarragon
3 fresh thyme sprigs
1 lemon zest only

Steps:

  • Preheat the oven to 200C (400F) and setting the shelf to the lower third of the oven.
  • Pat the chicken dry using paper towels (do not rinse) and season with salt and pepper.
  • Dry fry the bacon in a large lidded non-stick pan until it starts to crisp and render some of its fat. Set aside on a kitchen towel lined bowl.
  • Add a the olive oil and butter to the pan and pan fry the chicken legs, in batches if necessary, for 4 minutes per side or until nicely browned. Set aside.
  • Add the shallots and cook, stirring, for a couple of minutes. Add the potatoes and garlic and cook for a further four minutes.
  • Add the cider and stir in the mustard, honey and cream. Sprinkle with the dried tarragon and stir in the bacon.
  • Return the chicken to the pot, nestling it in the creamy sauce. Add the thyme sprigs, cover the pan and transfer to the oven. Cook for 15 minutes.
  • Uncover the pot and cook for another 5 minutes or until the potatoes are tender.
  • Check the seasoning, add the lemon zest and serve with some crusty bread to mop up the delicious sauce and a green salad on the side.

Steps:

  • Mix all ingredients except bread crumbs. Spread in a buttered 12x8 pan and bake 45-50 minutes on 350. Add crumbs to top and bake 5 more minutes.
