1 cup fat-free milk
3 tablespoons hot wheat cereal (not instant)
3 tablespoons apple butter
1 teaspoon light-brown sugar
1 tablespoon chopped walnuts

Steps:

  • In a small saucepan, bring milk to a simmer; gradually whisk in wheat cereal.
  • Reduce heat to low; cook, stirring frequently, until cereal has thickened and is cooked, about 2 minutes (adjust consistency with water, if necessary). Top cereal with apple butter, sugar, and walnuts.

This grainless porridge relies on sweet and tart Honeycrisp apples to make a chunky sauce enriched with coconut milk, cashews and ground flaxseed. It's packed with fiber and is friendly to the Whole30 program (a lifestyle that encourages you to choose whole food over processed, and eschews sugar, grains, dairy and legumes).

6 Honeycrisp apples (about 1 1/2 pounds)
1 cup canned coconut milk
2/3 cup roasted cashews, plus more for serving, optional
2 tablespoons ground flaxseed
2 teaspoons ground cinnamon, plus more for serving
1/2 cup raisins, plus more for serving, optional

Steps:

  • Cut off the sides/cheeks from 1 apple and slice; reserve. Set aside 1/4 cup of the coconut milk.
  • Peel and core the remaining 5 apples and cut into 1-inch chunks. Add the apple chunks, remaining 3/4 cup coconut milk and 2/3 cup water to a medium saucepan and bring to a simmer over medium-high heat. Simmer, stirring occasionally, until the liquid is reduced by half and the apples are tender and can be easily mashed with a fork, 10 to 12 minutes. Remove from the heat and gently mash the apples, making sure to leave some chunks for texture.
  • Meanwhile, pulse the cashews in a food processor until they are completely ground and resemble flour (be careful not to make butter). Transfer to a medium bowl and stir in the flaxseed and cinnamon. Fold the cashew-flax mixture and raisins into the mashed apple mixture and stir until well combined.
  • Divide the porridge among 4 bowls and drizzle each with 1 tablespoon of the reserved coconut milk. Top each bowl with apple slices, crushed cashews if using, raisins if using and a sprinkle of cinnamon.

1/2 cup dried apple, snipped
1/3 cup honey
1/4 cup raisins
1 tablespoon brown sugar
1/3 cup peanut butter
1/4 cup apple butter (I've used honey as a substitute)
1/2 teaspoon ground cinnamon
1/2 cup rolled oats
1/2 cup chopped walnuts or 1/2 cup pecans
1/3 cup toasted wheat germ
1/4 cup roasted sunflower seeds
2 cups corn flakes or 2 cups bran flakes

Steps:

  • In a Dutch oven combine dried apples, honey, raisins, and brown sugar.
  • Heat and stir until mixture boils; reduce heat slightly.
  • Cook, uncovered, for 1 minute, stirring constantly.
  • Remove from heat.
  • Stir in peanut butter until melted.
  • Stir in apple butter and cinnamon.
  • Stir in rolled oats, walnuts, wheat germ, and sunflower seeds until well combined.
  • Add cereal, stirring to coat.
  • Press mixture very firmly (or bars will crumble) and evenly into an ungreased 8x8x2-inch pan.
  • Chill to set.
  • Cut into 8 bars.
  • Store in an airtight container in the refrigerator up to 2 days.

2 tablespoons walnuts, chopped
1/3 cup quinoa
2/3 cup water
1 tablespoon oat bran
2 tablespoons maple syrup
vanilla yogurt (optional) or cream (optional)

Steps:

  • Rinse quinoa well with water to remove bitter coating; drain.
  • Place walnuts in a small saucepan on medium-high heat. Stir frequently until the walnuts are toasted and fragrant, about 3-4 minutes. Remove the pan from the heat and let walnuts cool slightly. Chop and set aside.
  • Combine quinoa, water, and oat bran in a medium saucepan. Cover and bring to a boil; reduce to a simmer and cook for 12 minutes. Leave the saucepan on the burner, covered, for an additional 6 minutes. Remove from the heat and stir in the walnuts and maple syrup. Transfer to a bowl and top with milk, yogurt, or cream, if using.
