3/4 cup salsa
4 garlic cloves (minced)
2 teaspoons fresh lime juice
1 teaspoon ground cumin
1 teaspoon water
1/8 teaspoon salt
1/4 cup minced cilantro

Steps:

  • In the bowl of a food processor, puree the black beans, salsa, garlic, lime juice, cumin, water and salt until smooth.
  • Add the cilantro and pulse until just combined.
  • Serve with tortilla chips or raw vegetables.

1 small onion, chopped
1 teaspoon canola oil
2 garlic cloves, minced
1 can (15 ounces) black beans, rinsed and drained
1/2 cup diced fresh tomato
1/3 cup picante sauce
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/4 cup shredded reduced-fat Mexican cheese blend or cheddar cheese
1/4 cup minced fresh cilantro
1 tablespoon lime juice
Tortilla chips

Steps:

  • In a large nonstick skillet, saute onion in oil until tender. Add garlic; cook 1 minute longer. Add beans; mash gently. Stir in the tomato, picante sauce, cumin and chili powder. Cook and stir just until heated through. Remove from heat; stir in cheese, cilantro and lime juice. Serve warm with chips.

1 (8 ounce) container fat-free sour cream
2 cloves garlic, minced
1 fresh jalapeno pepper, finely diced
1 tablespoon chopped fresh cilantro
1 (1 ounce) packet taco seasoning
5 dashes hot pepper sauce
1 lemon, juiced
2 avocados - peeled, pitted, and mashed
3 cups shredded lettuce
1 (15 ounce) can black beans, rinsed and drained
2 (11 ounce) cans Mexican-style corn, drained
1 cup chunky salsa
1 cup shredded Mexican cheese blend
1 (2.25 ounce) can sliced black olives, drained
¼ cup sliced green onions
1 Roma (plum) tomato, chopped

Steps:

  • Mix together the sour cream, garlic, jalapeno pepper, cilantro, taco seasoning, hot pepper sauce, and 1/2 of the lemon juice in a bowl until well blended.
  • In another bowl, mash the avocado with the remaining lemon juice; set aside.
  • Spread the shredded lettuce over a 12-inch serving platter.
  • Layer the black beans evenly on top, followed by the Mexican-style corn.
  • Spread the prepared sour cream mixture over the corn.
  • Gently spread the avocado mixture on top of the sour cream.
  • Pour the salsa evenly over the avocado mixture.
  • Sprinkle the Mexican cheese blend, olives, green onions, and tomato on top.

1 (16 ounce) can fat free refried black beans, can use pinto bean variety too
1 cup reduced-fat sour cream
1 cup salsa
1/2 teaspoon salt
1 teaspoon ground black pepper
1/2 cup reduced-fat cheddar cheese, shredded

Steps:

  • Preheat the oven to 325 degrees.
  • In large bowl, combine beans, sour cream, salsa, salt and pepper.
  • Spoon into a 3 to 4 cup shallow baking dish.
  • Top with cheese.
  • Bake 10 to 15 minutes, or until heated through.

1/2 cup shredded fat-free cheddar cheese or 1/2 cup low-fat cheddar cheese
1/4 cup thinly sliced scallion
1/4 cup sliced black olives
2 tablespoons finely chopped jalapeno peppers (optional)

Steps:

  • Place the beans, sour cream, chil powder and cumin in a food processor or blender; process until smooth.
  • Spread the mixture over the bottom of a 9-inch glass pie pan.
  • Top with the cheese, followed by the scallions, olives and jalapenos.

400g can cannellini beans , rinsed and drained
400g can chickpeas , rinsed and drained
juice 2 lemons , zest 1
2 garlic cloves , crushed
2 tsp ground cumin
100ml Greek yogurt

Steps:

  • Put half the beans and chickpeas into a food processor with the lemon juice, garlic, cumin and yogurt, then whizz until smooth. Tip in the rest of the beans and pulse once to get a very chunky dip. Stir in the lemon zest and plenty of seasoning, then divide between 4 containers and store in the fridge.
