WHOLE WHEAT HONEY OAT FLAX BREAD
Fall in love with this whole wheat honey oat flax bread. It's the perfect bread for sandwiches, or by itself with a little bit of butter and a drizzle of honey. This bread has a wonderful subtle sweetness and a great whole wheat flavor.

Steps:
- Microwave milk for 1 minute (or warm it via stovetop)
- Pour yeast into milk, stir once and then let it sit for 5 minutes, or until the yeast foams/bubbles slightly on top
- Combine flour, whole wheat flour, oats, salt and flax seed (in a stand mixing bowl or a larger bowl) and stir to combine
- In a small bowl, combine butter and honey. Melt in microwave
- Pour in honey/butter mixture into the milk/yeast mixture. Then pour the liquid into the large bowl with the dry ingredients
- Using a dough hook, knead bread for 5 minutes. If you're not using a mixer, knead with hands (about 5-10 minutes). The texture should be springy to touch, but not too sticky.
- Transfer to a lightly oiled bowl, so the mixture doesn't stick to the sides of the bowl
- Cover bowl with towel or plastic wrap and let it rise for one hour
- After the mixture bulks up and doubles in size, pick up the dough and form it into a log. Place dough into a greased 9x5 loaf pan.
- Cover with plastic wrap lightly and allow to rise for another hour until it has risen to the top of the loaf pan.
- Preheat oven to 350 degrees
- Bake at 350 for 35 - 40 minutes
- Poke a toothpick or fork in the center of the bread and make sure it comes out clean to ensure it is cooked
- Remove from the oven and turn loaf out onto cooling rack so it doesn't sink
- Allow to cool and enjoy!

A delicious whole grain bread. It is my favorite bread of all time! It is for bread makers. You may substitute vegetable oil for flaxseed oil if flaxseed oil is unavailable.

- The easy way: Throw it all into a bread machine and select dough. When finished proceed to step 9.
- The hard way: Dissolve yeast in warm water.
- In a large bowl, combine butter, molasses, honey and salt and mix well.
- Add yeast mixture and then gradually add flours.
- Turn onto floured surface and knead until smooth.
- Place in buttered bowl and let rise until double.
- Punch down and let rest for a few minutes.
- Divide dough into 4 parts and shape into loaves.
- Place in greased pans and let rise for about an hour.
- Bake at 375* for 35 to 40 minutes.

- Place all ingredients into bread machine in the order listed and mix on the "dough" cycle. Punch down dough after the cycle is complete and roll into a sandwich loaf and place in a well-greased bread pan. Allow dough to rise in a warm location for about 45-60 minutes, then bake at 375 degrees for 40 minutes.
- Optional - brush the dough with milk or egg wash prior to baking.
- * Note - prior to making this recipe, soak chia seeds in water to create a chia gel. I keep a fair amount of chia gel in my fridge and use about 2 tbsp of chia gel in this recipe, however food.com does not recognize Chia Gel as an ingredient.

- Dissolve yeast into 1/4 cup warm water in a small bowl. Let sit until it has doubled in size, about 10 minutes.
- Meanwhile, in a stand mixer using the hook attachment, mix warm water, salt and 3 1/2 cups of the wheat flour for about 5 seconds on lowest speed. It won't be mixed all the way, and that is okay!
- Once the yeast has doubled, add in yeast, oil, flax and honey. Mix on low speed for about 5 seconds. Slowly add in the rest of the flour (2 1/2 cups), and then let mix for 10 minutes on low speed.
- Divide the dough into two equal loaves, and place on two lightly floured towels. Fold the towels over so they are covering the loaves, and let rise for about 30 minutes.
- Bake loaves in a lightly greased loaf pan (with coconut oil) at 350 degrees for 25-30 minutes. It should have a nice crust that is golden on top.

WHOLE WHEAT NO-KNEAD BREAD WITH FLAX SEEDS AND OATS
I found this recipe on the food blog Kiss My Spatula. This was the first bread I've ever made, and it was easy and turned out great! The crust is the best part --super crunchy and crackle-y. It's best to eat on the first day, but can be wrapped up in foil and kept up to two days, reheated slightly before serving. The crust looses much of its crunch after the first day, however. I didn't have a Dutch oven, which is suggested in the recipe, so I used stock pot, which worked fine.

- Whisk flour, steel cut oats, flax seeds, yeast, and salt in large bowl. Add water and vinegar. Using rubber spatula, fold mixture, scraping up dry flour from bottom of bowl until shaggy, sticky ball forms. Cover bowl with plastic wrap. Let dough rest at least 12 hours, preferably about 18, at warm room temperature, about 70 degrees.
- Lay 12X18-inch sheet of parchment paper inside 10-inch skillet and spray with nonstick cooking spray. Dough is ready when its surface is dotted with bubbles. Transfer dough to lightly floured work surface and knead 10 to 15 times. Shape dough into ball by pulling edges into middle. Transfer dough, seam-side down, to parchment-lined skillet and spray surface of dough with nonstick cooking spray. Cover loosely with plastic wrap and let rise at room temperature until dough has doubled in size and does not readily spring back when poked with finger, about 2 hours.
- About 30 minutes before baking, adjust oven rack to lowest position, place 6-8 quart heavy-bottomed Dutch oven (with lid) on rack, and heat oven to 475 degrees. Lightly flour top of dough and, using razor blade or sharp knife, make one 6-inch-long, 1/2 inch-deep slit along top of dough.
- Carefully remove pot from oven and remove lid. Pick up dough by lifting parchment overhang and lower into pot (let any excess parchment hang over pot edge). Cover pot and place in oven. Reduce oven temperature to 425 degrees and bake covered for 30 minutes. Remove lid and continue to bake until loaf is deep brown and instant-read thermometer inserted into center registers 210 degrees, 20 to 30 minutes longer. Carefully remove bread from pot; transfer to wire rack and cool to room temperature before slicing.
