- In a small bowl, dissolve yeast in warm milk. In a large bowl, combine 1 egg, honey, mashed potatoes, butter, salt, whole wheat flour, yeast mixture and 1-1/2 cups all-purpose flour; beat on medium speed for 3 minutes. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a bowl coated with cooking spray, turning once to coat the top. Cover with plastic wrap and let rise in a warm place until doubled, about 1 hour., Turn onto a floured surface; divide into 24 balls. Roll each into a 7-in. rope. Holding one end of rope, loosely wrap dough around, forming a coil. Tuck end under; pinch to seal. Place in muffin cups coated with cooking spray. Cover and let rise until doubled, about 30 minutes. , Beat remaining egg; brush over rolls. Bake at 400° for 9-11 minutes or until golden brown. Remove from pans to wire racks to cool.

- In a large bowl, mix 1 cup all-purpose flour, whole wheat flour, oats, yeast and salt. In a small saucepan, heat water, honey and 4 tablespoons butter to 120°-130°. Add to dry ingredients; beat on medium speed 2 minutes. Add egg; beat on high 2 minutes. Stir in enough remaining all-purpose flour to form a soft dough (dough will be sticky)., Turn dough onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover with plastic wrap and let rise in a warm place until doubled, about 1 hour. , Punch down dough. Turn onto a lightly floured surface; divide and shape into 24 balls. Place in a greased 13x9-in. baking pan. Cover with a kitchen towel; let rise in a warm place until doubled, about 30 minutes. , Preheat oven to 375°. Bake 20-22 minutes or until golden brown. Melt remaining butter; brush over rolls. - In large bowl, mix whole wheat flour, 1 cup of the all-purpose flour, the salt and yeast. In 1-quart saucepan, heat water and 6 tablespoons each of the honey and butter until very warm (120°F to 130°F). Beat warm liquid and egg into flour mixture with electric mixer on low speed until moistened, scraping bowl frequently. Beat on medium speed 3 minutes, scraping bowl frequently. Beat in remaining 1 to 1 1/2 cups all-purpose flour until soft, smooth dough forms (dough will be sticky). Cover; refrigerate 8 hours or overnight.
- Lightly grease 12 regular-size muffin cups with butter. Place dough on floured work surface; gently push fist into dough to deflate. Divide dough into 12 equal pieces; divide each into 3 portions. Shape each portion into a ball, pulling edges under to make a smooth top. Place 3 balls, smooth side up, in each muffin cup. Cover; let rise in warm (80°F to 85°F) place 45 minutes to 1 hour or until doubled in size.
- Heat oven to 375°F. Uncover dough; bake 18 minutes or until golden brown. Immediately remove from pans to cooling racks. Cool 15 minutes.
- Meanwhile, in 1-quart saucepan, heat remaining 2 tablespoons each honey and butter until melted. Brush over warm rolls.

A tasty twist on a potato roll. Very moist and tender. Can substitute melted butter for the oil for extra richness if desired. I mix in a kitchen aid and shape by hand, but could also be mixed in a breadmaker and shaped by hand for baking.

Steps:
- Soften yeast in warm water with honey until foamy in mixer bowl equipped with dough hook.
- Add remaining ingredients and let mixer knead the dough hook for five minutes. Dough will be soft.
- Cover and place in warm place until risen to double. You can also cover and let it rise slowly in refrigerator for up to 24 hours.
- Punch down and shape into 24 rolls. Place side by side in greased 13 by 9 pan.
- Cover and let rise again until doubled in size.
- Bake at 400 degrees for 10 minutes then lower oven to 350 for an additional 12-15 minutes.

WHOLE WHEAT POTATO BREAD OR ROLLS
This makes great rolls and scones!!! I lost this recipe for over a year and could not find one that was as light. Now that it is on the web I won't ever loose it again!! It was a bread recipe from the back of a wheat bag but I use it for rolls. Can grease 2 1/2 size cans and use as pans. Fill cans 1/2 full.

- Mash or beat potatoes and water until smooth.
- Cool.
- Add 1 3/4 cup water to potato mixture.
- Add yeast, oil, salt and honey.
- Pour this mixture slowly into flour.
- Mix 5 to 7 min with electric mixer. Dough will be soft.
- Let rest 10 to 15 minute on greased surface.
- Punch down and shape into loaves or rolls.
- Let rise until double.
- Bake rolls 20 to 30 minutes at 400.
- Bake loaves of bread 35 to 45 minute.

- Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press start.

- Note: You may decrease the amount of white flour and increase the wheat flour, but the bread will not rise as high.
- Add ingredients in the order suggested by the manufacturer.
- Set Cycle: Dough, Size: 2lb.
- Spray two baking sheets with non-stick cooking spray, and preheat the oven to 375F.
- When the cycle is finished, take the dough out and divide into 20 equal pieces (I use a scale).
- Roll into ropes about 8 inches long, and tie as you would a knot, press the ends together and place end-side down on the baking sheet.
- Allow to rise until doubled, about 30 minutes.
- Brush with eggs or milk; eggs give a shiny, golden hard crust, milk gives a tender golden crust, water makes a light shine and crisp golden crust.
- Or brush with honey for a sweet crust after baking.
- Bake until well-browned, about 15 minutes.
