2-4 chicken breasts
1 cup buttermilk*
2 cup all-purpose flour
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1/2 teaspoon salt (to taste)
1/2 ground black pepper (to taste)
2 qt vegetable oil (for frying)
2 tablespoons truffle honey
1 bunch thin asparagus spears (trimmed)
3 tablespoons olive oil
1 teaspoon sea salt
1/2 teaspoon ground black pepper
1/2 teaspoon garlic powder
1 tablespoon lemon juice

Steps:

  • Cover the chicken with plastic wrap, and using a flat mallet, pound lightly the chicken on both sides.
  • Add flour, garlic powder, onion powder, paprika, salt, and pepper to a large plastic bag and mix to combine.
  • Add buttermilk to a shallow plate.
  • Dip chicken breasts well in buttermilk, put them in the bag with the flour, seal the bag, and shake to coat well.
  • Place coated chicken on a plate or tray and cover with a clean dish towel or waxed paper. Let chicken sit until the flour is a paste-like consistency.
  • Fill a large skillet about 1/3 to 1/2 full with vegetable oil and heat the oil until very hot.
  • Add the chicken breast to the skillet, if you are cooking a large batch, make sure the chicken pieces don't overlap.
  • Brown chicken on both sides, that should take only a few minutes, reduce heat, and cover the skillet.
  • Cook for about 10 minutes on low heat, so the chicken breast will be cooked through, but not crispy (it will take longer if you are cooking other chicken parts).
  • Remove the lid, raise the heat, and continue to fry the chicken until crispy. Transfer to a paper towel lined plate or cookie sheet or tray. If not serving immediately, place the chicken in a warm oven to keep it warm.
  • Repeat with remaining chicken if you have more left.
  • Drizzle chicken with Honey Truffle and serve with mashed potatoes and asparagus.

3 eggs
1 cup all-purpose flour
2 cups panko bread crumbs
1 teaspoon garlic powder

1/2 teaspoon pepper
Honey Mustard, recipe follows
1/2 cup Dijon mustard
1/2 cup honey
2 tablespoons mayonnaise
1 tablespoons lemon juice
Salt and pepper

Steps:

  • Preheat oil to 350 degrees F.
  • Cut the chicken breasts into long strips and set aside.
  • Beat the 3 eggs in a separate bowl and measure the flour into another separate dish.
  • Measure the panko into a pie plate or shallow bowl and season with garlic powder, lemon-pepper, cayenne, salt and pepper.
  • Dip the chicken strips into the flour, the beaten egg and then dredge them into the seasoned panko.
  • Fry in the hot peanut oil for 6 to 8 minutes, until golden brown, and remove to a paper towel lined sheet tray. Serve with Honey Mustard sauce.
  • Mix all the ingredients in a small bowl and season with salt and pepper. The sauce can be held in the refrigerator for 1 week.

¼ cup (30g) all purpose flour (I used gluten free)
½ teaspoon salt
½ teaspoon ground black pepper
1 ½ pounds (650g) chicken tenderloins (they're called mini chicken fillets in the UK)
4 tablespoons butter
3 cloves garlic (minced)
3 tablespoons honey
2 tablespoons soy sauce (tamari sauce for gluten free)
1 tablespoon apple cider vinegar ( or lemon juice)
½ teaspoon crushed red pepper flakes

Steps:

  • In a shallow dish combine the flour with salt and pepper. Dredge the chicken tenders in the flour mixture, and shake off any excess.
  • In a skillet, over medium-high heat, melt 2 tablespoons of butter, then work in 2 batches and cook the chicken tenders on both sides until a golden brown crust forms (2-3 minutes per side) the chicken is ready when the internal temperature reaches 165°F/74°C. Remove onto a plate. Melt the rest of the butter, and cook the remaining chicken tenders.
  • Deglaze the pan by adding about ¼ cup of water, and scrape off any bits stuck to the bottom of the pan. Allow the liquid to reduce.
  • Add garlic and cook for 30 seconds. Then add honey, soy sauce or tamari, vinegar, and red pepper flakes if using. Cook for 1-2 minutes so the sauce is heated up and starts to thicken, return the chicken to the pan, and flip it so it's all covered in sauce.
  • Garnish with chopped fresh parsley and serve over jasmine rice, noodles, or cauliflower rice.

Whenever I visit my family in Minnesota, I can't wait to get my hands on a bag of Dot's Homestyle Pretzels. They're coated in a top-secret seasoning mix that I crave! This recipe recreates the flavor of Dot's, using butter-flavored pretzels mixed with ranch seasoning, so now we can satisfy that craving year-round. The pretzel mix is the perfect coating for chicken fingers that are fried till crispy then served with a punchy-sweet dipping sauce.

1/3 cup yellow mustard
2 tablespoons Dijon mustard
3 tablespoons brown sugar
1/4 cup honey
1 teaspoon fresh lemon juice
3 cups plain or butter-flavored pretzels (about 6 1/2 ounces)
1 tablespoon ranch dressing mix or 1/2 teaspoon each onion powder and garlic powder
3 large eggs
Kosher salt and freshly ground black pepper
1 pound chicken tenders (7 to 8 pieces) or 1 pound boneless skinless chicken breast cut into 7 to 8 strips
1 cup all-purpose flour
Vegetable oil, for frying

Steps:

  • For the dipping sauce: Whisk together both mustards with the brown sugar, honey and lemon juice in a small bowl. Cover and set aside until ready to use.
  • For the chicken fingers: Pulse the pretzels in a food processor until finely ground but pea-sized bits remain. Transfer to a medium bowl and stir in the ranch dressing mix or onion powder and garlic powder and 1 teaspoon salt.
  • Beat the eggs with 1 teaspoon salt and a few grinds of black pepper in another medium bowl.
  • Whisk the flour with 1 tablespoon salt and a few grinds of black pepper in a third medium bowl.
  • Set a wire rack in a rimmed baking sheet. Dredge 1 chicken piece at a time in the seasoned flour, shaking off the excess, then dip into the egg to evenly coat, and finally evenly coat in the pretzel crumbs. Transfer to the prepared wire rack.
  • Heat 1/2 inch oil in a 12-inch cast-iron skillet over medium-high heat. Test the temperature of the oil by dropping a pinch of leftover flour in the oil. When it sizzles and rises to the top, the oil is ready for frying. Add half of the chicken to the skillet and fry until golden brown, flipping once, 1 1/2 to 2 minutes per side. Transfer with tongs to a paper towel-lined plate. Season with a sprinkle of salt. Repeat the frying process with the remaining chicken.
  • Serve the chicken fingers warm with the mustard dipping sauce.

1/2- 2 pounds chicken breast tenderloins
3/4 cup all-purpose flour
2 eggs (lightly beaten)
2 cups plain breadcrumbs
2 TBSP Milk
2 tsp salt (divided)
1 tsp pepper (divided)
1 tsp garlic powder
Olive Oil (enough to fry the homemade chicken tenders in)
Truffle Honey (at least a few TBSP)

Steps:

  • Preheat the oven to 400 degrees.
  • Season the flour with 1 tsp salt and 1/2 tsp pepper in one bowl and mix.
  • Add egg and milk to another bowl and lightly beat.
  • Place breadcrumbs in a third bowl and add 1 tsp salt, 1 tsp garlic powder and 1/2 tsp pepper and mix.
  • Dredge chicken tenderloin piece first in the flour making sure to shake off any excess.
  • Next dip the chicken piece in the egg mixture, allowing any extra to drip off.
  • Then fully coat the chicken in the breadcrumb mixture.
  • Put the coated chicken tenderloins in a single layer on a cookie sheet and put it in the refrigerator for 30 minutes.
  • Heat a few tablespoons of olive oil in a frying pan over medium.
  • Add several breaded chicken tenderloins to the pan and cook approximately 2 minutes on each side until golden brown. Don't crowd the pan. Cook the chicken in stages.
  • When the chicken is browned, put it on a clean baking sheet and bake in the oven for approximately 5 minutes, until the chicken is cooked through.
  • Add a few tablespoons into a small microwave-safe bowl and heat for about 15 seconds.
  • Plate the chicken, then drizzle the warm Truffle Honey over the homemade chicken tenders.

1/4 cup roughly chopped fresh thyme leave

1 tablespoon unsalted butter
1 tablespoon olive oil
2 shallots, roughly chopped
1 cup port wine
8 cups chicken stock
2 heads roasted garlic, cloves removed
Salt and freshly ground pepper
1 tablespoon butter
2 tablespoons white truffle oil
1 cup basil leaves, tightly packed
2 tablespoons pine nuts
2 cloves garlic
1/3 cup olive oil
2 tablespoons freshly grated Parmesan cheese

6 red potatoes, peeled, cut into chunks and cooked until soft
1/2 cup milk, scalded
3 tablespoons butter

Steps:

  • For the chicken: Combine the olive oil, garlic and herbs in a very large bowl. Add the chicken and coat with the marinade. Cover and refrigerate 2 hours or overnight. Preheat oven to 400 degrees. Truss the chickens and season to taste with salt and pepper. Brush with the marinade. In a hot skillet, sear the breast sides 3 to 5 minutes until golden. Place in the oven and roast for 10 minutes. Reduce the heat to 350 degrees and continue roasting, basting with the marinade and pan juices, until the chicken is cooked through and browned, about 30 minutes more. Remove from the oven and let rest.
  • For the sauce: In large saute pan, heat the butter and olive oil over high heat until almost smoking and saute the shallot until caramelized, about 3 minutes. Add the wine and reduce until almost dry. Add the stock and the roasted garlic and cook until reduced by half. Sprinkle with salt and pepper. Remove from the heat and strain into a saucepan. Whisk in the butter. Spoon over chicken and drizzle with truffle oil.
  • For the potato puree: Place basil, pine nuts and garlic and oil in a food processor and process until smooth. Add the cheese and salt and pepper to taste. Pass the warm cooked potatoes through a ricer into a large bowl. Add 1/4 cup of the herb puree, milk and butter. Mix until smooth, season with salt and pepper to taste.

The combination of honey and mustard has been around since ancient Egypt and Rome, and midcentury American cooks used it in any number of dishes, from baked chicken to glazed ham. But it wasn't until the 1970s and '80s, when restaurants started pairing the zesty sauce with breaded pieces of boneless chicken, that it became wildly popular. As a coating for chicken, honey mustard not only tastes great, but the acidity in the mustard helps keep the meat juicy. For hot honey mustard chicken tenders, add 1/2 teaspoon cayenne to the honey mustard. For an even quicker dinner, do steps 1 and 2 up to a day ahead. (Refrigerate the chicken and store the toasted panko at room temperature.) Eat the tenders dipped into barbecue sauce, hot sauce, ketchup, or - you guessed it - more honey mustard.

Kosher salt (such as Diamond Crystal)

  • Heat the oven to 450 degrees. Line a sheet pan with parchment paper or foil. Add the panko and oil to the sheet pan, season with 1/2 teaspoon salt, then stir with a fork until evenly moistened. Shake into an even layer. Toast in the oven, stirring with the fork halfway through, until golden brown, 3 to 5 minutes. Pick up the parchment and use it to funnel the toasted panko into a shallow bowl or pie plate. Set aside to cool. (Reserve the lined sheet pan.)
  • In a medium bowl, stir together the honey and mustard. Pat the chicken dry, then pound with a mallet or heavy skillet into an even thickness (about ⅓-inch thick). Slice lengthwise into 1-inch-thick strips. Cut any long strips in half crosswise. (If using chicken tenders, no need to pound or slice.) Season with salt and pepper, then add to the honey mustard and toss to combine.
  • Working with one strip at a time and removing dripping honey mustard, add the chicken to the panko mixture and use your fingers to pack the panko onto all sides of the chicken. (To avoid a big mess, designate one wet hand for touching the chicken and one dry hand for pressing in the panko.) Transfer to the lined sheet pan and repeat.
  • Transfer to the oven and bake, removing from the oven to flip halfway through, until the chicken is cooked through and the panko is browned, 10 to 15 minutes.

Steps:

  • Place honey in a double boiler with hot water in bottom. Shaved truffles into tiny pieces, then add to honey. Bring water to a boil, and bring honey to 185°F and keep at 185°F for 10 minutes. Remove from heat and let stand for 10 minutes. Place in sterilized jars and cap.

  • 2-If you don`t mind the appearance don`t strain.
  • 3-Or strain and add some back.
