- Heat oven to 400ºF.
- Cut apple lengthwise in half; remove cores, then cut apples crosswise into 1/4-inch-thick slices. Spread onto bottom of 8-inch square baking dish.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Season pork chops with salt, pepper, and garlic powder. Heat olive oil in a skillet over medium heat. Brown pork chops 3 to 4 minutes per side. Transfer to the prepared baking dish.
- Whisk honey, brown sugar, soy sauce, garlic, and butter together in a bowl and pour over the pork chops in the baking dish.
- Bake in the preheated oven for 25 minutes. Remove from oven and let pork chops sit in the baking dish 5 minutes more to soak up juices.
- Serve pork chops topped with extra sauce.

- In a saucepan over medium-high heat, heat the oil. Add the onion, reduce the heat to medium-low and cook until softened and just beginning to brown, about 10 minutes. Add the ketchup, vinegar, honey, adobo sauce and salt and stir to combine. Reduce the heat to low and cook, uncovered, for 15 minutes. Remove the pan from the heat. Spoon about 1/2 cup of the sauce into a small bowl; set aside. Cover the pan to keep the remaining sauce warm.
- Preheat the grill.
- Season the pork chops on both sides with salt and pepper to taste and lightly brush with oil. Place the chops on the hottest part of the grill and cook until browned. Turn the pork chops and brush the browned sides with sauce from the bowl. Cook the chops until the other side is brown, then turn and transfer to a cooler part of the grill and continue to cook, basting occasionally with the sauce, until cooked through, about 8 minutes, depending on the thickness of the chops.
- Serve the chops with some of the reserved warm sauce spooned over each chop.

- Trim excess fat from pork chops. Pat dry and season both sides with salt. Set aside.
- Mix red pepper flakes, garlic powder, onion powder, paprika, ½ tsp. cumin seeds, and 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt in a small bowl to combine. Heat honey in a small saucepan over medium just until warm. Remove pan from heat and stir in spice mixture. Set spiced honey aside.
- Toss peaches, red onion, jalapeño, lime juice, cilantro, remaining ½ tsp. cumin seeds, and remaining 2 tsp. Diamond Crystal or 1 tsp. Morton kosher salt in a medium bowl to combine. Chill peach pico de gallo until ready to serve.
- Prepare a grill for 2-zone heat (for a charcoal grill, bank two thirds of coals on one side of grill and scatter remaining coals on other side; for a gas grill, set one burner to high heat and remaining burners to medium-low); oil grate. Grill reserved chops on hotter side of grill, moving to cooler side as needed to control flare-ups, until lightly charred on both sides, about 3 minutes per side. - Combine the salt, black pepper, cayenne pepper and sugar together in a small bowl. If the chops have a thick edge of fat on them, score the fat 2 or 3 times around the edge of the pork chop so the chop stays flat while cooking. Generously season the pork chops on both sides with the spice mixture. Place the chops on a rack over a rimmed pan and refrigerate uncovered for 8 to 16 hours. Remove the pork chops from the fridge 1 hour before grilling.
- To make the Honey BBQ Sauce, combine the honey, ketchup, apple cider vinegar, soy sauce, Dijon mustard, onion and paprika in a medium saucepan. Bring the mixture to a boil, lower the heat and simmer for about 15 minutes.
- Pre-heat your outdoor grill, creating two different heat zones. One section of your grill should be high heat and the other section should be a little cooler, or more like medium heat.
- Brush the pork chops with a little olive oil. Place the pork chops on the hot zone of the grill for 3 minutes on each side to sear the outside of the chops. Then move the pork chops to the medium zone, brush with the honey BBQ sauce and continue to cook for an additional 4 to 8 minutes, depending on the thickness of the chops. Flip and brush again with sauce. The pork chops should reach a temperature of 150°F with an instant read thermometer.
