HONEY ROASTED FIGS WITH CINNAMON RECIPE
These Honey Roasted Figs make a simple yet delicious dessert, especially when paired with mascarpone or Greek yogurt or vanilla ice cream. The fresh figs are baked in the oven with butter, honey, cinnamon, pistachio, and a little lemon zest. They are tender, yielding and wonderfully fragrant. The perfect recipe for using up this season's fresh figs! And a wonderful summer dessert to serve to your friends and family.

Steps:
- Pre-heat the oven to 400ºF/200ºC
- Cut a cross in the top of each fig, ensuring that you don't go more than half way down the fig. Use your fingers to push the fig open like a flower (See note 2)
- Place the the figs in a baking dish and add around a teaspoon of butter to each fig.
- Drizzle over the honey ensuring some falls over and into each fig.
- Sprinkle over the cinnamon.
- Grate a little lemon zest over each fig.
- Sprinkle the pistachios around the figs.
- Roast for 7-10 minutes until the figs have softened and the butter has melted into the honey.
- Serve warm with your chosen creamy element.

Steps:
- Preheat the oven to 180 degrees celsius.
- With a sharp knife, cut figs into halves and place in a shallow oven-proof dish, skin side down.
- Smear the figs with softened butter, then drizzle about a teaspoon of runny honey over each half and pop this into the oven.
- Roast for about 15 mins or until the figs start looking a little squishy and release some juice.
- Mix some honey with the Greek yogurt and divide this into 6 bowls/plates.
- Top each bowl with 2 fig halves.
- Drizzle pan juices and more honey, if required.

- Heat honey in a medium skillet over medium heat. Cook figs, cut sides down, until caramelized, about 5 minutes.
- Serve over yogurt with cinnamon and pistachios. Drizzle with honey, if desired.

- Toast the nuts in a saute pan over medium heat until they become fragrant. Put the nuts onto a plate and set aside; when cool enough to handle, chop them roughly. In a small saucepan over medium heat, add the figs, dates, honey, water, lemon juice, and cinnamon stick. Cook for about 10 minutes until fruit is soft. Set aside and let it cool slightly; remove the cinnamon stick. Place the yogurt in a big bowl. Spoon the warm fruit onto the yogurt and gently swirl the fruit through the yogurt. Sprinkle on the nuts and garnish with mint leaves. Serve immediately.;

Steps:
- Use a sharp knife to mark an "X" on the top of each fig, being careful not to cut more than 3/4 of the way down the fruit.
- Spread open each fig 'blossom', to expose the pink center. Arrange the figs on a platter.
- Use a small spoon to fill each fig with marmalade, Greek yogurt, and honey. Dust with cinnamon.
- Finish with small chunks of herbed chevre, walnut pieces, and fresh mint sprigs. Serve immediately.
- Good with Carr's whole wheat crackers or baguette slices, for a more substantial snack.
- VARIATION: Substitute creme fraiche for the yogurt, mascarpone cheese with lemon zest for the herbed chevre, and green pistachios instead of walnuts. Drizzle with honey and dust with cinnamon -- yum!

- Preheat the oven to 180 degrees C/ 356 FGrease an oven-proof dish with a tablespoon of butter.
- Place the figs cut side up in the dish. Squeeze a little lemon juice over the figs. Sprinkle the rosemary over the figs then drizzle the honey over all the figs. Make sure all the figs are covered in the honey.
- Place the dish in the top or middle shelf and bake for 15 - 20 minutes, depending on the size of your figs, larger fig will take longer. The figs, when done, will be soft and jammy.
- Serve immediately with Greek yoghurt, chopped walnuts and a spoon of the juice from the dish.I also add a drizzle of honey and a couple of mint leaves but that's completely optional.
