This is a fine textured bread if the oatmeal is allowed to soak for the full hour.

2 cups boiling water
1 cup rolled oats
½ cup honey
2 tablespoons butter
2 teaspoons salt
1 (.25 ounce) package active dry yeast
½ cup warm water (110 degrees F/45 degrees C)
4 cups bread flour
2 tablespoons honey, warmed slightly
2 tablespoons rolled oats

Steps:

  • In a large mixing bowl, combine boiling water, oats, 1/2 cup honey, butter and salt. Let stand for 1 hour.
  • In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
  • Pour the yeast mixture into the oat mixture. Add 2 cups of flour; mix well. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 20 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • Deflate the dough and turn it out onto a lightly floured surface. Divide the dough into two equal pieces and form into loaves. Place the loaves into two lightly greased 9x5 inch loaf pans. Cover the loaves with a damp cloth and let rise until doubled in volume, about 40 minutes.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven for about 30 minutes or until the top is golden brown and the bottom of the loaf sounds hollow when tapped. Remove loaves from pans, brush tops of loaves with 2 tablespoons honey and sprinkle with oats.

  • Select Light Crust or Basic setting, and press Start.

2 tb Butter softened
1 Egg white; slightly beaten
1 ts Salt;
1/4 c Honey;
2 tb Dijon mustard;
1/2 c Quick cooking oats
1 c Very warm water;
1 lg Egg;
3 c All purpose or bread flour
1 tb Water;
1 pk Active dry yeast;

Steps:

  • 1. Mix 1 1/2 cups of the flour, 1/2 cup oats, the salt, honey, mustard, margarine and yeast in large bowl. Add 1cup warm water. Beat with electric mixer on low speed 1 minute, scraping bowl frequently. Beat in egg. Stir in enough remaining flour, 1/2 cup at a time, to make dough easy to handle. 2. Turn dough onto lightly floured surface. Knead about 10 minutes or until smooth and elastic. Place in greased bowl and turn greased side up. Cover and let rise in warm place about 1 hour or until double. Dough is ready if indentation remains when touched. 3. Grease bottom and side of pie plate, 9 x 1 1/4 inches, with shortening. 4. Punch down dough. Shape dough into a ball. Place in pie plate; flatten slightly. Mix egg white and 1 tablespoon of water; brush on loaf. Sprinkle with oats. Cover and let rise in warm place 45-60 minutes or until double. 5. Heat oven to 375 degrees. 6. Bake about 35 minutes or until loaf sounds hollow when tapped and is deep golden brown. Remove from pan to wire rack; cool. **if using self rising flour omit salt. Serving Ideas: This makes a great sandwich with ham! This recipe has been handed down for four generations. Whenever I make this, it takes me back to when I was a young girl on Grandpa's farm. We loved to toast it and smother it with honey.

Number Of Ingredients 10

2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
1-1/2 cups boiling water
1/2 cup shortening
1/2 cup honey
1 cup quick-cooking oats
2 eggs
1 tablespoon salt
6 to 7 cups all-purpose flour
1 tablespoon butter, melted

Steps:

  • In a large bowl, dissolve yeast in warm water; set aside. In another bowl, stir boiling water and shortening until shortening is melted. Add honey; cool to 110°-115°. Add the oats, eggs, salt, shortening mixture and 3 cups flour to yeast mixture. Beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface; divide in half. Shape each portion into a loaf. Place in two greased 9x5-in. loaf pans. Prick tops with a fork. Brush with butter. Cover and let rise until doubled, about 40 minutes., Bake at 350° for 30-35 minutes or until golden brown. Remove from pans to cool on wire racks.
