found this recipe online; wanted to save it on Food.com for future dinner ideas. Chicken thighs are a staple at my house, and we're currently in a rut when in comes to preparation.

Number Of Ingredients 11

4 -5 bone in skin on chicken thighs
2 cups baby potatoes, halved. Any variety
1 tablespoon olive oil
1 tablespoon dried rosemary and salt & pepper for potato seasoning (to taste)
3 tablespoons Dijon mustard
3 tablespoons whole grain mustard
4 tablespoons honey
2 -3 tablespoons chicken stock or 2 -3 tablespoons broth
3 -4 sprigs fresh rosemary, with a few extra for a garnish
1 tablespoon olive oil
1 tablespoon whole grain mustard

Steps:

  • Preheat oven to 400.
  • Combine Mustard Rub ingredients in a small bowl then use fingers to massage and coat chicken rubbing both sides and under skin.
  • Whisk together the Honey Mustard sauce; Dijon and whole grain mustard, honey and chicken stock. Set aside.
  • Heat olive oil in an oven proof skillet over med/high heat. Add chicken, skin side down, and sear both sides for 2 to 3 minutes until golden brown.
  • Remove chicken from skillet and set aside.
  • Place potatoes in skillet and sprinkle with salt, pepper and dried rosemary.
  • Bake seasoned potatoes( in same skillet) for 18-20 minutes until easily pierced with a fork.
  • Remove skillet from oven, and add chicken back to skillet to combine with potatoes.
  • Drizzle honey mustard sauce over the the thighs. Be generous! Add fresh rosemary sprigs.
  • Place skillet back in oven and roast for 25-30 minutes until chicken is completely cooked through with internal temp of 175 degrees F.
  • Remove from oven, garnish with rosemary sprigs and serve.

2 tablespoons vegetable oil
1/2 red onion, chopped
1/4 cup apple cider vinegar
1/4 cup brown sugar, a couple of handfuls
1 cup chicken stock
1/2 cup prepared honey mustard (recommended: Honey Cup brand)
1/2 teaspoon allspice, eyeball it
1/2 teaspoon curry powder, eyeball it
4 pieces boneless, skinless chicken breast
4 boneless, skinless chicken thighs
Vegetable oil, for drizzling
Salt and freshly ground black pepper

Steps:

  • Preheat grill pan or griddle over medium high heat.
  • Pour 2 tablespoons vegetable oil into a small saucepan over moderate heat. Add red onions and saute 3 to 5 minutes. Add vinegar and reduce by half, 1 to 2 minutes. Add brown sugar and cook 1 minute to incorporate. Whisk in broth and honey mustard, allspice and curry. Bring sauce to a bubble and reduce heat to lowest setting.
  • Coat chicken with a drizzle of oil and salt and pepper, to your taste. Place chicken on hot grill and cook 4 or 5 minutes, then turn. Baste chicken liberally with sauce and cook another 5 minutes. Turn once again and baste. Cook 2 or 3 minutes more to cook through and transfer chicken to a platter and serve.

3 tablespoons Dijon mustard
3 tablespoons whole-grain mustard

Steps:

  • For the marinade: Combine the honey, Dijon mustard, whole-grain mustard and 1/2 teaspoon salt in a large resealable plastic bag. Add 4 boneless skinless chicken breasts or 8 boneless skinless thighs (about 1 1/2 pounds), squeeze out the air, seal tightly and massage gently to coat the chicken with marinade. Refrigerate for 2 hours or freeze up to 1 month; defrost in the refrigerator overnight before cooking.
  • To cook: Transfer the chicken from the bag to a 9-by-13-inch baking dish and cover with foil. Roast in a 425-degree F oven for 10 minutes. Uncover and continue cooking until cooked through and an instant-read thermometer registers 165 degrees F, 10 to 15 minutes more.

1/2 cup olive oil
1/4 cup calivirgin balsamic vinegar
1 tablespoon tessesmae's honey mustard
1 tablespoon fresh rosemary, chopped

Steps:

  • In a bowl whisk together the olive oil, balsamic vinegar, honey mustard, rosemary, garlic, salt and pepper.
  • Add the chicken to a shallow dish and pour the marinade over mixing until the chicken is well coated and refrigerate for about an hour.
  • Preheat grill to medium high.

4 chicken thighs
4 chicken drumsticks
2 tablespoons butter
1/2 cup honey
1/2 cup sweet-hot mustard
1 teaspoon salt
1 tablespoon curry powder

Steps:

  • Brown chicken in skillet and transfer to slow cooker.
  • Melt butter is a small saucepan. Remove from heat and add all other ingredients, stirring well. Pour over chicken.
  • Cook on LOW for 4 to 6 hours. Serve with rice.
  • Note1: You can also use one whole chicken cut up into serving pieces. If using just breasts, watch for drying out - fortunately there is a lot of sauce.
  • Note2: Dijon mustard is good in this, instead of sweet and hot mustard.
  • Note3: This recipe works well without browning the chicken, although I prefer to brown it. You can use skinless.

8 large bone-in chicken thighs
2 medium sweet onion,peeled and chopped
2 garlic cloves,minced
2 c honey mustard,divided
1 c heavy cream
1 packet dry onion soup mix
2 Tbsp red pepper flakes
2 tsp sea salt/black pepper

Steps:

  • 1. Heat olive oil in large skillet over medium heat;cook chicken thighs in the hot oil until browned,about 5 minutes per side.Remove chicken thighs from the skillet.Transfer to a large bowl and set aside.
  • 2. Cook and stir chopped onion in the same skillet until softened,about 5 minutes
  • 3. Stir in garlic;cook and stir until fragrant,about 1 minute.
  • 4. Stir in 1 cup honey mustard,heavy cream,dry onion soup mix,red pepper flakes and sea salt/black pepper until thoroughly combined.

6 skinless chicken thighs
1/4 teaspoon salt
1/4 teaspoon pepper
2 teaspoons olive oil
1/4 cup shallot, minced
1 tablespoon fresh thyme, minced (or 1 tsp dried)
1/4 cup red wine (or grape juice)
3/4 cup balsamic vinegar
1/4 cup chicken broth
1/4 cup honey
1 bay leaf

Steps:

  • Preheat oven to 350*. Season chicken with salt and pepper, and heat olive oil in a dutch oven over med-high heat. Sear chicken thouroughly on all sides until it is a deep, golden color, about 3-5 minutes per side. Transfer chicken to plate.
  • Add shallots and thyme to the pot, and saute until soft and golden. Pour wine into pan, and scrape up any bits left from the chicken. Cook 1-2 minutes, until nearly all liquid has evaporated.
  • Add vinegar, broth, honey, bay leaf, and chicken to the pot, and bring to a simmer. Cover tightly and transfer to oven.
  • Cook 30 minutes, turning once, until chicken is cooked through and is a deep, mahogany brown.
  • Remove chicken and bay leaf from pot and skim any fat from sauce. Cook sauce uncovered until reduced by half. Add chicken back to pan, spoon sauce over top, and cook for 2 minutes to reheat.

This is a wonderful chicken recipe. It calls for all fresh herbs, but I often use the dried ones. I just use a little less. I love it with brown rice with cranberries and a salad.

1 (3 1/2 lb) chicken, cut up into pieces
3 tablespoons olive oil
2 tablespoons thyme, minced
3 teaspoons marjoram, minced
1 1/2 teaspoons dry mustard
1 tablespoon garlic, minced
1 medium onion, finely chopped
2 tablespoons garlic, minced
1 cup dry white wine
1 cup chicken broth
6 tablespoons Dijon mustard

Steps:

  • Mix together - 1 T oil, 1T thyme, 1-1/2 t marjoram, 1-12 dry mustard. Rub on chicken pieces. Refrigerate chicken for 2 hours to overnight.
