HONEY BRAN MUFFINS
These muffins are made with bran cereal, and sweetened with pineapple juice, brown sugar, and honey. The recipe requires the batter to be refrigerated for at least 3 hours. It can be made the night before, and then baked in the morning. Makes 20 regular muffins, or 12 jumbo muffins.

Steps:
- In a small bowl, combine pineapple juice and raisins. Set aside.
- In a medium bowl, combine flour, baking soda and salt. Stir in cereal. Set aside.
- In a large mixing bowl, combine brown sugar, oil, honey, and eggs; mix well. Add cereal mixture, and mix well. Fold in the raisin mixture. Batter will be thin; it will thicken as it chills. Cover, and refrigerate for at least 3 hours or overnight.
- Stir chilled batter. Fill greased or paper lined muffin cups 3/4 full.
- Bake in a preheated 400 degree F (205 degree C) oven, for 20 to 25 minutes. Cool in pan 10 minutes before removing to a wire rack.

Steps:
- Prepare your muffin tin with non-stick cooking spray.
- Preheat oven to 350F.
- In a large bowl, combine flour, baking powder, baking soda, salt, 1 cup of coconut, and sugar. Stir to mix well.
- In a medium bowl, whisk eggs with a fork. Add milk to the egg mixture and whisk to combine.
- Pour egg & milk mixture into dry ingredients and stir until well mixed.
- Stir in pineapple.
- Pour into 12 muffin tins.
- Sprinkle the other 1/2 cup coconut evenly over the top of each unbaked muffin.
- Bake 20 minutes or until done.
- Let cool in the pan for 10 minutes then remove from tin to cool on a cooling rack.
- Store in a sealed container in the fridge.

PINEAPPLE HONEY-GLAZED HAM
Ham dressed in pineapple rings and maraschino cherries is a holiday classic, burnished with a glossy glaze made with pineapple juice, honey and brown sugar. If you like sweet and salty, you'll love this show-stopping centerpiece!

- Let the ham sit at room temperature for about 30 minutes.
- Preheat the oven to 325 degrees F.
- Trim off any skin from the ham. Use a sharp paring knife to score through the fat in a diagonal crosshatch pattern without cutting through to the meat. Push the cloves into the ham, if using, placing them at the intersections of the cuts. Put the ham, flat-side down, on a rack in a roasting pan.
- Drain the pineapples, reserving the juice. Arrange the sliced pineapple all over the ham, securing with toothpicks. Add a maraschino cherry to the center of each pineapple slice and secure with a toothpick.
- Pour 1/4 inch water in the bottom of the pan and tent the ham with foil.
- Roast until an instant-read thermometer inserted in the thickest part of the ham (avoiding bone) registers 130 degrees F, about 2 hours 30 minutes (or about 15 minutes per pound).
- Meanwhile, combine the honey, brown sugar and reserved pineapple juice in a large saucepan set over medium heat. Simmer, stirring occasionally, until thickened, syrupy and reduced to about 3 cups, 25 to 30 minutes. Set aside.
- Increase the oven temperature to 425 degrees F.
- Uncover the pan and carefully brush a third of the glaze all over the ham. If the water in the roasting pan has evaporated, add more. Bake the ham for 15 minutes more. Brush with another third of the glaze and bake for 15 minutes more. Brush the remaining glaze over the ham and cook until the glaze is shiny and the skin is dark golden brown and crispy, about 15 minutes more. Let rest for 15 minutes.
CLOSE TO MIMI'S HONEY BRAN MUFFINS
I have been trying to find a recipe that would be close to the muffins at Mimi's restaurant. This one is the closest I have found and they ARE yummy. Found at Cooks.com. If you don't have buttermilk, just put two teaspoons apple cider vinegar in two cups regular milk and let stand for 15 minutes.

- GLAZE.
- Cream butter with sugars until light and fluffy.
- Beat in honey and water.
- Using a brush, coat bottom and sides of muffin tins.
- MUFFINS.
- Mix fruit, honey and oil until smooth.
- Beat in eggs, then buttermilk and bran.
- Sift flour, baking soda and salt together.
- Add to mixture and beat until just combined.
- Fill tins 3/4 full.
- Bake for 20 - 25 minutes until springy to the touch.
- Cool for 2 minutes then invert on rack to cool completely.

- In a baking dish, mix together the honey, lime juice, and cinnamon. Place the pineapple slices in the glaze and let marinate 2 hours, turning occasionally.
- Preheat a grill pan over medium heat.
- Place the pineapple slices on the preheated grill. Grill on both sides until the glaze caramelizes and grill marks form, about 2 minutes per side.

HONEY-GLAZED PINEAPPLE

- Using a large serrated knife, cut off top and bottom of the pineapple, just deep enough to expose the flesh. Stand pineapple on one end on a cutting board; begin cutting away the skin, from top to bottom, rotating pineapple on board until all skin is removed.
- Cut pineapple crosswise into 1/2 to 3/4-inch thick slices. Using a small biscuit cutter, core each slice and discard. Transfer to a shallow baking dish.
- In small bowl, combine honey and lime juice. Using a pastry brush, coat both sides of pineapple with mixture. Cover with plastic wrap, and let stand at room temperature for at least 1 and up to 8 hours.
- Preheat grill to medium. Sprinkle brown sugar evenly over slices. Grill 3 minutes, until golden brown. Garnish with mint leaves; serve hot or at room temperature with ice cream, if desired.
