This honey cake is a great dessert for dinners surrounding the Jewish holiday of Rosh Hashanah, but also just for a tasty honey cake any time you want one.

3 ½ cups sifted all-purpose flour
¼ teaspoon salt
1 ½ teaspoons baking powder
1 teaspoon baking soda
2 teaspoons ground cinnamon
1 ½ teaspoons ground allspice
4 eggs
¾ cup white sugar
4 tablespoons vegetable oil
2 cups honey
½ cup strong brewed coffee
½ cup blanched slivered almonds
½ cup raisins
2 tablespoons slivered almonds for topping
1 ½ cups honey
2 tablespoons lemon juice
½ cup water
½ teaspoon lemon zest

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Oil two loaf pans and line bottoms with parchment paper; grease the parchment as well.
  • Sift together the flour, salt, baking powder, baking soda, cinnamon and allspice. In a separate bowl, beat the eggs, gradually adding the sugar. Beat until thick and light in color, about 5 minutes. Beat in the oil, honey and coffee. Stir flour mixture into egg mixture. Chop the almonds coarsely and mix with raisins; stir into batter.
  • Divide batter between the two prepared loaf pans. Sprinkle with reserved slivered almonds.
  • Bake in preheated oven until a tester inserted in the center of each cake comes out clean, 65 to 75 minutes. Let cool 10 minutes and remove from pan.
  • To Make Glaze: combine 1 1/2 cups honey, lemon juice, lemon zest and water in a saucepan. Bring to a boil over medium-high heat. When glaze reaches a thick consistency, remove from heat and drizzle over warm cake.

1 (18.25 ounce) package yellow cake mix
1 cup sour cream
4 eggs
⅔ cup vegetable oil
1 cup brown sugar
3 ½ teaspoons ground cinnamon
3 cups confectioners' sugar
¾ cup milk
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly oil a 9x13-inch baking pan.
  • Combine cake mix, sour cream, eggs, and oil in a bowl. Beat with an electric mixer for 3 minutes. Pour half of the batter into the prepared baking pan.
  • Mix brown sugar and cinnamon together in a small bowl. Sprinkle over batter in the pan. Carefully pour the remainder of the batter over the cinnamon-sugar layer.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 45 to 50 minutes.
  • Mix confectioners' sugar, milk, and vanilla together in a bowl. Poke holes in the hot cake with a fork and pour sugar mixture over the top of the cake. Let cake cool completely before serving, about 30 minutes.

1 ½ cups egg whites
½ teaspoon salt
1 ¾ teaspoons cream of tartar
½ cup honey
1 cup sifted cake flour
1 cup white sugar
1 teaspoon vanilla extract

Steps:

  • Place a 10-inch tube pan in the oven. Preheat oven to 425 degrees F (220 degrees C).
  • Beat egg whites with salt in a glass or metal bowl until foamy. Add cream of tartar and continue to beat until egg whites stand in peaks. Gradually add honey while beating continually to integrate until stiff peaks form. Lift your beater or whisk straight up: the egg whites will form sharp peaks.
  • Sift flour and white sugar together. Add 1/3 of the flour mixture into the egg whites and fold gently with a spoon to integrate; repeat in two more additions of the flour mixture to completely incorporate. Stir vanilla into the batter.
  • Remove hot tube pan from the preheated oven. Pour the batter into the hot pan. Thump pan several times on a flat surface to break air bubbles in batter.
  • Bake in the preheated oven until golden and the top springs back when lightly pressed, 22 to 25 minutes. Cool cake in pan on a wire pastry rack for at least 2 hours. Run a long, thin metal spatula or knife around edge of pan to loosen cake from pan.

1 (8 ounce) container sour cream

  • To Make the frosting: In a small bowl, whisk together the confectioner's sugar, milk and vanilla until smooth.

I've tried many many honey cake recipes, and this is my favorite, both for depth of flavor and ease of production. It's basically a one-bowl cake, freezes very very well, and can be made in a variety of sizes. I got this from Amit Women's cookbook (Efrat chapter, Chicago), and can barely read the page because of all the spills on it. Even my mom, an extraordinary baker, has begun to use this recipe instead of her own. A perfect Rosh Hashana/Sukkot treat!

1 cup honey
1 cup applesauce
3 eggs
1 teaspoon cinnamon
1/2 teaspoon clove
1/2 teaspoon nutmeg
2 cups flour (Can replace one cup of white flour with one cup of wheat flour)
1/2 teaspoon baking powder
1 teaspoon baking soda
1 cup strong brewed decaffeinated coffee (can be made from instant)

Steps:

  • In a large bowl, mix together the first 3 ingredients.
  • In a separate bowl, combine the flour, baking powder, spices and baking soda.
  • Add the flour mixture to the wet stuff, alternating with the coffee; beat well.
  • Put into one greased 9"x13" pan (or, alternatively, three 8" square pans).
  • Bake at 325F--60-90 minutes for the large pan, 60 minutes for the three smaller pans.

I found this recipe back in my early days as a baker and it has become a staple in my repetoire. It is a very moist cake and the best garnish for it is a simple dusting of icing sugar.

1 cup honey, boiled and brought to room temperature
1/2 cup butter
1 cup brown sugar
4 eggs, separated
3 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1 cup sour cream
1 cup walnuts, chopped

Steps:

  • Cream the butter and sugar.
  • Add the egg yolks, one at a time.
  • Beat until light and fluffy.
  • Beat in the honey.
  • Sift the flour with the other dry ingredients; add in alternately with the sour cream.
  • Stir in the walnuts.
  • Beat the egg whites until stiff and fold them into the batter.
  • Bake in a greased tube pan at 325 degrees F for 50 to 55 minutes, or until done.
  • Lower the heat to 300 degrees F in the final stages of baking to prevent the honey from burning.

  • Preheat oven to 325F degrees.
  • Grease a 10" springform pan.

  • Stir only enough to mix thoroughly.
  • Pour into prepared pan and sprinkle top with the chopped nuts.
  • Bake for 1 hour and 15 minutes or until top springs back when touched.

1/4 cup honey, a light honey
1 cup granulated sugar
1/3 cup brown sugar, packed
1/2 cup orange marmalade
4 eggs
3 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 tablespoon baking powder
2 teaspoons ground cinnamon
1 teaspoon ground cloves
1/4 teaspoon ground allspice
1 cup tea, brewed (just warm)
1/3 cup almonds, slivered
1/4 cup powdered sugar
1 orange, zest of, shredded

Steps:

  • Preheat oven to 350 degrees F & grease ONLY the bottom of a 10-inch tube pan, then line the bottom of the pan with parchment paper.
  • In a medium bowl, combine oil, honey, both sugars & marmalade, blending well, then add the eggs.
  • In a larger bowl, whisk together the flour, salt, baking soda, baking powder, cinnamon, cloves & allspice, then make a well in the center of this flour mixture & add the wet ingredients AND the brewed tea. Blend well, either by hand or with an electric mixer on slow speed, making a smooth loose batter.
  • Pour the batter into the prepared pan, then sprinkle the top with the almonds.
  • Place the pan of batter on TWO stacked baking sheets (to prevent bottom from browning too fast) & bake 55-60 minutes or until the top of the cake springs back when pressed lightly with a fingertip.
  • Cool in the pan for 15 minutes, then remove & let cool on a wire rack.
  • Before serving, dust with powdered sugar & sprinkle with a bit of shredded orange zest.
