Steps:
- Prepare the tine firstly, by lining the base of a 19cm x 29cm slice pan with baking paper.
- Place butter, sugar and honey in a pan and heat slowly until butter melts. (I use the microwave for this).
- Add the Rice Bubbles, coconut and choc bits and mix well.
- Press into the prepared pan and refrigerate until slice is firm.
- Cover with chocoalte icing, when icing is set, slice and serve.

CHOCOLATE HONEYCOMB

Steps:
- Butter a 20cm square tin. Mix the sugar and golden syrup in a deep saucepan over a gentle heat until the sugar has melted. Try not to let the mixture bubble until the sugar has completely dissolved.
- Turn up the heat a little and simmer until you have an amber coloured caramel (this won't take long). To test if it's ready, turn off the heat and drop a little into a glass of very cold water. If it forms a hard ball, it's ready. If not, turn the heat back on and cook a little more. Then, as quickly as you can, turn off the heat, tip in the bicarb and beat with a wooden spoon until it's disappeared and the mixture is foaming. Scrape into the tin immediately - be careful, the mixture will be very hot.
- Leave the honeycomb in the tin for 1 hr-1 hr 30 mins until hard (it will continue to bubble).
- Line a baking sheet with parchment paper. Melt the chocolate in a small heatproof bowl over a pan of just simmering water.
- Snap the honeycomb into chunks and dip half of each piece into the chocolate. Drizzle with any remaining chocolate and a pinch of sea salt, if you like. Leave to set in the fridge for 1 hr.

- Combine almonds, honey, butter, and salt in a 10-inch sauté pan over medium heat. Stirring constantly, cook until almonds and honey begin to turn an amber color. Remove from heat and stir in corn flakes.
- Pour out onto a parchment lined baking sheet and allow to cool 5 to 10 minutes. Store in an air-tight container for 3-4 days.

- Be sure to scrape the sides occasionally so the sugar does not burn. Stir constantly to ensure it does not stick at the bottom until it begins to boil then with occasional stirring allow to boil for approx. 4 minutes. You will notice the colour and smell begins to change and the consistency becomes slightly sticky.
- Remove from the heat and add the Rice Bubbles and mix well. Pour mixture into a lined 20 x 20 slice pan and set aside or pop in fridge to cool.
- Once almost cooled remove from pan and slice into desired size pieces. Alternatively use cupcake cases and spoon the mixture into them and set aside to cool - if you use a second spoon to scrape off the mixture you will save burnt fingers!
