PAN FRIED HONEY BANANAS
These Pan Fried Bananas are caramelized in honey and cinnamon for a simple and delicious treat!

Steps:
- Remove the peels from the bananas and slice them 1/2" inch thick.
- Set a nonstick skillet over medium to medium high heat** and add the oil or butter, honey, cinnamon, and salt. Stir to combine.
- Add the banana slices, and fry for 2-3 minutes on each side, until golden and caramelized. Be sure to watch the heat and turn it down if it browns too quickly. You want enough heat to caramelize and brown the slices, but you don't want them to burn.
- Once the bananas are cooked you can enjoy them as is, or with marshmallow creme and peanut butter in a sandwich, with Bananas Foster French Toast, in oatmeal or yogurt, over ice cream, and more. Enjoy!

- In an 8- or 9-in. cast-iron or other ovenproof skillet, melt butter over medium-low heat. Stir in brown sugar, orange juice, cinnamon and nutmeg until blended. Add bananas and pecans; cook until bananas are glazed and slightly softened, 2-3 minutes, stirring gently., Remove from heat; stir in extract. Serve with ice cream.

BREAKFAST BANANA SUNDAES
Brown sugar-glazed walnuts and granola top this spectacular yogurt sundae.

- In 8-inch skillet, melt butter over medium heat. Add 1/4 cup walnuts and the brown sugar; stir until sugar is melted. Add bananas; cook 1 to 2 minutes, stirring gently, until bananas are coated.
- Stir in orange juice and rum extract. Cook an additional minute or until liquid is thick and syrupy. Remove from heat. Reserve 4 banana slices for garnish.
- For each serving, spoon about 1/3 cup remaining banana mixture into each 10-oz dessert bowl. Leaving granola bars in wrappers, break apart into granola-like pieces; reserve 2 tbsp granola for garnish. Sprinkle remaining chopped granola over banana mixture, dividing evenly. Spoon 1/2 cup yogurt over granola.
- Garnish each serving with 1 teaspoon walnuts, 2 teaspoons chopped granola and 1 reserved banana slice. Serve immediately.

- In a bowl, mix wafer crumbs, melted butter and sugar; press onto bottom of a 13x9-in. dish. Freeze 15 minutes., Spread chocolate chip ice cream over crust. Layer with bananas and 1-1/2 jars fudge topping (about 1-1/2 cups). Freeze, covered, at least 30 minutes., Spread strawberry or cherry ice cream over top. Freeze, covered, 6 hours or overnight., Remove from freezer 10 minutes before cutting. Warm remaining fudge topping; drizzle over top. Serve with toppings as desired.

- In a small bowl, combine rum, honey and cinnamon; set aside. Cut bananas in half lengthwise, leaving the peel on. , Place bananas cut side down on grill. I created this recipe one day out of desperation. We had invited guests for dinner, and about a half hour before they were due to arrive, I realized I had forgotten all about preparing a dessert! HONEY-NUT BANANA SUNDAES

- 1. Combine honey, lemon juice and cinammon in a medium skillet. Stir over medium heat until honey begins to bubble. Reduce heat and cook, stirring frequently. 5 minutes, Remove from heat. Add banana slices and stir gently to coat evenly. 2. Place one scoop of ice cream in each bowl. 3. Top with equal amounts of the banana and honey mixture and sprinkle with nuts.
