Steps:
- Preheat the oven to 450 degrees F. Set a wire rack on a rimmed baking sheet. Put the drumsticks on the rack and season both sides generously with salt and pepper. Bake 30 minutes; flip the drumsticks and continue baking until golden and crisp, about 30 more minutes.
- Meanwhile, make the sauce: Bring the apple juice, vinegar, soy sauce, honey, lemon zest, red pepper flakes and a pinch of salt to a high simmer in a large skillet over medium-high heat. Cook until the sauce is syrupy and coats the back of a spoon, 20 to 25 minutes. Set aside until the chicken is done.
- Stir the sesame seeds into the sauce, if using, and warm over medium heat, if necessary. Transfer the chicken to a large bowl. Add the sauce and butter and toss to coat. Season with salt and pepper. Transfer the chicken to a platter and drizzle with any remaining sauce from the bowl.

Just an experiment for a glaze to pour over smoked mahi mahi fillets. These measurements are approximate. Apparently it was suitable since dinner was very quiet the first time I made it. Big hit at my house.

HONEY OATMEAL APPLE CRISP
My husband and I decided to make a lifestyle change which included eliminating sugar, white flour, processed foods etc., from our diet. I created this delicious and simple recipe to satisfy an occasional sweet tooth, also this dessert is ideal to serve to children as it is only sweetened with honey. If using organic apples you may choose to leave the peels on, also depending on the sweetness of the apples you use you may choose to decrease the amount of honey. To make a virtually fat free version, you can also eliminate the butter in the topping, I have tried this both ways and find that it turns out almost the same. I hope you enjoy!

APPLE TOPPING FOR PANCAKES, WAFFLES & SUCH
A cinnamon-y fruit topping that tastes great over pancakes, waffles, oatmeal, etc. From the Black Dog Inn B&B in Estes Park, Colorado. Mix and match different kinds of apples for a more robust flavor. Also good with a few raisins or dried cranberries thrown in; just make sure to add a little more water or juice to allow them to plump up enough.

- Maple Syrup. So the question is, can you use maple syrup as a substitute for honey? Yes, you can use maple syrup as a substitute for honey in recipes where baking and cooking is required.
- Coconut Nectar. Coconut Nectar is a natural sweetener derived from the flowers of the coconut tree. It can easily be used as a substitute for honey in recipes where cooking is not involved, such as granola bars.
- Apple Sauce. Yes, applesauce is one of the most astonishing alternatives for honey. However, it cannot be used as a substitute for honey in recipes where cooking and baking are not involved.
- Molasses. Molasses is the byproduct of the process of refining sugar. It is a sticky syrup that is generally used as a sweetener. Yes, molasses can, therefore, be a good honey substitute, as its consistency and sweetness match a lot to that of honey.
- Yacon Root Syrup. Yacon root syrup is a sticky, honey-like, natural sweetener. Extracted from the roots of a yacon plant, it can work amazingly well as a honey substitute.
- Sugar. Well, yes, you can use sugar as a substitute for honey. Though they both have different states, one is liquid while the other is granules, but they can very well provide the same results, especially in terms of sweetness.
- Date Paste. One of my favorite alternatives for honey is none other than date paste. Like most alternatives, this, too, is vegan and tastes amazing. It isn’t as common, though, especially in the form of paste/syrup.
- Ripened Bananas. If you are finding an alternative for honey in recipes, because you want to cut down on processed sugars yet enjoy your meals, ripened bananas are the way to go.
- Jaggery. In layman’s terms, jaggery is a mix of sugar and molasses. It is attained by heating clear sugar cane or palm tree juice to the point that the water has evaporated and you are left with a golden pasty liquid.
- Agave Nectar. Agave nectar, also known as agave syrup, is extracted from different types of cacti plants, which are called agave. The honey water from under the cacti plant is collected and heated until it turns into a nice sticky syrup, which makes it an easy substitute for honey.
