4 egg whites, large
2/3 cup sugar
4 egg yolks, large
7/8 cup scant all-purpose flour
1/2 teaspoon baking powder

Steps:

  • Preheat oven to 400 degrees.
  • Line two 17-inch-by-l2-by-r-inch baking sheets with baking parchment.
  • Fit large pastry bag with a plain 1/2 inch round tube.
  • Place egg whites in bowl of electric mixer and whip until soft peaks start to form.
  • Slowly add 2 tablespoons of the sugar and continue to beat until stiff and glossy.
  • Transfer to another bowl.
  • Add yolks to mixer bowl and stir in remaining sugar.
  • Whip until thick and very pale in color and remove bowl from stand.
  • Sift flour and baking powder together onto a sheet of wax paper.
  • Fold half the egg whites into the egg yolk mixture.
  • Fold in the flour, and then fold in the remaining egg whites.
  • Transfer mixture to pastry bag and pipe out onto prepared baking sheet.
  • Bake for 8 minutes.

2 cinnamon sticks
12 ladyfingers

Steps:

  • Boil sugar, water, and cinnamon together about 10 minutes.
  • Arrange ladyfingers in shallow dish.
  • Pour syrup over and let stand for at least 5 minutes before serving.
  • Serve hot.
  • Makes 4 to 6 servings.

1 cup shredded queso duro (Honduran queso)
6 flour tortillas
1 (15 ounce) can refried beans
2 tablespoons butter or 2 tablespoons margarine

Steps:

  • Butter the tortillas to your taste.

  • Sprinkle queso duro on top. (you'll have to grate it).
  • Microwave for 20 seconds.
  • Fold your tortillas in half and enjoy!

2 cups sugar
3/4 cup butter, softened
2 egg yolks
2 cups flour
1/4 teaspoon baking soda
3/4 cup water
3/4 teaspoon pure vanilla extract
2 -3 whole cloves

Steps:

  • Preheat oven to 350 degrees.
  • In mixer, cream together butter and one cup of the sugar until fully incorporated. Add egg yolks, one at a time, until mixture is smooth. Stir in flour and baking soda a little at a time until a soft dough forms.
  • On a lightly floured surface, roll out the dough to 1/3" thick. Cut into 2 inch rounds and place on baking sheets lined with parchment paper. Place in oven and cook for 20 minutes or until cookies are lightly browned.
  • While the cookies are baking, add the remaining sugar and water to a small saucepan and cook over medium to medium-high heat for about 10 to 15 minutes or until the syrup spins a long thread. Remove from heat. Season with vanilla and cloves to taste.
  • When cookies are done, remove from oven and place on rack to cool slightly. Pour hot syrup over cookies. Serve at room temperature.

3 eggs, separated
1/2 teaspoon vanilla

Steps:

  • Preheat oven to 350°.
  • Sift together the salt, flour and 1/2 sugar.
  • Beat the egg whites until stiff, adding the rest of the powdered sugar gradually.
  • Beat egg yolks with the vanilla.
  • Fold into the beaten egg whites.
