CHICKEN, POTATO, AND GRAVY BOWLS



Chicken, Potato, and Gravy Bowls image

Tender potatoes and flavorful chicken are topped with a delicious gravy in this meal-in-a bowl.

1 ½ pounds Yukon gold potatoes or other potatoes, quartered
1 tablespoon canola oil
12 ounces skinless boneless chicken thighs
2 teaspoons bottled minced roasted garlic
¼ cup light sour cream
¼ cup fat free milk
2 teaspoons snipped fresh thyme or Italian (flat-leaf) parsley
¼ teaspoon salt
⅛ teaspoon ground black pepper
1 (.87 ounce) package 30 percent less sodium brown gravy mix, such as McCormick®
1 Sprigs fresh thyme or Italian parsley

Steps:

  • In a large saucepan cook potatoes, covered, in a small amount of boiling water for 20 to 25 minutes or until tender.
  • Meanwhile, in a large skillet heat oil over medium-high heat. Reduce heat to medium; add chicken thighs. Cook 14 to 18 minutes, or until no longer pink, turning once halfway through cooking time. Coarsely shred chicken. Cover and keep warm.
  • Drain cooked potatoes; return to saucepan. Add garlic to potatoes. Mash with a potato masher or an electric mixer on low speed. Add sour cream, milk, 2 teaspoons thyme, the salt, and pepper. Mash until light and fluffy. Cover with foil and keep warm.
  • Prepare gravy mix according to package directions. To serve, in bowls layer potatoes, chicken, and top with gravy. Garnish each serving with a thyme sprig, if desired.

These Homestyle Chicken Mashed Potato Bowls are filled with fluffy mashed potatoes, crispy chicken and topped with a brown gravy!

1 20 to 30 oz package frozen breaded popcorn chicken
2 24 oz packages Bob Evans Original Mashed Potatoes
1 14.5 oz can whole kernel corn
1 cup shredded colby-jack cheese
1 cup beef gravy

Steps:

  • Cook the frozen popcorn chicken according to package directions, preferably in the oven or air fryer so they are nice and crispy.
  • Meanwhile warm up the canned corn in a small pot over medium heat. Heat the Bob Evans Original Mashed Potatoes according to package instructions and divide into 4 bowls. Warm up the beef gravy according to package instructions as well.
  • Top the hot mashed potatoes with ¼ cup of the shredded cheese, ⅓ cup of the corn kernels (drained), and a few strips of the crispy chicken strips. Drizzle the top of the bowl with the hot beef gravy and enjoy!

1 tablespoon butter or margarine
4 boneless skinless chicken breast halves (1 1/4 pounds)
1/2 teaspoon salt
1/4 teaspoon pepper, if desired
3/4 cup water
1 envelope (0.87 ounce) chicken gravy mix
1 bag (14 ounces) frozen baby whole potatoes, broccoli, carrots, baby corn and red pepper strips
1 jar (4.5 ounces) sliced mushrooms, drained
Chopped fresh chives or parsley, if desired

Steps:

  • Melt butter in 10-inch nonstick skillet over medium heat. Sprinkle chicken with salt and pepper. Cook chicken in butter 15 to 20 minutes, turning once, until juice is no longer pink when centers of thickest pieces are cut. Remove chicken from skillet; keep warm.
  • Mix water and gravy mix (dry) in small bowl; pour into same skillet. Stir in frozen vegetables and mushrooms. Heat to boiling; reduce heat. Simmer uncovered about 5 minutes, stirring occasionally, until largest pieces of potatoes are hot. Add chicken; cover and simmer about 2 minutes or until chicken is heated through.
  • Serve vegetable and gravy mixture over chicken. Sprinkle with chives.

My hubby loves the mashed potato bowls they make at KFC. I came up with this recipe just for him. Although this is not a copy cat, by no means, that's where I got the idea from. I take a few short cuts in this recipe, so it's not necessarily homemade, but it is for sure "working mom" friendly. You can use either leftover mash potatoes or buy the bowls they sell at the grocery store these days. Cooking time includes prep time. Hope you enjoy it.

2 chicken breasts, cut into bite size pieces
2 cups flour
salt and pepper
2 eggs
1 cup vegetable oil
1 (10 ounce) package frozen corn
16 ounces bowl prepared mashed potatoes
1 (12 ounce) can chicken gravy
4 ounces cheddar cheese

Steps:

  • Set up 3 bowls to bread chicken. Mix flour, salt and pepper and divide between 2 bowls. Place the 2 eggs in 3rd bowl and whisk. Heat oil in large skillet to fry.
  • Dust chicken in first flour bowl. Dip in egg and then bread in the 2nd flour bowl. Put into hot oil to fry. The time it takes to fry will be determined by the size you cut your chicken pieces. Fry until golden brown and cooked throughout (should be 165 degrees).
  • While chicken cooks, heat gravy in a small saucepan, cook corn in microwave and leave in the bag to keep it hot. Heat mashed potatoes in the microwave until hot.
  • Build in bowls you plan to eat from. Put mashed potatoes on bottom, Then add the corn and chicken and pour desired amount of gravy on top.
  • Sprinkle with cheddar cheese and serve.

Dip the chicken pieces into the egg mixture then into the coat and double dip. Deep fry in batches at 375 degrees until chicken pieces are golden brown and fully cooked. Drain on paper towels.
  • Step 2: While chicken is frying. To make mashed potatoes: Add potatoes and salt to a large pot and fill with enough water to cover the potatoes. Boil potatoes until tender. Drain water and add pepper, butter, and milk. Mash or beat until smooth.
  • Step 3: To assemble potato bowls- Add a layer of mashed potato onto the bottom of a boil. Top with corn, chicken pieces, gravy and cheese. Divide the ingredients evenly within 4 bowls.
