EASY VEGAN SAUSAGE CRUMBLES
Easy vegan sausage crumbles are so easy to make, incredibly realistic in taste and texture, and much healthier than store-bought vegan "meat". This recipe is also completely oil-free.

Steps:
- Whisk all of the wet ingredients together in a medium saucepan and bring to a boil.
- While waiting for the wet mixture to boil, add the dry ingredients to a small bowl and mix them together.
- Once the liquid begins to boil lower the heat and add the dry ingredients and stir until all of the ingredients are completely incorporated. Turn off the heat and let the TVP sit for 5-10 minutes until all of the moisture is absorbed.
- Preheat a nonstick skillet over medium heat and cook the crumbles for about 5 minutes while occasionally stirring.

Steps:
- In a saucepan, bring the 1 cup water to a boil.
- Blend the remaining ingredients, except sausage or griller crumbles until creamy, adding the flour at the end of blending(add flour slowly, whisking continually, so as not to get lumps.
- Add the blended mixture to the boiling water, stirring with a whisk until the mixture comes back to a boil.
- Stir in crumbles and heat another minute to warm. Serve piping hot over biscuits or toast.

TVP SAUSAGE CRUMBLES (VEGAN)
Sausage crumbles made of TVP. Great for breakfast or on pizza. I just ate some mixed with grits and nutritional yeast. Yum!

Steps:
- In a bowl mix together the first nine ingredients. Bring water to a boil and pour over mixture.
- Pour in the textured soy protein, mix with a fork, and let stand for 10 minutes. Fluff with a fork. Taste to see if more seasonings need to be added.
- Put oil in a frying pan over medium heat. Add mixture, and fry until well browned. (you may need to add extra oil if the pan becomes too dry).

- Well, this is a standard go-to for me. 1/2c quinoa, 1/2c wheat berries, 2c veggie stock. Simmer for about 20 min or till liquid is gone. From here you can make it "sausagey" with some fresh sage, fennel seeds, red pepper flakes, etc... I like Alton Brown's breakfast sausage seasoning blend but added some fennel (sorry, I cook by sight and smell, I don't know how much, prob a couple tablespoons cause I love fennel). I've also made this into taco meat with a 0.99 cent package of taco seasoning. Once I made it into chorizo, and once was with celery seed, oregano, cinnamon and red pepper flakes that went into the most amazing Moussaka you've ever had. My favorite thing with the sausage version is to make naan bread pizzas with cashew hummus, red pepper relish, crumbles and torn kale on top. It's killer! The best thing about this is that it makes a fair amount, so it can be thrown in the freezer for whenever, and absolutely you must try browning the leftovers in a little oil in a skillet. The little crispy, toasted wheat berries are what christmas carols are made for. Lol. Lastly, these are two great grains cause they both have loads of protein and almost no fat (except for what you may sauté it in). - Add all of the liquid and spice ingredients (except the nutritional yeast) to a bowl. Stir to combine.
- Add the TVP. Stir to combine again. Let rest about 5 minutes so that the TVP absorbs the liquid (It won't absorb all of the liquid yet).
- Heat a skillet over medium. Add all of the TVP mixture and the nutritional yeast to the warm skillet. (There will be extra liquid in the skillet, but it will cook off.)
- Cook the mixture, stirring occasionally, until all of the liquid is absorbed. Taste the crumbles. If the center of the TVP is still hard or crunchy, add another half cup of water to the skillet and cook until the liquid is absorbed. (Until the center is chewy but not hard).
