I found this recipe in the Heloise coloum in out newspaper. I haven't tried it yet, just saving it here.

1 (6 ounce) can tomato paste
2 cups water, adjust to taste
salt
pepper

Steps:

  • Blend in blender until smooth and creamy.
  • Add salt and pepper to taste.

This came out rather good - I enjoyed it - But I wish I had thought to get some french bread to soak up some sauce. Oh well - I served this over cheese tortellinis and thought it was quite nice:)) Hope you think so too!!

12 large shrimp, shells removed
1 fresh tomato, diced
1 -2 teaspoon prepared garlic in oil
1/2 teaspoon dill
olive oil, to drizzle on top
salt and pepper, to taste

Steps:

  • Preheat oven to 425.
  • Spray a small casserole dish or pie plate with Pam.
  • Place shrimp on the bottom.
  • Lay diced tomatoes over the shrimp.
  • Put garlic, dill, salt and pepper on top of the tomatoes.
  • Drizzle all with a little olive oil.
  • Bake, uncovered, for 8-10 minutes -.
  • Enjoy!

10 -12 large ripe tomatoes
1 teaspoon salt
1 teaspoon seasoning salt
1/4 teaspoon pepper
1 teaspoon sugar

Steps:

  • Wash and drain tomatoes, remove core and blossom ends.
  • Place the whole tomatoes in a slow cooker. DO NOT add water.
  • Cover and cook on low for 4-6 hours or until tomatoes are very soft.
  • Press them through a sieve or food mill.
  • Add seasonings, and chill.

12 medium tomatoes, cored and cut into quarters
1/2 cup water
1/3 cup coarsely chopped onion
2 stalks celery, coarsely chopped
1 teaspoon minced fresh parsley
1 bay leaf
1 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon sugar

Steps:

  • Combine first 6 ingredients into Dutch oven, bring to a boil.
  • Reduce heat.
  • Cover and simmer 30 minutes.
  • Remove from heat.
  • Put vegetable mixture through a food mill or sieve.
  • Stir in salt, paprika and sugar.
  • Chill thoroughly.
  • Serve over ice if desired.

This is not a tried recipe but an adaptation from my "Juicer" recipes. It is expensive to make in off season as 12 tomatoes only make 4 glasses of juice. You can enhace the flavor by adding a slice of onion, a bay leaf & a bit of parsley or leave it plain. The tabasco is nice as it takes up the slack from no salt.Please let me know if it turns out. The request was for a low sodium

12 medium tomatoes, peeled & cored
2 celery ribs, chopped fine
1/2 cup water
1 teaspoon Tabasco sauce (optional)

Steps:

  • Chop the tomatoes fine and process them in a blender or food processor until just juice.
  • Add celery ribs and tabasco (if using) and process further.
  • Put into a saucepan and simmer for 15 minutes add water.
  • It's ready.
