TAJIN LIMEADE
Tajin is a blend of chili peppers, salt and lime. I sprinkle it on a lot of food, but I found it's really delicious in this Tajin limeade. -Amanda Phillips, Portland, Oregon

- Sprinkle 2 tablespoons Tajin seasoning evenly in the bottom of 2 ice cube trays (16 ice cubes each). Fill with water and freeze., In a saucepan, stir together 1 cup sugar and 1 cup water over medium-high heat. Bring to a boil, stirring frequently, until sugar dissolves. Remove from heat and let cool until room temperature. , In a large pitcher or bowl, stir together lime juice, sugar mixture and remaining 3 cups water. On a small plate, combine remaining 1 tablespoon Tajin seasoning and 1 tablespoon sugar. Moisten rims of 8 tall glasses with lime wedges; dip rims in Tajin mixture. Place 3-4 ice cubes in each glass; fill with limeade. Garnish with lime wedges if desired.

- If using whole dried chiles, remove stems and seeds from chiles and add to a spice grinder or blender. Grind to a powder.
- Transfer to a small bowl and whisk in the lime powder, salt and sugar. Mix well. Store in an airtight container for 2-3 months.
- Serve sprinkled over fresh cut fruit, popcorn, steamed corn on the cob, rim a glass for Bloody Marys.

- 1. PREP/PREPARE
- 2. To increase the heat use a hotter chili powder, and more cayenne. To decrease the heat reduce the chili powder and cayenne, and increase the paprika.
- 3. Save those spice bottles. I make a lot of my own spice combinations, but I buy a lot of individual spices. When a bottle goes empty, I remove the label, and toss it into the dish washer. Then, when I make my "special" spice mixtures, I slap my own label on, and stick in in the cupboard.
- 4. Gather your ingredients (mise en place).
- 5. Add all the ingredients together in a jar, and keep in a cool, dry place, away from sunlight.
- 6. PLATE/PRESENT
- 7. I sprinkle it on beef, pork, and fish, before grilling, or cooking. It is awesome sprinkled on a good juicy burger, or even sprinkled over fresh fruit. Enjoy.
- 8. Keep the faith, and keep cooking.

- Takis seasoning. One of the main replacements for Tajin that you will find in stores is Takis seasoning, the same seasoning used on Takis snacks. Even if this substitute is not common in all countries, if you do find it, it can be one of the best to use instead of Tajin in the same amount.
- Fruit salad seasoning. Supermarkets tend to have a rich range of offers when it comes to fruit seasoning, especially if you go shopping in a concept store.
- Vegetable seasoning. The veggies seasoning options are even wider than the fruit ones. You can find different types of herbs combined with ingredients that are common to Tajin as well.

- Chilli mix with lemon. If you find a chili mix at your local store, all you have to do is add some lemon to it to get closer to the Tajin flavor. You can add lemon juice if you want a more sauce-like texture or dried lemon and use the mix in your dish.
- Chilli flakes with dehydrated lime. You can easily find chili flakes in all stores. They usually come plain. Therefore, you can mix your chili flakes with some dehydrated lime and you will obtain a new flavor.
- Fries seasoning. A great compromise solution, if you don’t have Tajin, is to use fries seasoning. You can find this type of seasoning in all supermarkets and it usually comes in a mild and spicy flavor.
- Sweet potato seasoning. If you find sweet potato seasonings, you want to give them a try instead of Tajin as you might be impressed. The sweet potatoes require a mix of sweet and spicy when you add seasonings to them, which is exactly what these store mixes include.
