This homemade szechuan sauce recipe is the perfect combination of sweet and spicy, and so easy to make. It's perfect for quick dinners, stir fries, noodle dishes, and more.

Number Of Ingredients 13

1/4 cup soy sauce
2 tablespoons rice vinegar
1 tablespoon sesame oil
1 tablespoon honey (or more for sweeter)
1 tablespoon chili garlic sauce
1/2 tablespoon ground ginger (fresh minced ginger is good, too)
1 teaspoon garlic powder (fresh minced garlic is good, too)
1 teaspoon sriracha (or more to taste)
1 teaspoon crushed red pepper flakes
1/2 cup chicken stock
1-2 tablespoons cornstarch (optional, for thickening)
1/4 - 1/2 teaspoon szechuan peppercorns (lightly toasted and ground (or to taste - or use black peppercorns instead))
1/2 - 1 teaspoon Chinese 5 spice

Steps:

  • Whisk all of the ingredients except the cornstarch together in a small pot. You can blend them in a food processor or blender if you'd like.
  • Bring the pot to a boil, then reduce the heat and simmer for 3 minutes.
  • If you'd like to thicken it, dissolve 1 tablespoon cornstarch in 2 tablespoons of water until well mixed. Stir it into the szechuan sauce and stir until it thickens up, 2-3 minutes. For thicker szechuan sauce, use 2 tablespoons cornstarch.
  • Cool and serve.

Homemade Szechuan Sauce is an extremely flavorful sauce prepared with 10 basic ingredients. This spicy and fiery sauce is very popular in Indo-Chinese cuisine and is used to flavor many recipes. Plus the whole recipe takes just 20 minutes from start to finish and is vegan and gluten-free!

2 cups Dried Whole Chilies (40-50 pieces)
1 medium Chopped Onion
3 tablespoons Chopped Garlic
2 teaspoons Ginger paste
3 tablespoons Tomato Ketchup ((vegan))
3 tablespoons Soy sauce
1 tablespoon Vinegar
1/4 cup Brown Sugar
Salt to taste
2 tablespoons Sesame Oil or Olive oil
1/4 cup Water

Steps:

  • Let's begin with de-seeding the chilies.
  • Cut chili in half...
  • Open and remove all the seeds.
  • Remove seeds in a bowl...
  • Remove the dried membrane and discard.
  • All we need is the skin of red chilies. If you have a sensitive skin then these chilies may irritate your skin, make sure you wear gloves before removing seeds from these chilies.
  • All the red chilies are de-seeded and ready. Discard the seeds.
  • Transfer cleaned chilies to a mixer...
  • Add 1/4 cup water and grind it to a smooth paste.
  • Heat sesame oil in a pan, add chopped garlic, ginger and saute for 1 minute.
  • Mix in chopped onions and saute for for another 1-2 minutes until onions are translucent.
  • Pour in szechuan paste..
  • Add tomato ketchup...
  • Add soy sauce...
  • Add salt..
  • Pour in vinegar and bring it to a boil. Add sugar and mix until well blended.
  • Adjust sweetness and salt. Sezchuan sauce is ready.
  • When completely cooled store it in an airtight container and its good for 3-4 weeks in your refrigerator and for 6 months in your freezer.

½ -1 teaspoon Szechuan Peppercorns (or sub black peppercorns)
1/4 cup soy sauce ( of Gluten-Free Liquid Aminos) see notes.
3 tablespoons honey (or sub maple syrup, coconut sugar, brown sugar or sugar alternative)
1 tablespoon sesame oil
1 tablespoon rice wine vinegar (or black vinegar)
1 tablespoon Chinese cooking wine (shaoxing) or mirin (both optional)
3 garlic cloves, finely minced (use a garlic press)
2 teaspoons fresh ginger, finely minced ( or use ginger paste)
1 tablespoon garlic chili paste (or sambal oelek) more for more spicy or sub 1 teaspoon chili flakes
½ teaspoon Chinese Five Spice
optional- 2-3 teaspoons corn starch, to thicken, see notes.

Steps:

  • Toast szechuan peppercorns in a hot dry skillet over medium heat, until fragrant, about 1-2 minutes. Crush.
  • Place all ingredients in a medium bowl or small jar and whisk until well combined.
  • If using as a stir-fry sauce, and you would like to thicken it, whisk in 2 teaspoons cornstarch.
  • If using as a marinade, forgo the cornstarch and make sure to season what you are marinating ( chicken, tofu, beef) with salt. The marinade alone will probably not be salty enough.
  • If making a stir-fry, try adding a few dry Chinese or Arbol chilies (5-10) to the stir-fry, right before adding the Szechuan Sauce. Do not eat the chilis. ????

1 tablespoon Szechuan peppercorns
Salt
1 pound boneless, skinless chicken, pounded thin and cut into 1-inch thick strips
2 tablespoons canola oil
2 tablespoons ginger, minced
1 tablespoon garlic, minced
1 cup onions, julienned
1 cup broccoli florets
1/4 cup green peppers, julienned
1/4 cup red peppers, julienned
1/4 cup yellow peppers, julienned
1 cup shiitake mushrooms, sliced
2 tablespoons thin soy sauce
1/4 cup dry sherry
1 tablespoon chile paste
1/4 cup scallions, cut thinly on the bias

Steps:

  • Heat a small, dry saucepan. When the saucepan is hot, add the Szechuan peppercorns and, shaking the pan constantly, toast until the peppercorns are fragrant. Remove from the heat. Place the peppercorns in a spice grinder and grind. Season the chicken pieces with the peppercorns and salt and set aside. Heat a large wok over high heat. When the wok is hot, add the oil. Add the ginger, garlic and onions and stir-fry for 1 minute. Add the chicken, broccoli, peppers, shiitake mushrooms, soy sauce, sherry and chile paste. Stir-fry until the chicken is cooked through and the vegetables are cooked, but al dente, about 5 minutes. Add the scallions and stir-fry for 1 more minute.

6 garlic cloves, chopped
1/4 cup fresh ginger, peeled and chopped
1/2 cup vegetable oil
1/2 cup tahini (sesame paste)
1/2 cup smooth peanut butter
1/2 cup good soy sauce
1/4 cup dry sherry
1/4 cup sherry vinegar
1/4 cup honey
1/2 teaspoon hot chili oil
2 tablespoons dark sesame oil
1/2 teaspoon freshly ground black pepper
1/8 teaspoon ground cayenne pepper
1 pound spaghetti
1 red bell pepper, julienned
1 yellow bell pepper, julienned
4 scallions, sliced diagonally (white and green parts)

Steps:

  • Place the garlic and ginger in a food processor fitted with a steel blade. Add the vegetable oil, tahini, peanut butter, soy sauce, sherry, sherry vinegar, honey, chili oil, sesame oil, and ground peppers. Puree the sauce.
  • Add a splash of oil to a large pot of boiling salted water and cook the spaghetti al dente. Drain the pasta in a colander, place it in a large bowl, and while still warm, toss with 3/4 of the sauce. Add the red and yellow bell peppers and scallions; toss well. Serve warm or at room temperature. The remaining sauce may be added, as needed, to moisten the pasta.

  • Mix ginger, garlic, red pepper, soy sauce, chili garlic sauce and sugar in a pan and warm to near boiling.
  • Combine broth and cornstarch in small bowl; stir to dissolve cornstarch.
  • Stir the cornstarch mixture into the soy mixture. Stir until thickened.

1/4 cup soy sauce
1/4 cup sesame oil
3 tablespoons rice vinegar

1 1/2 teaspoons Asian chili sauce or 1 teaspoon dried red pepper flakes
1 tablespoon hoisin sauce
2 tablespoons fresh lime juice (lemon at a pinch - use a little less)
3/4 cup water
1/2 teaspoon salt
1 lb noodles, of your choice
finely chopped scallion
chopped roasted unsalted peanuts

Steps:

  • Blend all ingredients in blender until smooth.
  • Transfer to a jar with a tight-fitting lid (keeps 1 week, chilled; or distribute among 3 small containers and freeze what you don’t want to use within a week).
  • To use: Boil 1 lb Asian noodles or spaghetti until al dente.
  • Toss with ¾ cup of sauce (or more to taste), finely chopped scallions and chopped peanuts.
  • Note: In the winter, I eat these noodles hot.
  • In summer I rinse under cold water, cool and drain and serve them as a spicy noodle salad, often adding shredded bok choy, carrots, snowpeas, lots more of the peanut sauce, etc.

3/4 cup beef broth
1/3 cup hoisin sauce

  • Brown ground beef in a large skillet, stirring until it crumbles; drain and keep warm.
