HOMEMADE SUGAR FREE AMARETTO
Steps:
- In a mason jar or glass bowll, mix together warm water, yacon syrup and BochaSweet (or other granulated sugar substitute) until dissolved.
- Add almond extract, vanilla extract and vodka and mix together.
- Pour into a mason jar or other container for storage that you can tightly seal.
- Store for a minimum of 1 week. This homemade sugar free amaretto reaches it's best flavor if you make it about 4 weeks in advance.

- Heat until the mixture is boiling and all sugar is dissolved.
- Reduce heat to low and continue to simmer for approximately 2 hours until mixture is thickened and syrupy and lightly coats a spoon.
- Remove pan from heat and allow to cool for 10 minutes.
- Add vodka and extracts and stir well.
- Pour into a bottle and seal.

Whizz the mixture a few times at a high speed, until the mixture is pale and starting to increase in volume. Steps:
- Spread amond flour in a baking pan and bake in a preheated 325°F oven for 4 minutes or until lightly toasted. Let cool.
- With an electric mixer, beat cheese and splenda until smooth. Mix in eggs, vanilla, Amaretto and sour cream.
- Pour batter into a greased 9-inch springform pan. Sprinkle garnish almonds on the top.
- Bake in the middle of a preheated 325°F oven for 25 minutes or until just barely set. Turn off the oven, leave the door ajar, and let cool in the oven for 1 hour longer. Chill. To serve, remove pan sides and cut into wedges.
