Steps:
- Combine all ingredients and store in a tightly covered container.
- Makes 6- 8 ounce servings or is equal to 4 cans of soup.
- To make soup stir all ingredients into 1 1/2 quarts boiling water.
- Cook, stirring constantly until smooth and thickened.
- Cover and cook over very low heat 20 to 30 minutes.
CONDENSED CREAM OF MUSHROOM SOUP SUBSTITUTE
Condensed Cream Of Mushroom Soup is very uncommon here and is therefore pretty expensive. Here is what I use instead, it would also be good if you prefer not to use the highly processed version and would be a good way to reduce salt if you use low sodium broth or could be made vegetarian by using vegetable broth

Steps:
- Melt butter in a saucepan over medium-low heat.
- Saute mushrooms until cooked through.
- Stir in flour a little at a time until a paste is formed and remove from heat.
- Add broth and milk a little at a time, stirring to keep mixture smooth.
- Return to the heat and bring sauce to a gentle boil, stirring constantly until sauce thickens.
- Add salt and pepper to taste. I find it usually doesn't need salt and only a couple of dashes of pepper.
CONDENSED CREAM OF SOUP SUBSTITUTE
I use this recipe as a substitute for the canned cream of soups in recipes. I almost never keep that stuff on hand, because its full of sodium, and just yucky. The recipe calls for chicken broth. I use chicken broth for the cream of chicken soup substitute. To make a heartier soup, like the cream of mushroom, I use beef broth. Sometimes I like to add in a little shredded chicken, sliced mushrooms, celery, etc. Use your imagination. I've never tried this soup by itself, I only use it in recipes, and its a great substitute!!! The recipe always tastes better than when I use the canned stuff. Enjoy!

- Stir in flour; keep stirring until smooth and bubbly.
- Remove from heat and add the chicken broth and milk, a little at a time, stirring to keep smooth.

- Taste and add salt and pepper, as needed.
- Use in casseroles in place of condensed cream soups.
- Can be varied by using vegetable broth, sauteéd chopped celery, celery seed, or sauteéd chopped mushrooms.

- Cut the mushrooms into slices.
- Melt butter in large frying pan. Add in onions, garlic, and mushrooms. Cook until onions are soft.
- Blend in 2 T. flour and stir.
- Add in the chicken broth and heat until slightly thickened while stirring frequently.
- Stir cream with additional 1 T. flour and seasonings. Add in cream to soup. Heat to thicken while stirring frequently.
- Serve and enjoy!
VEGAN CREAM OF MUSHROOM SOUP
Steps:
- Slice the mushrooms, dice the onions, and mince the garlic.
- In a large soup or stockpot, sauté the mushrooms, onion, and garlic in vegan margarine for 3 to 5 minutes, until onions are soft.
- Reduce the heat to medium-low and add the vegetable broth. Cover the pot and allow it to simmer for at least 45 minutes.
- Add the flour (or use cornstarch mixed in water to keep it gluten free), non-dairy sour cream, and soy milk. Stir the mixture well to combine.
- Allow to simmer another 20 to 30 minutes or until soup has thickened.
