HOMEMADE SPAGHETTI AND MEATBALLS

Homemade Spaghetti and Meatballs image

I have been making this spaghetti recipe, from a dear family friend, for over 25 years. It is by far the best homemade sauce and meatballs we have ever had. I've also just fried the beef and added it to the sauce, then used it to make lasagna.

Time 3h15m

Yield 10

Number Of Ingredients 18

1 (29 ounce) can whole peeled tomatoes
19 fluid ounces tomato juice

  • Serve sauce and meatballs over cooked spaghetti.

Time 3h5m

Yield 6 servings

Number Of Ingredients 21

5 tablespoons panko breadcrumbs, finely processed
6 ounces heavy cream (as needed to soak the breadcrumbs)
1 tablespoon canola oil
1/2 cup small-diced sweet onions
1 clove garlic, chopped
1/2 tablespoon chopped fresh rosemary
8 ounces ground pork
8 ounces sweet pork sausage, no casing
8 ounces ground veal
5 ounces Parmesan, grated, plus more for garnish
1/4 cup finely minced fresh parsley, plus more for garnish
1 large egg
Kosher salt
Basic Tomato Sauce, recipe follows
1 box spaghetti
Freshly cracked black pepper
2 tablespoons olive oil
4 leaves fresh basil
1 clove garlic, chopped,
Pinch red pepper flakes
One 32-ounce can San Marzano tomatoes, drained and processed in a food mill or food processor

Steps:

  • Soak the breadcrumbs in the heavy cream in a bowl.
  • Heat a large saute pan over medium heat and add the canola oil. Saute the onions and garlic until the onions are translucent. Add the rosemary, remove from the heat and then chill the mixture thoroughly.
  • Combine the breadcrumb mixture, onion mixture, pork, sausage, veal, Parmesan, parsley and egg in the bowl of large electric mixer and begin mixing on low speed. When relatively well incorporated, add some salt.
  • Heat a small saute pan to cook a sample of the mixture. Taste for seasoning and make any necessary adjustments. Form the meatballs into the desired shape and chill for 1 hour.
  • Preheat the oven to 425 degrees F.
  • Bake the meatballs on a baking sheet until browned, 20 to 25 minutes. Bring the Basic Tomato Sauce to a simmer. Transfer the meatballs to the sauce and simmer until tender and cooked through, about 30 minutes.
  • Bring a large pot of salted water to a boil. Boil the spaghetti until al dente according to the package directions.
  • Transfer the cooked spaghetti to the sauce with the meatballs and toss. Add some black pepper, garnish with Parmesan and parsley and serve.
  • Heat a saucepan over medium heat. Add the olive oil, basil, garlic and red pepper flakes and cook until the garlic begins to soften, about 3 minutes. Add the tomatoes, bring the mixture to a simmer and cook for 1 minute. Use right away, or chill until ready to use.

REAL MEATBALLS AND SPAGHETTI

Real Meatballs and Spaghetti image

For homemade Italian comfort, make Ina Garten's Real Meatballs and Spaghetti recipe from Barefoot Contessa on Food Network, starring veal, pork and beef.

Provided by Ina Garten

Categories     main-dish

Time 2h

Yield 6 servings

Number Of Ingredients 23

1/2 pound ground veal
1/2 pound ground pork
1 pound ground beef
1 cup fresh white bread crumbs (4 slices, crusts removed)
1/4 cup seasoned dry bread crumbs
2 tablespoons chopped fresh flat-leaf parsley
1/2 cup freshly grated Parmesan cheese
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground nutmeg
1 extra-large egg, beaten
Vegetable oil
Olive oil
1 tablespoon good olive oil
1 cup chopped yellow onion (1 onion)
1 1/2 teaspoons minced garlic
1/2 cup good red wine, such as Chianti
1 (28-ounce) can crushed tomatoes, or plum tomatoes in puree, chopped
1 tablespoon chopped fresh flat-leaf parsley
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1 1/2 pounds spaghetti, cooked according to package directions
Freshly grated Parmesan

Steps:

  • Place the ground meats, both bread crumbs, parsley, Parmesan, salt, pepper, nutmeg, egg, and 3/4 cup warm water in a bowl. Combine very lightly with a fork. Using your hands, lightly form the mixture into 2-inch meatballs. You will have 14 to 16 meatballs.
  • Pour equal amounts of vegetable oil and olive oil into a large (12-inch) skillet to a depth of 1/4-inch. Heat the oil. Very carefully, in batches, place the meatballs in the oil and brown them well on all sides over medium-low heat, turning carefully with a spatula or a fork. This should take about 10 minutes for each batch. Don't crowd the meatballs. Remove the meatballs to a plate covered with paper towels. Discard the oil but don't clean the pan.
  • For the sauce, heat the olive oil in the same pan. Add the onion and saute over medium heat until translucent, 5 to 10 minutes. Add the garlic and cook for 1 more minute. Add the wine and cook on high heat, scraping up all the brown bits in the pan, until almost all the liquid evaporates, about 3 minutes. Stir in the tomatoes, parsley, salt, and pepper.
  • Return the meatballs to the sauce, cover, and simmer on the lowest heat for 25 to 30 minutes, until the meatballs are cooked through. Serve hot on cooked spaghetti and pass the grated Parmesan.

  • In a large, deep skillet, heat up the olive and and butter. Add the sugar, oregano, garlic powder, onion powder, and red pepper flakes and cook, stirring, until the sugar dissolves, 1-2 minutes. Stir in the crushed tomatoes and parsley. Bring to a simmer, then reduce the heat and cook until the flavors meld, about 20 minutes (or as long as it takes you to make the meatballs). Taste and season with salt and pepper.
  • While the sauce is simmering, make the meatballs. In a large bowl, mix together the panko, 1 flat leaf parsley, garlic powder, onion powder, salt, and pepper. Stir in the milk and whisk in the egg. Add the beef and pork and mix until just combined, being careful not to overwork. Form into tiny dime sized meatballs, wetting your hands lightly as you go along so the meat doesn’t stick to your hands. Place the meatballs on a tray.
  • Gently place the meatballs into the simmering sauce. If there isn’t enough room for the meatballs to be covered by the sauce, add a bit of water or stock to ensure all the meatballs are fully covered. Simmer covered for 10-15 minutes or until the meatballs are tender and cooked through (cut one open to check).
  • While the meatballs are simmering, cook the pasta according to the package in a large pot of salted water.
