Smiley Fries will be the side that brings smiles to your table. You'll never buy store bought again!

1 large potato
1 tablespoon milk
1 large egg
2 tablespoons cornstarch
2 tablespoons grated parmesan cheese
2 tablespoons breadcrumbs
1/2 teaspoon salt
1/4 teaspoon garlic salt

Steps:

  • Preheat oven to 425°F. Peel the potato and cut into one-inch cubes. Place in a microwave-safe bowl and cover with plastic wrap. Cut a small slit to vent. Microwave for 5 to 7 minutes until tender. Add the milk to the potato and mash the potato mixture with a fork or pastry blender well. Let cool a bit. Stir in the egg, cornstarch, cheese, breadcrumbs, salt and garlic salt. Mix well. Place the dough between two pieces of wax paper. Press or roll the dough to 3/8-inch thickness. Use a two-inch circle cutter to cut circles. Place the potato circles on a baking sheet lined with parchment paper. If the dough is too soft, place in the refrigerator to chill 30 to 60 minutes. Use a straw to make eyes and a small spoon to make smiles on each potato circle. Bake for 10 to 15 minutes until the tops start to brown.

1 cup mashed potatoes
¼ cup flour
3 Tbsp breadcrumbs
3 Tbsp cornstarch
1 egg, lightly beaten
2 tsp salt
1½ tsp pepper
Canola oil
Ketchup

Steps:

  • In a large bowl mix mashed potatoes, flour, breadcrumbs, cornstarch and egg. Mash with a fork until a dough forms. Season with salt and pepper. Roll dough out between two pieces of waxed paper to ¼ inch thick. Carefully peel off the top piece of waxed paper. Cut out 1½-inch circles, using the rim of a glass. Using the end of a drinking straw, cut out two circles for the eyes; use a spoon to cut out a mouth. Pour canola oil into a large pot to a depth of 2 inches. Heat until it reaches 350°F on a deep-fry thermometer. (Or add a pinch of dough to the oil; when it sizzles, the oil is ready.) Working in batches, cook fries in oil until golden brown and crispy, 2 to 4 minutes, flipping halfway through. Transfer to a paper towel-lined plate; sprinkle with salt. Serve with ketchup.

3 russet potatoes, peeled and cooked
3 tablespoons cornstarch
¼ cup all-purpose flour
3 tablespoons bread crumbs
1 egg
salt, to taste
pepper, to taste
peanut or vegetable oil, for frying

Steps:

  • In a bowl, smash the cooked potatoes with a fork or potato masher until are light and fluffy.
  • Add the cornstarch, flour, bread crumbs, egg, salt, and pepper and mix until a slightly crumbly dough forms.
  • Transfer the dough to a lightly floured surface and roll out to about ½ inch (1.25 centimeter) thick.
  • With a mason jar lid or cookie cutter, cut out circles from the dough. Shape them into any emoji or design you'd like with tools like spoons, straws, toothpicks, forks, and your fingers.
  • Place the shapes on a parchment-lined baking sheet and chill in the refrigerator for 30 minutes.
  • Heat the oil in a large, deep pot until it reaches 350°F (180°C).
  • Add the emojis and fry for 1-2 minutes, or until golden brown. Drain on a paper towel or cooling rack and sprinkle with salt. Serve immediately.
