2 (16 ounce) jars roasted red peppers
2 (14.5 ounce) cans chicken broth
1 (8 ounce) package sliced fresh mushrooms
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon garlic powder
½ teaspoon salt
½ teaspoon ground black pepper
2 (9 ounce) packages fresh cheese tortellini, uncooked

Steps:

  • Place roasted red peppers in a blender or food processor, and blend until smooth.
  • In a large saucepan, mix roasted red peppers, chicken broth, and mushrooms. Season with basil, oregano, garlic powder, salt, and pepper. Bring the mixture to a boil. Stir in tortellini, and continue cooking 8 to 10 minutes, or until pasta is al dente.

1 large sweet onion, chopped
2 teaspoons butter
2 garlic cloves, minced
2 jars (15-1/2 ounces each) roasted sweet red peppers, drained
2 cups vegetable broth
1/2 teaspoon dried basil
1/4 teaspoon salt
1 cup half-and-half cream

Steps:

  • In a large saucepan, saute onion in butter for 2-3 minutes or until tender. Add garlic; cook 1 minute longer. Stir in the red peppers, broth, basil and salt. Bring to a boil. Reduce heat; cover and simmer for 20 minutes. Cool slightly. , In a blender, cover and process soup in batches until smooth. Remove 1 cup to a small bowl; stir in cream. Return remaining puree to pan. Stir in the cream mixture; heat through (do not boil).

2 large potatoes, peeled and cut into small pieces
2 stalks celery, chopped
2 shallots or 1/2 red onion, chopped
Kosher salt and freshly ground pepper

1 12-ounce jar roasted red peppers, drained and rinsed
4 to 5 sun-dried tomatoes
4 cups low-sodium chicken or vegetable broth
2/3 cup sour cream
1/4 cup chopped fresh cilantro
1/3 cup shredded pepper jack cheese
4 sourdough dinner rolls

Steps:

  • Heat the olive oil in a large Dutch oven or pot over medium-high heat. Add the potatoes, celery, shallots, 1/2 teaspoon salt, and pepper to taste and cook, stirring frequently, until the potatoes begin to soften, about 5 minutes. Add the red peppers, sun-dried tomatoes, chicken broth and 1 cup water. Cover and bring to a simmer, then uncover and cook until the potatoes are tender, about 15 minutes.
  • Transfer the soup and sour cream to a blender and, keeping the lid slightly ajar, puree until smooth. Season with salt and pepper and stir in half of the cilantro. Divide among bowls and sprinkle with the cheese and the remaining cilantro. Serve with the rolls.

CREAMY RED PEPPER SOUP

4 tablespoons olive oil
2 onions, chopped
2 carrots, peeled and chopped
3 garlic cloves, chopped
2 teaspoons chopped fresh thyme leaves
6 cups chicken broth
2 (12-ounce) jars roasted red bell peppers preserved in water, drained
1 russet potato, peeled and coarsely chopped
1/2 cup dry white wine
1 tablespoon sugar
Salt and freshly ground black pepper
16 (3/4-inch thick) baguette slices, cut into 1/2 to 3/4-inch cubes
1/2 cup mascarpone cheese

Steps:

  • Heat 2 tablespoons of oil in a heavy large pot over medium-high heat. Add the onions, carrots, garlic, and thyme and saute until the onions are translucent, about 5 minutes. Add the broth, bell peppers, potato, wine, and sugar. Bring to a simmer over high heat. Decrease the heat to medium-low. Partially cover and simmer until the potatoes are very tender, stirring occasionally, about 30 minutes. Cool the soup slightly.
  • Using an immersion hand blender, puree the soup in the pot until it is smooth. Alternately, working in batches, puree the soup in a regular blender, taking care while blending warm liquids. Season the soup, to taste, with salt and pepper.
  • Meanwhile, heat the remaining 2 tablespoons oil in a heavy large skillet over medium heat. Add the bread cubes and saute until they are crisp and golden, about 8 minutes.
  • Ladle the soup into bowls. Dollop a tablespoon of mascarpone in the center of each bowl and top with croutons. Sprinkle with pepper and serve.

6 medium red bell peppers, roasted, cleaned and diced
1 cup white onion, chopped
1 cup potato, chopped
1 cup heavy cream, whole milk or coconut milk
4 cups no-salt-added chicken broth or 1 900 mL box of no-salt-added chicken broth
3 cloves garlic, minced
2 pats butter
salt, pepper and chili flakes, to taste

Steps:

  • In a soup pot over medium heat, melt the butter and sauté the onions until they begin to sweat and turn translucent. Add the potatoes and garlic and continue to cook for 5 minutes.
  • Add the peppers, broth, and cream/milk. Stir, cover, and bring down to a simmer for 20 minutes.
  • Using a blender, blend everything until it reaches a creamy and smooth consistency.
  • Season with salt, pepper, and (optional) chili flakes to taste.
  • Serve immediately or let cool completely to room temperature before storing in airtight containers in the fridge for up to 3 days.

1 large yellow onion, chopped

3 large red bell peppers, roasted and cut
1 cup buttermilk or 1 cup milk
sour cream (optional) or plain yogurt (optional)

Steps:

  • In a soup pot over medium heat, warm oil.
  • Add onion and saute'.
  • Add garlic and cook 30 seconds longer.
  • Add potato, salt, thyme, red pepper flakes, and stock/broth.
  • Bring to a boil, reduce heat, cover, and simmer 15 minutes.
  • Add roasted red peppers and cook 5-10 minutes until flavors are blended.
  • Puree w/ blender stick or in batches (food processor or blender).
  • Return to pot and add buttermilk (milk or half & half). Gently heat to serving temperature.
  • Ladle into bowls, top with sour cream & chives.

1 clove garlic, finely chopped
1 shallot, finely chopped

1 jar (15 oz) roasted red bell peppers, drained, rinsed
1 carton (32 oz) Progresso™ reduced-sodium chicken broth (4 cups)
1/4 cup half-and-half
1 tablespoon chopped fresh parsley
Salt and freshly ground pepper to taste

Steps:

  • In 4-quart Dutch oven, melt butter with oil over medium-high heat. Add garlic and shallot; cook 2 minutes, stirring constantly, until shallot is tender. Add tomato paste; cook 1 minute, stirring constantly. Stir in roasted peppers and broth; heat to boiling. Reduce heat to medium; simmer uncovered 5 minutes, stirring occasionally. Remove from heat; cool 10 minutes.
  • In blender or food processor, process mixture in batches 8 to 10 seconds or until smooth, stopping to scrape down side as needed. Return mixture to Dutch oven; stir in half-and-half and parsley. Cook over medium heat 5 minutes or until thoroughly heated. Season with salt and pepper.

2 tablespoons whole fresh thyme leaves plus 1 teaspoon minced fresh thyme, divided
4 cups vegetable broth or water
4 cups chicken broth
2 cups cubed peeled potatoes
2 cups cubed peeled sweet potato
2 cups cubed peeled butternut squash

  • Place the red peppers, onion, carrots and jalapeno in two greased 15x10x1-in. baking pans; drizzle with oil and toss to coat. 4 large red bell peppers (4 cups)
1/2 cup diced sweet onion
2 cloves garlic
1 (15 ounce) can diced tomatoes with juice (1 1/2 cups)
4 cups low sodium chicken broth or 4 cups vegetable broth
1 tablespoon balsamic vinegar
1 teaspoon olive oil
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • First, trim 4 peppers, discard the seeds, and cut them into flat pieces.
  • Broil the pepper, skin side up, until the skin blisters.
  • Now, cool the pieces in a plastic bag.
  • Remove the skin and chop.
  • (You can use 4-6 roasted red peppers from a jar to save yourself a lot of trouble for the same result.) Sauté 1/2 cup diced sweet onion in a little olive oil.
  • Add a can of diced tomatoes with the juice, the peppers, and 4 cups of broth.
  • Cook for 5 minutes.
  • Whiz half the mixture in a blender, then return it to the original pan.
  • Or use a stick blender and whirl the whole pot around to your desired consistency.
  • I like smooth.
  • Season with a dash of salt and pepper, and a little balsamic vinegar.

1 teaspoon olive oil
1 onion, chopped
2 cloves garlic, minced
3 red bell peppers
4 large tomatoes - peeled, seeded and chopped
1 ½ teaspoons dried thyme
2 teaspoons paprika
⅛ teaspoon white sugar
6 cups chicken broth
salt and pepper to taste
1 pinch ground cayenne pepper
1 dash hot pepper sauce
2 tablespoons butter
1 ½ tablespoons all-purpose flour
6 tablespoons sour cream

Steps:

  • Roast peppers: rub oil on peppers and put them under the broiler until blackened, turn to get all sides. Put into paper bag and seal. Let rest for 15 minutes, then peel will come right off and core and seeds will fall out. Chop peppers. Reserve one chopped pepper; set aside.
  • Heat olive oil over moderate heat. Add onion and garlic and cook until soft but not brown, about 5 minutes. Stir in tomato, bell peppers (except reserved), thyme, paprika, and sugar. Cook over medium-low heat until all the tomato juices have evaporated, about 25 minutes.
  • Stir in chicken stock, salt and pepper, cayenne pepper, and hot sauce (if using). Bring to boiling, lower heat, and simmer, partially covered, for 25 minutes or until vegetables are tender.
  • Strain soup, reserving broth. Place solids in food processor or blender, and process until fairly smooth. Add puree back into broth.
  • Melt butter and stir in the flour, cook for 1 minute. Stirring slowly, add the broth/vegetable mixture. Add reserved chopped pepper and bring to boiling. Lower heat and simmer 10 minutes.
  • Ladle into bowls and add 1 tablespoon of sour cream to each bowl. For a lighter soup, this is also delicious without the sour cream.

I had an abundance of cream and remembered how much I loved the roasted red pepper soup from local restaurants. I quickly whipped this together and was very pleased with how it turned out. You could easily alter this recipe to your liking.

6 large roasted red peppers, chopped (from a jar saves time)
1 large onion, diced
3 small garlic cloves, chopped
1 tablespoon butter
1/8 teaspoon black pepper
1 (28 ounce) can diced tomatoes with juice
1 cup water
1 vegetable bouillon cube (I use mushroom)
1 cup heavy cream (I use 35% whipping cream)
salt, if necessary

Steps:

  • Add butter to large saucepan and melt over medium heat.
  • Add onion and garlic and saute for about 4 minutes, just to get the aromas flowing.
  • Sprinkle mixture with black pepper.
  • Add roasted red pepper and cook for another couple of minutes.
  • Pour in the can of diced tomatoes with juice and raise heat.
  • Pour in cup of water and add bouillon cube.
  • Bring to a boil, stirring occasionally.
  • Once bouillon cube has dissolved add cream and stir, removing from heat.
  • *Give the soup a quick taste to see if salt is needed. Generally the bouillon cube is salty enough so you will probably not need it.
  • Transfer small amounts of the soup into a blender, trying to keep an even liquid to vegetable ratio.
  • Puree until there are little to no chunks left and pour into another saucepan.
  • Continue this until all the mixture is pureed, leaving you with a hearty, thick soup.
  • **If you want to freeze batches, do not add the cream. Puree the soup as normal, omitting the cream and add cream at a later time when the soup is defrosted.
  • ***I use heavy whipping cream because I love the rich taste. If you want to cut back perhaps use only 3/4 cup or use a lower cream altogether. I find the heavy cream gives the soup a nice texture.
  • ****Instead of using water and a bouillon cube you could always use store bought broth.

ROASTED RED PEPPER SOUP

Steps:

  • Remove the seeds from the peppers and cut into quarters. Place them on a baking tray and and lightly brush with olive oil. Season with salt and pepper and place them into the oven for 6-8mins at 180C, until the skins just start to look charred.
  • Place the water and stock cube in a saucepan. Add the chopped carrots, celery, onion and garlic. Bring to the boil and cook for 5 mins. Turn down the heat to a gentle simmer for 15 to 20 minutes until the chopped vegetables become tender.
  • Remove the peppers from the oven and when cool enough to handle, put them into a sealed plastic bag and let them cool. Once they have cooled, remove from the bag and peel off the charred skin. Chop the flesh into small pieces and add to the saucepan along with the tinned tomatoes.
  • Simmer for a further 10 minutes. Remove from the heat and and add the fresh basil. Whizz everything together with a hand held blender, taste and check for seasoning.
  • Serve with a drizzle of olive oil or splash of cream.

1/2 large onion, chopped finely
4 red bell peppers, cored and seeded
3 -4 cups low sodium chicken broth
salt & freshly ground black pepper
1 lemon, juice of
sour cream or half-and-half

Steps:

  • Broil peppers (with oven door partially open) 5 minutes each side or till blistering. Remove from roasting pan, place in dish, cover with clingfilm and leave ten minutes.
  • Meanwhile, melt butter or margarine.
  • Add onions and sauté till soft, but not brown.
  • Remove skin from peppers, chop coarsely and add to onions. Pour in stock and spices plus a squeeze of lemon.
  • Simmer 20-30 minutes uncovered.
  • Remove from heat, allow to cool and then process in batches so that the soup is a little chunky but not puréed.
  • Before serving, add sour cream or half-and-half and heat through.
  • Will keep well in fridge 2-3 days. Can also be frozen.

1/4 cup butter, divided
1/2 cup chopped onion
1 garlic clove, finely chopped
1 (12 ounce) jar roasted red peppers, drained and seeds removed
1/4 cup flour
1 (12 ounce) can evaporated milk
1 (14 1/2 ounce) can vegetable broth or 1 (14 1/2 ounce) can chicken broth
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper

Steps:

  • Melt 2 tablespoons of the butter in a medium saucepan over medium heat.
  • Add the onion and garlic; cook, stirring occasionally, for 1-2 minutes or until onion is tender.
  • Transfer onion mixture to a blender or food processor container; add red peppers and cover. Process until smooth.
  • Melt the remaining butter in the same saucepan; stir in flour.
  • Gradually stir in the evaporated milk and broth; cook, stirring constantly, until mixture comes to a boil.
  • Stir in the red pepper mixture, salt, and pepper; heat through.
  • Ladel into bowls and serve hot.

A delicious, creamy textured soup without the cream. The secret is in the beans! This soup is an all time favorite in my family. Serve hot or cold with a dollop of sour cream, or goat cheese. Sprinkle with some chopped watercress.

3 red bell peppers
1 onion, chopped
1 tablespoon minced garlic
1 tablespoon olive oil
2 (15 ounce) cans cannellini beans, drained and rinsed
2 (14.5 ounce) cans chicken broth
salt and pepper to taste

Steps:

  • Preheat oven to broil.
  • Place the bell peppers on a baking sheet and broil on the top rack of the oven, using tongs to turn them as each side blackens. Place the blackened peppers in a paper bag, close tightly and allow them to cool for 20 to 30 minutes. Then peel the skin off the peppers and discard the stem and all the seeds. Chop the peppers and set aside.
  • In a large pot over medium heat, saute the onion and garlic in the oil for 5 minutes, or until onion is translucent. Now add the chopped, roasted red bell peppers and saute for 2 to 3 more minutes.
  • Next, add the chicken broth and the beans, stirring well. Using a blender, puree the soup in small batches and return to the pot over low heat for 5 minutes.

This is a light and creamy pureed soup which will surprise those who didn't realize they were pepper lovers at heart. It's a simple soup consisting of ripe red peppers in a creamy base. Serve with a dollop of sour cream, if desired.

2 tablespoons butter
4 red bell peppers, chopped
1 onion, chopped
4 cloves garlic, minced
24 fluid ounces chicken broth
½ cup heavy cream
⅛ teaspoon ground black pepper

Steps:

  • Melt the butter in a large saucepan over medium heat. Place the red bell pepper, onion and garlic in the saucepan and saute for 5 to 10 minutes, or until tender.
  • Pour in the chicken broth, stirring well, reduce heat to low and simmer for 30 minutes. Transfer to a blender and puree until smooth.
  • Run the soup through a strainer and return the liquid to the saucepan over medium low heat. Stir in the heavy cream and the ground black pepper and allow to heat through, about 5 to 10 minutes.
