4 cups shredded pizza cheese blend or part-skim mozzarella cheese
1 pound bulk Italian sausage, cooked and drained
2 packages (3 ounces each) sliced pepperoni, chopped
1 medium green pepper, finely chopped
1 medium sweet red pepper, finely chopped
1 medium onion, finely chopped
2 jars (14 ounces each) pizza sauce
32 egg roll wrappers
Oil for frying
Additional pizza sauce for dipping, warmed, optional

Steps:

  • In a large bowl, combine the cheese, sausage, pepperoni, peppers and onion. Stir in pizza sauce until combined. Place about 1/4 cup filling in the center of each egg roll wrapper. Fold bottom corner over filling; fold sides toward center over filling. Moisten remaining corner with water and roll up tightly to seal., In a Dutch oven or deep cast-iron skillet, heat 1-2 in. of oil to 375°. Fry pizza rolls until golden brown, 1-2 minutes on each side. Drain on paper towels. If desired, serve with additional pizza sauce.

While you wait for the dough to be ready, you can get to work prepping your tomato sauce, chopping fresh vegetables, or grating the cheese you'll put on top. Bake for 15 minutes, garnish with basil (or, let's be real, more cheese), and enjoy showing off your way-better-than-takeout creation.

2 ½ cups warm water
1 teaspoon sugar
2 teaspoons active dry yeast
7 cups all-purpose flour, plus more for dusting
6 tablespoons extra virgin olive oil, plus more for greasing
1 ½ teaspoons kosher salt
¼ cup semolina flour
28 oz canned whole tomatoes
1 tablespoon kosher salt
tomato sauce
fresh mozzarella cheese, torn into small pieces
fresh basil leaf
extra virgin olive oil
fresh mozzarella cheese, torn into small pieces
ricotta cheese
fresh basil pesto
dried oregano
tomato sauce
fresh mozzarella cheese, torn into small pieces
spicy pepperoni slice
freshly grated parmesan cheese

Steps:

  • "Bloom" the yeast by sprinkling the sugar and yeast in the warm water. Let sit for 10 minutes, until bubbles form on the surface.
  • In a large bowl, combine the flour and salt. Make a well in the middle and add the olive oil and bloomed yeast mixture. Using a spoon, mix until a shaggy dough begins to form.
  • Once the flour is mostly hydrated, turn the dough out onto a clean work surface and knead for 10-15 minutes. The dough should be soft, smooth, and bouncy. Form the dough into a taut round.
  • Grease a clean, large bowl with olive oil and place the dough inside, turning to coat with the oil. Cover with plastic wrap. Let rise for at least an hour, or up to 24 hours.
  • Punch down the dough and turn it out onto a lightly floured work surface. Knead for another minute or so, then cut into 4 equal portions and shape into rounds.
  • Lightly flour the dough, then cover with a kitchen towel and let rest for another 30 minutes to an hour while you prepare the sauce and any other ingredients.
  • Preheat the oven as high as your oven will allow, between 450-500˚F (230-260˚C). Place a pizza stone, heavy baking sheet (turn upside down so the surface is flat), or cast iron skillet in the oven.
  • Meanwhile, make the tomato sauce: Add the salt to the can of tomatoes and puree with an immersion blender, or transfer to a blender or food processor, and puree until smooth.
  • Once the dough has rested, take a portion and start by poking the surface with your fingertips, until bubbles form and do not deflate.
  • Then, stretch and press the dough into a thin round. Make it thinner than you think it should be, as it will slightly shrink and puff up during baking.
  • Sprinkle semolina onto an upside down baking sheet and place the stretched crust onto it. Add the sauce and ingredients of your choice.
  • Slide the pizza onto the preheated pizza stone or pan. Bake for 15 minutes, or until the crust and cheese are golden brown.
  • Add any garnish of your preference.

1 tablespoon dried basil
1 tablespoon dried oregano
1 teaspoon dried thyme
½ teaspoon red pepper flakes
½ teaspoon garlic powder
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
4 oz Cabot New York Extra Sharp Cheddar Cheese, shredded
4 oz Cabot Monterey Jack Cheese, shredded
3 oz pepperoni, diced small
¾ cup marinara sauce, plus more, warmed, for dipping
30 square wonton wrappers
water, for brushing
1 cup plain breadcrumbs
fresh parsley, for garnish

Steps:

  • Preheat the oven to 425°F (220°C). Grease a baking sheet with nonstick spray.
  • In a small bowl, mix together the basil, oregano, thyme, red pepper flakes, garlic powder, salt, and pepper. Set aside 1 tablespoon of the spice mixture for garnish.
  • In a medium bowl, toss together the Cabot New York Extra Sharp Cheddar Cheese and Cabot Monterey Jack Cheese. Fold in the remaining spice mixture and the pepperoni. Stir in the marinara sauce until evenly distributed.
  • Place a wonton wrapper on a cutting board. Brush the edges of the wrapper with water. Scoop a heaping teaspoon of the cheese mixture onto the center of the wrapper. Fold the top edge of the wrapper down over the filling, and then fold the bottom edge up to overlap for a long, rectangular shape. Press lightly to seal. Wet the short edges of the rectangle and fold toward the center to make a smaller rectangle.
  • Brush both sides of the pizza roll with water, then roll in the bread crumbs to coat. Repeat with the remaining ingredients.
  • Arrange the pizza rolls on the prepared baking sheet, seam side up. Lightly spritz the rolls with nonstick spray, then sprinkle each one with a pinch of the reserved spice mixture.
  • Bake the pizza rolls for 10-12 minutes, or until golden brown.
  • Let the rolls cool slightly, then garnish with parsley and serve with warm marinara sauce alongside for dipping.

This is just the base for a basic pepperoni pizza roll. I made this with leftover pizza toppings. I didn't feel like making any dough so I substituted egg roll wraps.

2 quarts canola oil for frying
1 egg
3 tablespoons water
1 (16 ounce) jar pizza sauce
1 (8 ounce) package sliced pepperoni
1 cup shredded mozzarella cheese
1 (14 ounce) package egg roll wrappers

Steps:

  • Heat oil in a deep-fryer or large saucepan to 300 degrees F (150 degrees C). Whisk egg and water together in a small bowl.
  • Combine the pizza sauce and pepperoni in a blender or food processor. Process until pepperoni is well chopped and the sauce has thickened. Transfer sauce to a large bowl, and stir in mozzarella.
  • Lay out one eggroll wrapper on work surface. Place 1 tablespoon filling at the bottom center of the wrapper, leaving 1/2 inch border on each side. Lightly brush the wrapper edges with the egg mixture. Fold over both sides; roll up to encase filling in wrapper. Repeat with remaining wrappers and filling.
  • Deep fry pizza rolls in batches until crisp and golden brown, 5-9 minutes.

My DH loves those frozen Tony's Pizza Rolls....I'll eat them too, but....what exactly is in them?? We probably don't want to even know! These are MUCH better and at least we know what we're eating!! Buy extra sauce for dipping if you'd like, but they really don't need it. Also, add/omit any ingredients you like or don't like. Make them to your own taste of course. This is what we like in them.

4 cups shredded pizza cheese or 4 cups mozzarella cheese
1 lb sausage, cooked, drained
2 (3 ounce) packages sliced pepperoni, chopped
1 medium green pepper, finely chopped
3/4 cup fresh sliced mushrooms, coarsely chopped
1/2 small onion, finely chopped
1/3 cup chopped black olives
1/2 cup crushed pineapple, very well drained
2 (14 ounce) jars pizza sauce
32 egg roll wraps
oil (for frying)

Steps:

  • Combine above ingredients except wrappers (and oil).
  • Place a ¼ cup filling in center of each egg roll. Fold bottom corner over filling. Fold sides toward center over filling. Moisten remaining corner w/water and roll up tightly to seal. Fry in 1" of 375º oil for 1-2 minutes til golden brown.
  • Serve with addition pizza sauce for dipping if desired.
