VEGAN POTATO SOUP

This vegan potato soup is the ultimate comfort food for cold days! It's super creamy, rich, and very easy to make! And it's ready in just 30 minutes!

Number Of Ingredients 11

1 onion, chopped
2 leeks
2 cloves of garlic, minced
4 large potatoes ((about 28 oz))
1/2 cup full fat canned coconut milk
4 cups vegetable broth
1 teaspoon dried thyme
1 teaspoon fresh lemon juice
1 bay leaf
salt, to taste
black pepper, to taste

Steps:

  • Peel the potatoes and cut them into medium-sized cubes. Slice the white and light green parts of the leek and rinse them well. Set both aside.
  • Finely chop the onion. Then heat some oil in a large pot and sauté the onion for about 3 minutes. Add the garlic and cook it for another minute.
  • Add the potatoes and the leek and cook for 5 minutes. Then add the vegetable broth and the bay leaf. Simmer for 15 minutes or until the vegetables are very soft.
  • Fish out the bay leaf and discard. Reserve some of the cooked potatoes and leek for later if you want your soup to be a bit chunky. Purée the soup with a hand-held immersion blender until smooth. Alternatively you could also use a standard blender to purée the soup (see instructions in the recipe notes).
  • Stir in the coconut milk, the dried thyme, the lemon juice, and season with salt and pepper. Serve immediately and sprinkle it with chopped green onion, parsley, and chives. Enjoy!

Number Of Ingredients 18

6 Tablespoons butter
1 onion (chopped small)
few cloves of garlic (chopped (optional))
Big handful of carrots (chopped)
3 stalks celery (chopped small)
2 cups chicken broth
2 cups whole milk (depending on how much soup you want when you're done, this amount is flexible)
1/2 cup sour cream (optional)
sea salt and pepper to your taste
2 teaspoons garlic powder - or even more if you love it like we do
More herbs to your taste: sprinkle some paprika
1 cup ham or bacon
4 organic medium-sized potatoes
1/2 cup flour
more sour cream (for the top, if desired)
green onions or chives (chopped for the top, if desired)
cheddar cheese (shredded for the top, if desired)
bacon pieces (for the top, if desired)

Steps:

  • Melt butter in a large saucepan, add onion and garlic and cook until they start to turn golden brown. Add carrots and celery and cook on low to medium heat until they start to soften. Add the flour, cook and stir for a few more minutes, being careful that it doesn't burn. Add chicken broth very slowly and keep whisking. (If you add the liquids in too fast it won't be as thick in the end.) Stir in milk slowly (add however much depending on how much soup you want to end up with). Steam or boil potatoes in a separate pan until a fork can go through them, and then add them to the soup.
  • While continuing to stir, add in the bacon or ham (if you are using them), plenty of salt and pepper, garlic powder, and other herbs as desired - getting this step right is the key to great flavor, so taste test until it's yummy!
  • Serve and enjoy. Toppings not only make it taste yummy, but make it look pretty, too. You can add sour cream, shredded cheese, bacon, chopped green onion or chives.
  • You can easily double this for a big crowd and keep warm in a crock pot until it's time to serve.

PERFECT POTATO SOUP

6 slices thin bacon, cut into 1-inch pieces
3 carrots, scrubbed clean and diced
3 stalks celery, diced
1 medium onion, diced
6 small russet potatoes, peeled and diced
1/2 teaspoon Cajun spice mix, plus more if needed
Salt and freshly ground black pepper
8 cups low-sodium chicken or vegetable broth
1 cup milk
3 tablespoons all-purpose flour
1/2 cup heavy cream
1 teaspoon minced fresh parsley
1 cup grated Cheddar

Steps:

  • Add the bacon pieces to a soup pot over medium heat and cook until crisp and the fat is rendered. Remove the bacon from the pot and set it aside. Pour off most of the grease, but do not clean the pot.
  • Return the pot to medium-high heat and add the carrots, celery and onions. Stir and cook for 2 minutes or so, then add the diced potatoes. Cook for 5 minutes, seasoning with the Cajun spice, 1/2 teaspoon salt and some pepper. Pour in the broth and bring it to a gentle boil. Cook until the potatoes are starting to get tender, about 10 minutes. Whisk together the milk and flour, then pour the mixture into the soup and allow the soup to cook for another 5 minutes.
  • Remove about half of the soup and blend in a blender or food processor until completely smooth. Pour it back into the soup pot and stir to combine. Let it heat back up as you taste for seasoning, adding more of what it needs. Stir in the cream, then the parsley,
  • Serve in bowls garnished with the grated cheese and crisp bacon pieces. The soup can also be frozen.

2 tablespoons olive oil
1 cup onions (diced)
1 cup carrots (diced)
½ cup celery (diced)
4 cups potatoes (peeled and chopped into 1 inch pieces (about 1 lb or 5-6 medium sized potatoes))
4 cups vegetable broth
1 teaspoon garlic powder
1 teaspoon fresh rosemary (chopped finely)
½ teaspoon salt
½ teaspoon pepper
2 cups milk of choice

Steps:

  • Set the Instant Pot to sauté mode for 15 minutes. Heat olive oil. While oil is heating, chop veggies.
  • Sauté onions, carrots, and celery until onions are translucent. Turn off sauté mode. Make sure to scrape off any pieces of food on the bottom of the Instant Pot or you will get a burn notice during cooking.
  • Pour in remaining ingredients, except milk.
  • Set the Instant Pot to sealing, pressure cook for 10 minutes on high pressure. It will take about 10 minutes for the pot to come to pressure before it starts to count down.
  • Manually release pressure when timer goes off.
  • Stir in milk. Use an immersion blender or regular blender to make the soup smooth. Serve with your favorite toppings like bacon, chives or cheese.
  • In a sauté pan, heat olive oil. While oil is heating, chop veggies.
  • Sauté onions, carrots, and celery until onions are translucent, about 10 minutes. (This step is optional, but adds flavor)
  • Add all ingredients into the crockpot, except milk.
  • Set the crockpot to cook for 6 hours on high, or 8 hours on low.

6 peeled potatoes
1/2 cup butter
1/4 cup flour
3 cups milk
salt
pepper

Steps:

  • Start by boiling potatoes until fork tender.
  • When potatoes are done, strain out the water and add butter.
  • When butter is melted, add flour. Stir gently to make a paste between butter and flour. The paste will coat the potatoes.
  • Add Milk.
  • Gently stir. Allow the pot to boil. When it reaches boil, turn down to simmer.
  • Simmer on low till soup thickens.
  • Salt and Pepper to taste.

6 medium potatoes, peeled and sliced
2 carrots, chopped
6 celery ribs, chopped
8 cups water
1 onion, chopped
6 tablespoons butter, cubed
6 tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon pepper
1-1/2 cups 2% milk

Steps:

  • In a Dutch oven, cook the potatoes, carrots and celery in water until tender, 15-20 minutes. Drain, reserving liquid and setting vegetables aside. , In the same pan, saute onion in butter until tender. Stir in the flour, salt and pepper; gradually add milk. Bring to a boil, cook and stir for 2 minutes or until thickened. Gently stir in cooked vegetables. Add 1 cup or more of reserved cooking liquid until soup is desired consistency.

¼ cup butter
1 large onion, chopped
6 potatoes, peeled and diced
2 carrots, diced
3 cups water
2 tablespoons chicken bouillon powder
ground black pepper to taste
3 tablespoons all-purpose flour
3 cups milk
1 tablespoon dried parsley
¼ teaspoon dried thyme

Steps:

  • Melt butter in a saucepan over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes.
  • While the onions are cooking, place the diced potatoes, carrots, water and chicken soup base (or vegetable base; see Cook's Note) in another pot and bring to a boil. Cook until vegetables are tender, about 10 minutes. Do not overcook. Season with ground black pepper to taste.
  • Add the flour to the cooked onions to make a paste. Cook, stirring constantly, for 2 minutes. Gradually add the milk and stir well. Cook over low heat stirring constantly until warmed through. Add the potato and carrot mixture. Stir in the parsley and thyme and heat through. Serve hot.
