1/2 pound pork or beef liver
2 oz. uncured bacon
1/2 pound uncured pork belly
6 cups water
2 bay leaves
7 whole allspice
1 large white onion
1 garlic clove
1 small red onion
1 tsp. salt
1/2 tsp. white pepper
1 pinch allspice
1/4 tsp. nutmeg
1/2 tsp. marjoram
1 tsp. thyme

Steps:

  • Cut white onion into quarters.
  • Pour water into a medium pot, add bay leaves and all spice.
  • Cook pork belly for about 1 hour on medium heat.
  • Add liver at the last 10-15 minutes.
  • Cut liver and pork belly into bite sized pieces and add to blender.
  • Dice onion and bacon finely, fry till translucent and add to blender.
  • Add spices to the blender and mix to a smooth texture.

500 g pork liver
300 g veal
2000 g pork belly (with rind)
250 g onions
60 g salt
3 tablespoons white pepper, ground
1 tablespoon marjoram
2 teaspoons pimientos, ground
1 teaspoon nutmeg, ground
1 teaspoon ginger, ground
1 teaspoon cinnamon, ground
2 cups boiling water

Steps:

  • Cook pork belly about 70 minutes.
  • Blanch liver and veal 5 minutes.
  • Coarsely chop onions and saute briefly, should not change color.
  • Grind meats and onion with 3mm blade of meat grinder.
  • Add spices, salt and water thoroughly mixing all ingredients.
  • Fill sausage casings, tie ends securely.
  • Place sausages in water of 175 deg F and slowly bring up to 215 deg F (boiling) and continue cooking at that temperature for 60 minutes.
  • If canning, use canning procedures, and cook 90 minutes.
  • Liverwurst can be frozen.

This hors d'oeuvre is embarrassingly simple to make and I am always asked to bring it to gatherings. It makes people think I am a great cook! Easy and good!

1 lb liverwurst
1 teaspoon garlic powder
4 tablespoons dried basil (you can add more depending on your taste)
3 tablespoons green onions, minced
8 ounces cream cheese, softened in microwave
1/2 teaspoon garlic powder
1 dash hot sauce (such as Tabasco)
1 tablespoon mayonnaise
pumpernickel rounds

Steps:

  • In a medium bowl, knead together liverwurst, garlic powder, basil and green onion.
  • Place on serving tray and form into mound or square.
  • Mix softened cream cheese, garlic powder, hot sauce and mayonnaise and frost the liverwurst stuff.
  • Garnish with something appropriate to the occasion and serve with pumpernickel bread.
