BASIC ICED TEA

Basic Iced Tea image

I like to use orange pekoe tea and spring, filtered, or distilled water for this straightforward brew. If you like your iced tea southern style and quite sweet, add 1-1/2-cups granulated sugar. Check out more summer drinks, including fun and classic cocktail recipes and icy drinks and shakes, on the Drinks & Entertaining page.

Provided by Fred Thompson

Categories     Drinks

Yield Yields about 2 quarts.

Number Of Ingredients 6

2-1/4 cups water
6 regular-size tea bags (about 1/2-ounce total), or 2 family-size tea bags
6 cups cold water
Granulated sugar for garnish
Lemon wedges for garnish
Mint sprigs for garnish

Steps:

  • In a small saucepan, bring the 2-1/4 cups water to a gentle boil. Add the tea bags, remove the saucepan from the heat, and cover. Steep for 15 minutes.
  • Remove the tea bags without squeezing them (which would add bitterness) and pour the steeped tea into a 2-1/2-quart heatproof container (like a large Pyrex liquid measure). Add the 6 cups cold water and mix. Let cool at room temperature and then refrigerate until cold. Serve over ice, garnished with sugar, lemon wedges, and mint sprigs.

HOMEMADE PEACH ICED TEA

Homemade Peach Iced Tea image

Provided by Chuck Hughes

Categories     beverage

Time 2h40m

Yield 4 to 6 servings

Number Of Ingredients 5

2 cups/500ml sugar
6 peaches, halved and pitted
1 vanilla bean, split lengthwise and seeds scraped
1 tablespoon/15ml loose green or black tea leaves or 4 tea bags
Split vanilla beans, for garnish

Steps:

  • Bring 3 cups (750ml) water and the sugar to a boil in a pot. Add the peaches and vanilla bean (including the seeds). Simmer over medium heat for about 30 minutes.
  • Discard the vanilla bean. Pour the peaches and syrup into a blender and puree until smooth. Strain the peach puree through a sieve into a pitcher.
  • Bring 4 cups (1 liter) water to a boil in a small saucepan. Remove from the heat, add the tea and steep according to the package directions. Strain to remove the tea leaves, then add the tea to the pitcher with the peach puree. Stir to combine. Refrigerate until cold.
  • The pulp from the fruit may have separated from the tea during chilling, so be sure to stir it before serving. Pour over ice cubes in tall glasses and garnish with vanilla beans.
  • Cook's Note: When blending hot liquids, remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.

  • Turmeric iced masala tea. This recipe utilizes a classic inflammation-fighting trifecta: cardamom, turmeric, and cinnamon. The combination of the warming spices in an ice cold glass hit just right.
  • Ginger-turmeric iced tea. Even if your pantry is pretty bare, chances are you have everything you need to make this healthy iced tea. All it requires (besides water) is ginger, turmeric, and ground black pepper—it doesn't get easier than that!
  • Get the recipe: Toasted sesame iced tea. If you're looking for an iced tea that's more on the savory side, this is it. Sesame is such an overlooked ingredient for beverages, but its toasted, slightly nutty taste adds a completely unexpected layer of flavor.

SIX RULES FOR THE BEST ICED TEA PLUS RECIPES - CANADIAN LIVING

From canadianliving.com
Published 2012-07-12
  • Use enough tea bags. When foods are served cold, the flavours become dull. A stronger tea - such as Darjeeling, Jasmine or green teas - is necessary to have a well-flavoured tea served cold.
  • Don't oversteep. If you prefer your tea stronger, use more tea bags rather than lengthening the steeping time. Allowing tea to overstep brings out the tannins in the tea and can make it bitter.
  • Add sugar to hot water. If you sweeten your tea, add the sugar to the hot tea in order to dissolve the grains. If you prefer to sweeten your tea afterwards as per each persons taste, use a simple syrup rather than granulated sugar which will leave sugar grains in your glass.
  • Cool before refrigerating. Putting hot tea into a cold fridge will make your tea cloudy. Allow your tea to cool before you refrigerate. If you do end up with cloudy tea, try adding a bit of boiling water to it – it will sometimes do the trick!
  • Keep it real. Don't use artificial lemon juice. Only use real fresh squeezed lemon juice from fresh lemons for the very best flavour.
  • Fresh is best. Iced tea taste best when it is freshly made. Make only what you will drink in two or three days. It's easy to make, so don't worry about having to mix up another batch!
