Steps:
- Preheat oven to lowest setting, grease a rimmed baking sheet with cooking spray, and keep warm in the oven.
- In a large stockpot, bring butter, sugar, and salt to a boil over medium heat, stirring frequently (almost constantly), until temperature reaches 300 degrees F using a candy thermometer.
- Remove from heat and immediately stir in vanilla.
- Quickly and carefully pour the mixture onto warm greased pan.
- Spread the brittle by picking up the pan and tilting it around until it covers the entire pan.
- Let the brittle set until firm, but still warm, this should only take a few minutes.
- Spread the melted chocolate into a thin even layer over the brittle.
- Sprinkle the nuts over the chocolate, and carefully press down to ensure the almonds stick to the chocolate.
- Place the toffee in the freezer until set.
- Break into pieces, and store in an airtight container in the fridge or freezer.

Steps:
- Grease a 15-in. x 10-inch pan with 1 tablespoon butter and set aside. ( I use my silpat mat here for lining the pan and it works great.)
- In a large pan, melt the remaining butter. Add the sugar, corn syrup and salt. And cook and stir over medium heat until a candy thermometer reads 295 degrees. This is hard-crack stage. Be careful doing this part because it is hot and you don't want to burn yourself.
- Quickly, and I do mean quickly before it hardens, pour into 15 x10 inch pan.
- Let stand at room temperature until completely cooled and hardened. This will take about 2 hrs.
- In a microwave, melt chocolate chips on 50% power, stirring every 30 seconds until melted. Spread over toffee.
- Let stand for 1 hour, you can also put this in the fridge to harden the chocolate up.
- Break into bite-size pieces. Store in an airtight container.
- Enjoy!

Steps:
- Line a rimmed baking sheet with parchment paper. Measure out vanilla and almonds; set aside.
- In a large Dutch oven, bring butter, sugar, water, and salt to a boil, stirring constantly. Once butter and sugar are melted, insert your candy thermometer, making sure it is covered by the mixture but not touching the bottom of the pot. Cook, continuing to stir, until mixture reaches 298 degrees (hard crack stage). Remove from heat and quickly stir in vanilla, then pour mixture onto the prepared baking sheet. Smooth out with a spatula, sprinkle on almonds, then set aside to cool for at least an hour.
- Once toffee has cooled, place chocolate in a microwave-safe bowl. Microwave on high in 30-second increments, stirring after each. Heat until just melted, then pour over cooled toffee and spread even with a spatula. Allow to harden, then break into pieces and serve.

Everyone loves these...the surprise is how much they taste like real Heath Bars, especially when using saltine crackers for the base!

Steps:
- 1. Line a jelly roll pan with aluminum foil. Place crackers in a solid cover with crackers touching. Melt butter and brown sugar; bring to a boil for 3 minutes, stirring constantly so it doesn't scorch. Slowly pour over crackers, spreading quickly to cover all. Bake for 5 minutes in oven at 400F. Watch carefully to avoid burning! Remove from oven and cool for about 5 minutes. Pour chocolate chips over top spreading as evenly as possible. Let them melt and then spread with a spatula. I use sprinkles or colored sugar to decorate. Score with pizza cutter, place in refrigerator until completely cooled. Remove from foil and break into pieces to serve.
- 2. Note: Be very careful not to get the butter/sugar mixture on your skin. It is very sticky and will adhere to your skin and burn!

HEATH BARS
Next to MARS bars, HEATH bars are my favorite candy bars. These baked bars are soooo good and rich and HEATH bars are the main ingredient, so they are a winner with me (and hopefully with you, too)!
