Steps:
- USING FRESH CAYENNE PEPPERS.
- There are two different ways to prepare this sauce. You can use fresh cayenne peppers, or you can use cayenne peppers from your garden that you have canned.
- If you're using fresh cayenne peppers, simply remove the ends and measure all of the ingredients into a small saucepan.
- Heat over medium heat until boiling.
- Reduce the heat slightly, but so the mixture continues to boil.
- Simmer about 20-25 minutes.
- Remove the mixture from heat, carefully pour it into a blender & puree until thick and smooth.
- Transfer the mixture back into the saucepan and simmer another 15 minutes.
- USING CANNED CAYENNE PEPPERS.
- If you're using canned cayenne peppers, which is what we used in this particular recipe --.
- In a blender add 18 peppers, 1 cup of vinegar (we used the juice from our home-canned peppers), garlic, salt, and garlic powder.
- Cover and puree until smooth.
- Transfer to a saucepan and bring to a boil.
- Reduce heat and simmer for 20 minutes.
- The sauce is much better if you allow the flavors to marry overnight in the fridge, but if you don't have enough time to let it marinate overnight it will still turn out great wings!

HOMEMADE RED HOT SAUCE
Steps:
- Combine the peppers, garlic, onions, salt and oil in a non-reactive saucepan over high heat. Saute for 3 minutes. Add the water and continue to cook, stirring occasionally, for about 20 minutes, or until peppers are very soft and almost all of the liquid has evaporated. (Note: this should be done in a very well-ventilated area!) Remove from the heat and allow to steep until mixture comes to room temperature. In a food processor, puree the mixture for 15 seconds, or until smooth. With the food processor running, add the vinegar through the feed tube in a steady stream.
- Taste and season with more salt, if necessary. (This will depend on the heat level of the peppers you use as well as the brand of vinegar used.) Strain the mixture through a fine mesh sieve and then transfer to a sterilized pint jar or bottle and secure with an airtight lid. Refrigerate. Let age at least 2 weeks before using. Can be stored in the refrigerator for up to 6 months.
HOMEMADE HOT SAUCE
This homemade hot sauce makes good use of the bountiful tomatoes, onions and peppers in your garden or farmers' market. Adjust the heat to your preference: in our tests, two habaneros yielded a pleasantly spicy sauce without excessive heat-take it up a notch for spicy-food fans by adding extra hot peppers. ---from eatingwell.com

Steps:
- Heat oil in a large saucepan over medium-high heat. Add onion, chile peppers, habaneros to taste and garlic and cook, stirring, until the onion is soft and beginning to brown, 3 to 4 minutes.
- Reduce heat to medium. Add tomatoes, vinegar, salt and sugar to taste. Cook, stirring occasionally, until the tomatoes begin to break down, about 5 minutes.
- Carefully transfer the tomato mixture to a food processor or blender. Puree until smooth. (Use caution when pureeing hot ingredients.) Set a fine-mesh sieve over a medium bowl; pour the pureed mixture through the sieve, pushing on the solids with a wooden spoon to extract all the liquid. (Discard solids.) Let the sauce cool to room temperature, about 1 1/2 hours.

BEST HOT WING SAUCE IN AMERICA
This sauce is simply the best one that I have ever used! My family really enjoys this on wings and other things. Try something off the wall and fry up some potatoes and put this sauce on for a treat, or try using it as a toasted bread dipping sauce for a unique treat!

BEST BUFFALO WING SAUCE!!
ONLY use FRANKS RED HOT for this recipe please! It is the reason this sauce is soooooo perfectly perfect!! My whole family freaks every time I make this. You can toss traditional fried chicken wings in it or try something new like shrimp or boneless skinless chicken tenderloins. Whatever you like "Buffalo Style" this is your sauce... I like to serve with the traditional celery sticks and bleu cheese dressing.

BUFFALO CHICKEN WING SAUCE
If you know someone from Buffalo, they know someone who told them the secret ingredients to the Anchor Bar's famous Buffalo chicken wings. I know people from Buffalo. This is my version, as described to me many years ago, over almost as many beers.
