I always have to double this buttery, homemade crescent roll recipe because they never last long. You can shape them any way you like, but to me, a crescent shape is so pretty. -Kelly Kirby, Westville, Nova Scotia

Yield 2 dozen.

Number Of Ingredients 8

1 tablespoon active dry yeast
1 teaspoon plus 1/3 cup sugar
1/2 cup warm water (110° to 115°)
1/2 cup butter, softened
1/2 cup warm 2% milk (110° to 115°)
1 large egg, room temperature
3/4 teaspoon salt
4 cups all-purpose flour

Steps:

  • In a large bowl, dissolve yeast and 1 teaspoon sugar in warm water. Add butter, milk, egg, salt, remaining sugar and 2 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; divide in half. Roll each portion into a 12-in. circle; cut each circle into 12 wedges. Roll up wedges from the wide end and place point side down 2 in. apart on greased baking sheets. Curve ends to form crescents. Cover and let rise in a warm place until doubled, about 30 minutes. , Preheat oven to 350°. Bake until golden brown, 10-12 minutes. Remove from pans to wire racks.

This is a great recipe for sweet, fluffy crescent rolls (kind of like a croissant but more dense).

Number Of Ingredients 8

2 (.25 ounce) packages active dry yeast
¾ cup warm water (110 degrees F/45 degrees C)
½ cup white sugar
1 teaspoon salt
2 eggs
½ cup butter, room temperature
4 cups all-purpose flour
¼ cup butter, softened

Steps:

  • Dissolve yeast in warm water.
  • Stir in sugar, salt, eggs, butter, and 2 cups of flour. Beat until smooth. Mix in remaining flour until smooth. Scrape dough from side of bowl. Knead dough, then cover it and let rise in a warm place until double (about 1 1/2 hours).
  • Punch down dough. Divide in half. Roll each half into a 12-inch circle. Spread with butter. Cut into 10 to 15 wedge. Roll up the wedges starting with the wide end. Place rolls with point under on a greased baking sheet. Cover and let rise until double (about 1 hour).
  • Bake at 400 degrees F (205 degrees C) for 12-15 minute or until golden brown. Brush tops with butter when they come out of the oven.

A friend of the family shared this recipe several years ago. These rolls are very impressive and look like you have worked hard...only the cook knows. Prep/cooking time does not include rise time.

Number Of Ingredients 9

2 (1/4 ounce) packages active dry yeast
1 tablespoon sugar, plus
1/2 cup sugar
1 cup warm water
1 cup milk, scalded (2 min. in microwave)
3 eggs, beaten
6 tablespoons unsalted butter, melted & cooled
1 teaspoon salt
7 cups flour (I use Gold Medal Bread Flour)

Steps:

  • Dissolve yeast, 1 Tablespoon sugar in the water.
  • Let stand (proof) for 5 minutes.
  • Mix butter, salt, milk and remaining sugar in large mixing bowl.
  • Add 2 cups flour mixing well.
  • Add yeast and beaten eggs. Beat well.
  • Add remaining flour or enough to make a soft dough.
  • Cover dough and let rest 20 minutes.
  • Knead dough on lightly floured board and place in a greased bowl.
  • Cover and let rise until double in bulk.
  • Punch down and divide dough into thirds. Roll into a 12" diameter circle, cut circle into 16 pie shaped pieces.
  • Roll up into crescent shapes starting with the wides end.
  • Place crescent rolls on greased cookie sheet and let rise 1 hour - cover lightly with plastic wrap or flour sack tea towel. Repeat with remaining dough.
  • Bake 10-12 minutes in 375º oven or until golden brown.
  • *Note - leave plenty of room on sheets - these rolls need plenty of room - do not crowd.

Steps:

  • In small bowl, dissolve yeast in warm water.
  • In a mixing bowl, beat butter and sugar together.
  • Add eggs, salt and yeast mixture.
  • Mix in enough flour for dough to leave sides of bowl and is soft.
  • Do not knead this.
  • Cover and refrigerate overnight.
  • Punch dough down.
  • Turn onto floured surface; divide in half.
  • Roll each half into a 12-inch circle and cut into 12 wedges.
  • Roll up from wide sides and place on greased baking sheets with pointed sides down.
  • Curve to form crescents.
  • Cover and let rise until doubled, about 1 1/2 hours.
  • Bake at 350F for 20 minutes or until golden.
  • Time doesn't include overnight time.
