Steps:
- Prepare Ingredients: Add the onion, jalapeno, and garlic to the food processor and pulse until chopped up.
- Pulse: Add in the tomatoes and continue to pulse until the tomatoes break down and release juices.
- Season: Add in honey, salt, 1/2 cup cilantro leaves, and juice of 1/2 lime (start slow with the lime as it can overpower, you can taste and add more if desired)
- Blend: Pulse in the processor to desired consistency. Chunky or smooth. Taste and adjust salt, honey, or lime juice as needed.

Steps:
- Combine the diced tomatoes, whole tomatoes, cilantro, onions, garlic, jalapeno, cumin, salt, sugar and lime juice in a blender or food processor. (This is a very large batch. I recommend using a 12-cup food processor, or you can process the ingredients in batches and then mix everything together in a large mixing bowl.)
- Pulse until you get the salsa to the consistency you'd like. I do about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed.
- Refrigerate the salsa for at least an hour before serving.
THIN SALSA
This salsa is similar to the kind found in Mexican restaurants. It's very different from the canned type in the grocery. It's thin and flavorful. It's so easy to make, and you'll get many complements! You can change the amount of cayenne depending on how hot you like it.

Steps:
- Drain and discard about half the juice from the can of tomatoes.
- Place all ingredients in a food processor or a blender and pulse until well mixed.
- Blend more for a smooth salsa and less for a chunkier.
- Serve with your favorite chips. I like thin tortilla chips.

- In a food processor or powerful blender add the cilantro, lime juice, onion, garlic, salt, pepper and sugar, PLUS only 1/2 cup of the canned tomatoes. Pulse about 20-30 times, until there are no large chunks of onion or garlic remaining. (add a jalapeno if you like it spicy!!)Pro Tip: You may need to scrape the sides down to make sure all the bits get blended.
- Add the remaining canned tomatoes. If you are using a food processor pulse 5-6 times, to get the perfect texture. If you are using a blender only blend for an additional 4-5 seconds, to retain some of the tomato texture.
- Serve immediately or store in an airtight container for up to 5 days. Pro Tip: The salsa does get more flavorful after a day in the fridge.

- Place all of the ingredients into a food processor or high-speed blender. Pulse in 2 second bursts until all ingredients are chopped and combined. Note: Don’t over blend your salsa. You want a fine texture, but not a puree.
- Leave salsa covered and refrigerated for a couple of hours before you are ready to serve. This will bring all the flavors together.
